CROCK POT EASIEST PORK CHOPS
Steps:
- Gather the ingredients.
- If you wish, brown the pork chops in a nonstick skillet over medium heat for about 3 to 4 minutes on each side. Don't cook the chops longer than that; they should only be browned for appearance and to add some flavor.
- Place the pork chops in a 4-quart crock pot.
- In a medium bowl, combine the soup mix and the chicken broth and stir until blended.
- Pour the soup mixture over the pork chops in the slow cooker.
- Cover the slow cooker and cook the pork chops on low heat for 6 to 8 hours. When done, the pork should register 145 F on a meat thermometer, but odds are they will be well done. The pork chops may fall apart because they are so tender.
- Serve and enjoy.

- Lay the pork chops on a rimmed baking sheet and sprinkle both sides of each chop with salt and pepper. Put the flour on a small plate. Coat both sides of the chops with the flour and put back on the baking sheet to come to room temperature while you prepare the remaining ingredients.
- Add the mustard, honey and 1 tablespoon of water to a 4- to 6-quart slow cooker and stir to combine. Cut the shallot into rings and add to the cooker, separating the rings. Core and cut the apple into 1/2-inch chunks and add to the cooker with 1/4 teaspoon salt. Stir to combine the shallots and apples with the sauce. Spread the mixture in an even layer and lay the pork chops on top, overlapping as needed.
- Cover and cook on low until the pork is cooked through, about 3 hours. Transfer the chops to a large plate and top with the warm apples and sauce. Serve with creamy grits or buttered rice if desired.

SOUTHWESTERN PORK SOUP (FOR CROCK POT)
This is a great soup, so flavorful and so easy. Even though the avocado, lime juice and cilantro are "garnishes," the flavor of the lime and the cilantro especially is very key to the balance of flavors. This is good enough for company, really yummy. I think you probably could get away with using chicken meat in this too, although I tried this using the pork. Another find from the Robin Miller show, with my adjustments.

- In the bottom of a slow cooker, combine pork, onion, bell pepper, jalapeño, garlic, chili powder, cumin, 1/2 teaspoon salt, and 1/4 teaspoon ground black pepper (measuring both the salt and pepper with real measuring spoons, leveled).
- Stir to combine.
- Add broth, tomatoes, and beans, cover and cook on LOW for 6 to 8 hours or HIGH for 3 to 4 hours.
- When ready to serve, test for seasonings, then ladle soup into bowls and top with avocado, some cilantro, and a squirt or two of lime juice over each serving.
- Serve with some chips and a sprinkling of cheese too if desired.

- In a large skillet, saute onion in 1 tablespoon oil for 3-4 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the tomatoes, beans, broth, chili powder, oregano, cumin and pepper flakes. Bring to a boil. Reduce heat; simmer, uncovered, for 4-5 minutes or until heated through. , Meanwhile, in another skillet, brown pork chops on both sides in remaining oil over medium-high heat. Steps:
- Soak dried New Mexican chiles in boiling water for 30 minutes.
- Remove chiles from water, dry off, and chop finely, discarding stem and seeds; set aside.
- Brown ribs in oil in skillet over medium heat on both sides.
- Place browned ribs in the bottom of the crock pot.
- Toast cumin seeds in a small dry skillet until just fragrant but do not burn; allow to cool.
- Stir together oregano, salt, pepper, chopped tomatoes, vinegar, chopped chiles, and toasted cumin seeds in a small bowl.
- Pour mixture over ribs in crock pot.
- Spread garlic cloves over the top of sauce.
