- Heat butter and oil in a large nonstick pot or pan over medium high heat.
- Add chicken and sprinkle salt and pepper. Saute until golden brown. It does not have to be fully cooked.
- Add onion, garlic and saute for 1-2 minutes until fragrant.
- Add broth, honey, soy sauce, vinegar, red chili flakes and mix everything together.
- Add green peppers and half the mangoes and let it all simmer for 1-2 minutes.
- Pour the dissolved cornstarch and continue cooking, uncovered, until sauce thickens to your desired consistency.
- Mix in the remaining mangoes and garnish with thinly sliced green onions, if you like. Enjoy!

- In slow cooker, combine LA VICTORIA® Mango Habanero Salsa, black beans, corn kernels, LA VICTORIA® Fire Roasted Diced Green Chiles, garlic cloves, cumin, salt and pepper. Stir to combine. Add chicken breasts to slow cooker and toss with sauce. Cover and cook on high for 4 hours or until chicken shreds easily with fork. Remove chicken breasts from slow cooker and shred meat using two forks. Using strainer or slotted spoon, drain sauce from slow cooker, reserving thick salsa, black bean and corn mixture. Discard liquid. Add strained cooking sauce to shredded chicken and toss to coat. Warm tortillas and set out toppings. Serve chicken, with sauce and let everyone assemble his or her own tacos.
CROCK POT MANGO CHICKEN
We love an easy Crock Pot dinner recipe and this is a delicious one! The chicken is super juicy. Pouring the mildly sweet mango sauce on top adds a lovely flavor to the chicken. There's a hint of curry flavor throughout but it's not overpowering. We loved how it pairs with the mango. A simple meal.

- 1. Season the chicken with salt and pepper. Brown on both sides in the oil. Then place at the bottom of the Crock Pot.
- 2. Add the onion and garlic to the pan. Cook until they lightly caramelize.
- 3. Whisk together the mango nectar, curry powder, pepper, and instant bouillon.
- 4. Pour the nectar mix over the chicken and cover with the cooked onions.
- 5. Cover and cook on low for 3-4 hours or until chicken probes to 170F.
- 6. Remove chicken and onion to a platter and keep warm.
- 7. Stir together the corn starch with water until mixed. Then whisk into the liquid in the Crock Pot. Add drained mango fruit.
- 8. Cook uncovered on high, stirring frequently until sauce thickens (15 minutes or so). Add chicken and onion back to the Crock Pot to warm with sauce.
- 9. Garnish with fried onion bits and serve with rice or mashed potatoes.
