3 to 4 boneless (skinless chicken breasts (could use other chicken parts))
3 tablespoon cooking oil
1/2 large head of cabbage (cut in wedges)
1 medium onion (peeled, sliced and cut in rings (can use green onions))
1 large green (red or orange pepper, chopped or sliced)
1 14.5 ounce can diced tomatoes, undrained
1 4 ounce can sliced mushrooms, drained
1 teaspoon dried oregano
1/2 teaspoon black pepper
1/2 teaspoon salt
1/2 teaspoon garlic powder
1 bay leaf
1/2 teaspoon dried basil
1 4 ounce can chopped green chilis, drained
few drops hot sauce (Optional)

Steps:

  • Brown chicken pieces on top of the stove in the cooking oil. While chicken is browning, place cabbage wedges in the crock pot, add onion and green pepper.
  • Place browned chicken pieces on top of cabbage, onion and peppers. (If I am using chicken breasts, I cut mine in pieces but you can leave them whole) In a bowl whisk together the tomatoes, mushrooms, oregano, black pepper, salt, garlic powder, basil, green chilis and hot sauce. Add the bay leaf and pour over the chicken and cabbage. Cook on low for 7 to 8 hours or high for 4 to 5 hours. Remove bay leaf.

So easy and so good. I use frozen chicken breasts and cook on high for 4 hours in the slow cooker. The sauce is not thick, it is a bit runny, but very tasty. Add tomato paste if you want it thicker. Serve on top of pasta and sprinkle with Parmesan cheese. I use one can of crushed tomatoes and one can of diced tomatoes.

  • Cook in the slow cooker set to High until chicken is no longer pink in the center and the juices run clear, about 4 hours.

Steps:

  • Place chicken in the bottom of the slow cooker. Position the chicken so it's in a single layer and season, if desired (see blog post above for suggestions).
  • Cover and cook medium boneless, skinless chicken breast on LOW for 1 1/2 to 2 1/2 hours (for other cuts of chicken, such as boneless things, or bone-in chicken breasts or thighs, and for cooking times on HIGH, see the blog post above).
  • Check the chicken for doneness with an instant-read thermometer. (If you're using bone-in chicken, don't touch the thermometer to the bone.) 1 (8 ounce) can sliced mushrooms
3/4 cup light brown sugar
2 tablespoons minced garlic
1 teaspoon rosemary
1/2 teaspoon sage
1 teaspoon black pepper
2 tablespoons soy sauce
1/4 cup cola
3/4 cup balsamic vinegar
pasta
1 tablespoon herb butter
1/4 small cabbage (thinly sliced)
parmesan cheese (grated)
fresh parsley (freshly snipped)

Steps:

  • Place chicken, mushrooms, brown sugar, garlic, rosemary, sage, pepper, soy sauce, cola, and vinegar into crockpot. Cover and cook on low for at least 5 hours.
  • About one-half hour prior to serving, cook pasta as directed. Meanwhile separate chicken meat with a wooden spoon in the crockpot.

2-3 cups water (approximately)
Lawry's seasoning salt (sprinkly liberally )
Fresh cracked pepper (sprinkly liberally )
garlic powder (sprinkly liberally )
onion powder (sprinkly liberally )
other optional seasonings: (tarragon, parsley, basil, worchesterchire sauce, soy sauce, teriyaki sauce)

Steps:

  • Preheat your slow cooker to low heat.
  • Remove the chuck roast (or roasts) from their packaging and use a knife or fork to stab a few holes on all sides. Put in the bottom of the pot. Add water to the pot.
  • Sprinkle evenly with Lawry's seasoning salt, freshly ground pepper, and any optional spices you choose.
  • Cover and cook on low for 8-10 hours or until the beef shreds easily with a fork. If you check it after 8 hours, and it's not easy to pull apart, continue cooking for another 1-2 hours. Before cooking put a piece of saran wrap over the pot before putting on the lid. It helps the meat to cook faster and the juices to not evaporate.
  • When done cooking, pull the beef apart while still in the pot with just your two forks. Beef can be served immediately with juices over noodles or mashed potatoes. It also makes a great sandwich, nachoa, taco, or burrito!
