CROCK POT PORK MEDITERRANEAN STYLE

The longer I have my crock pot the more I love and appreciate it! Personally I find it is at its best with making stocks, soups, stews and large pieces of meat. My biggest joy is creating new recipes for it...hope you will like this one!

1 (3 lb) boneless pork shoulder
1/4 cup olive oil
1/4 cup lemon juice
2 teaspoons dried oregano
2 teaspoons dried mint
2 teaspoons mustard
2 teaspoons pesto sauce
6 crushed garlic cloves
salt and pepper

Steps:

  • Mix all the ingredients for the marinade.
  • Put the roast in a large bowl, stab all over with a sharp knife, pour over and rub in half of the marinade.
  • Turn over and repeat, cover and leave in a cool place for 10-12 hours.
  • When ready to cook bring roast back to room temperature.
  • Preheat a large frying pan or skillet on the top of the stove.
  • Scrape of as much marinade as possible and place that, together with the marinade in the bowl in your crock pot, switch on to low.
  • When skillet is hot brown the roast on all sides for about 10 minutes, don't use any oil or butter, there is still enough oil on the roast.
  • Put in the crock pot and cook on low for 8-10 hours.
  • You can add two tablespoons of cream to the juices or serve them as they are.
  • If you don't like the juices just serve the pork with another gravy and discard the juices.
  • To serve on buns or in pita, cook the pork 1-2 hours longer so you can pull it apart.

2 lbs pork roast
2 tablespoons olive oil
3/4 cup chicken broth
1/2 tablespoon paprika
1/2 tablespoon garlic powder
2 teaspoons dried sage
1/4 teaspoon dried rosemary
1/4 teaspoon dried marjoram
1/4 teaspoon dried thyme
1 teaspoon oregano
1 teaspoon basil

Steps:

  • Mix spices, oil, broth in a small bowl.
  • Put roast in crock pot.
  • Poke it all over with a knife.
  • Pour the liquid mixture over the roast.
  • Cook on low 6-8 hours.
  • Shred roast in the crock pot- it will fall apart easily using just 2 forks.
  • Let it soak up the liquid.
  • Serve with pita bread, feta cheese, tomatoes.
  • Or serve over garlic couscous or mashed potatoes.

3 lbs boneless beef chuck roast
1 teaspoon salt
1 tablespoon dried Italian seasoning
1 large garlic clove, fine chopped
1/3 cup sun-dried tomato packed in oil, drained and chopped
1/2 cup sliced black olives
1/2 cup beef broth
1/2 cup frozen pearl onions

Steps:

  • Spray 12 inch skillet with cooking spray; heat over medium - high heat.
  • Cook beef in skillet about 5 minutes, turn once till brown.
  • Sprinkle with salt, Italian seasoning and garlic; remove from skillet.
  • Place beef, seasoned side up in 4-5 quart slow cooker.
  • Spread tomatoes and olives over roast.
  • Add broth and onions.
  • Cover and cook on low 5-6 hours till beef is tender.
  • Remove beef from slow cooker; cover and let stand 15 minutes.
  • Slice beef; serve with beef juice and onions from slow cooker.

  • Combine broth and 2 teaspoons of the garlic in slow cooker. In a small bowl, combine garam marsala with 1 teaspoon salt and 1/2 teaspoon fresh ground black pepper. Pat meat dry and rub the garam marsala mixture all over both tenderloins. Nestle tenderloins into slow cooker side by side, alternating thicker end to thinner end. Cover and cook until pork is tender and registers 155 degrees, 1 to 2 hours on low.
  • Transfer tenderloins to carving board and tent with aluminum foil. Pour cooking liquid into cup or liquid measure, then return 1 cup liquid back into the slow cooker (You could pour the liquid into a fat separator and let sit for 5 minutes before pouring back into slow cooker, but the fat is so minimal, you won't get much separation). Add the couscous and raisins into liquid. Cover and cook the couscous on high until tender, about 15 minutes. Fluff couscous with a fork, then stir in almonds (couscous will seem very dry until you fluff it).
  • For the parsley vinaigrette, whisk oil, parsley, vinegar, and remaining garlic together in a bowl and season with 1/2 teaspoon salt and pepper to taste. Slice tenderloins and transfer to serving platter.
