- Place a large skillet over medium heat, and add sausage. Cook, stirring, until sausage is browned, about 5 minutes. Drain fat, and transfer sausage to slow cooker.
- Stir the black beans, onion, celery, green pepper, water, tomato sauce, garlic, thyme, bullion granules, white pepper, cayenne pepper, and bay leaves into the sausage in the slow cooker. Cover, and cook on Low until vegetables are tender, about 6 hours. Remove bay leaves before serving.

Steps:
- Heat oil in a large skillet over medium heat. Cook the sausage until well browned, 5 to 7 minutes.
- Stir in the onion; cook and stir until lightly browned, 5 to 7 minutes more.
- Remove the sausages, and cut them into 1 1/2-inch to 2-inch pieces.
- Pour the beef stock, tomatoes, tomato puree, and hot sauce into the skillet with the onion and bring the mixture to a simmer, scraping up any brown bits from the bottom.
- Place the carrots into a slow cooker, followed by the garbanzo beans and kidney beans.
- Arrange the sausage pieces on top.
- Pour the sauce from the skillet into the slow cooker.
- Cook on Low for 4 to 6 hours.

- Rinse and sort beans; soak according to package directions., In a large skillet, heat oil over medium-high heat. Brown sausage. Remove with a slotted spoon. SLOW COOKER SAUSAGE, BEAN AND PASTA STEW
Two secret ingredients do double-duty in this sausage stew: fire- roasted canned tomatoes boost the flavor and add smoky backbone, while a Parmesan rind-which you can get on its own in many supermarkets-adds a savory, just-slightly-cheesy note and tons of body.

- Spread the onions over the bottom of a 6- to 7-quart slow cooker and top with the carrots, garlic, white beans, thyme bundle and sausage links. Mix the diced tomatoes with the broth and 3 cups water and pour over the sausages. Add the Parmesan rind if using.
- Cook on high for 4 to 5 hours or on low for 7 to 8 hours; the beans will be tender and begin to fall apart. Uncover the slow cooker, remove and discard the thyme bundle and Parmesan rind and transfer the sausage links to a cutting board. Stir the pasta into the stew and continue to cook, covered, until the pasta is cooked through, about 20 minutes.
- Turn off the heat. Cut the sausages into bite-size pieces and stir into the stew along with the parsley and vinegar. Season to taste with salt and pepper. Serve with grated Parmesan on the side for sprinkling on top and crusty bread for soaking up the broth.
- Cook's Note: This stew is also a great way to use up leftover cooked pasta. Simply omit the ditalini, reduce the water by 1 cup and stir 1 cup of cooked pasta (cut up if long noodles) into the finished stew along with the sausage pieces.
CROCK POT RED BEANS AND RICE WITH ANDOUILLE SAUSAGE
Steps:
- Gather the ingredients.
- Put the dried beans in a bowl of cold water and swish them around to rinse. Discard floating beans.
- Drain the beans in a colander and pick them over, looking for any small stones or malformed beans.
- Put the beans in the crockery insert of a slow cooker .
- Add 1 1/2 quarts of water to the beans along with the celery, onion, garlic, bay leaves, and crushed red pepper flakes.
- Cover the slow cooker and cook the beans on low for about 6 to 7 hours, or until the beans are tender. Or cook them for about 3 1/2 to 5 hours on high.
- Heat the vegetable oil in a skillet over medium heat. Add the diced andouille sausage and cook, stirring, until the sausage is nicely browned.
- Add the sausage and bell pepper to the beans. Taste and add 2 to 3 teaspoons of kosher salt, or to taste.
- Cover and continue cooking on low for about 1 hour longer.
- Meanwhile, cook the rice in a rice cooker or on the stovetop following package directions.
- Mound the rice on a plate or in a bowl, ladle the beans over the rice, and serve with freshly baked bread or cornbread if desired.

BEANS & SAUSAGE - CROCK POT
I found this in a crock pot cookbook, and although it was similar to some recipes already on here, I wanted to post it so I would remember to try it. The recipe says you can substitute any type of canned beans, just use two types. Suggestions for white are great northern, butter beans, or cannellini. For red, you could try small red or kidney beans. Fresh or fully cooked sausage can be used.

- In an ungreased skillet over medium heat, brown the sausage. If using fully cooked or smoked sausage, slice and set aside. If using fresh sausage, add the water, cover and cook 8 to 10 minutes until completely cooked through. Uncover and cook a few minutes more. Cool and slice.
- In a clean skillet, heat the oil over medium. Add the peppers, onion and garlic, stirring just until tender.
- Transfer to the slow cooker and add the sausage, beans, tomatoes and their juice, and wine. Cover and cook on HIGH for 3 to 4 hours, or LOW for 6 to 8 hours. Near the end of the cooking time, check the consistency and cook with the lid off to thicken if desired.
- Season with salt and pepper and serve.

- Tear the greens into large pieces, wash under running water to clean well, drain.
- Preheat a heavy skillet with olive oil, add onion and garlic; cook stirring frequently until onions begin to lightly brown, add minced jalapeno peppers.
- Place the cooked onions in the bottom of the crock-pot, add the drained greens, crushed red pepper and water.
- In the same skillet used for the onion, lightly brown the sliced sausage and place on top of the greens.
