1 pound ground beef
1 onion (chopped)
1/2 teaspoon garlic (minced )
30 ounces tomato sauce
6 ounces tomato paste
1 1/2 teaspoon salt
1 teaspoon oregano, dried
16 ounces Cottage cheese (or ricotta cheese)
1/2 cup Parmesan cheese (grated )
12 ounces Mozzarella cheese
12 ounces lasagna noodles (uncooked)

Steps:

  • Brown ground beef, onion, and garlic in a skillet. Add tomato sauce, tomato paste, salt, and oregano. Cook long enough for the sauce to get warm.
  • Spray slow cooker with nonstick cooking spray. Spoon 1/3 of the meat sauce into the bottom of the slow cooker. Add a double layer of lasagna noodles, about 1/3 of the package. Break the noodles to fit the inside of the slow cooker and cover the meat sauce. Top noodles with 1/3 of the Cottage cheese, Parmesan cheese, and Mozzarella cheese. Repeat with two more layers of sauce, noodles, and cheeses.
  • Cover and cook on low for 4-5 hours.
  • Serve immediately. Makes 10 servings.

Number Of Ingredients 12

1 lb. ground beef (browned)
1 16 oz. pkg. farfalle (bow tie pasta, cooked)
1 25-28 oz. jar spaghetti sauce
1 small onion (chopped)
1 clove garlic (minced)
½ tsp. Italian seasoning
salt and pepper to taste
15 oz. container ricotta cheese
2 Tablespoons milk
¼ cup Parmesan cheese
1 cup shredded mozzarella
Dried parsley to garnish

Steps:

  • In a skillet over medium heat, cook beef until no longer pink, drain.
  • Add onions and cook until translucent.
  • Add garlic and cook for 1 minute longer.
  • Turn off the heat and add the spaghetti sauce, salt and pepper and Italian seasoning
  • Cook the pasta until Al Dente about 8 minutes.
  • Place the ricotta in a medium bowl and add the milk until spreadable.
  • Layer the ingredients in a lightly greased 5 qt. slow cooker starting with half the spaghetti sauce, half the pasta, half the ricotta and half the mozzarella cheese; repeat.
  • Sprinkle the Parmesan cheese and parsley.
  • Cook on high for about 1 1/2 hours or on low for about 3 hours.

2 tablespoons oil
2 pounds dark meat ground turkey
1 small onion, diced
2 cloves garlic, minced
Two 28-ounce cans diced tomatoes, drained
Two 6-ounce cans tomato paste
1 tablespoon dried Italian herbs
2 teaspoons kosher salt
2 large eggs
3 cups low-fat cottage cheese
1 cup grated Parmesan cheese
16 ounces shredded mozzarella (4 to 5 cups)
1 pound dried lasagna noodles, uncooked

Steps:

  • Heat 1 tablespoon of the oil in a large saucepan over medium heat. Add the turkey and cook until cooked through, breaking it up with a wooden spoon into bite-size pieces, about 5 minutes. Remove the turkey to a plate with a slotted spoon then pour off the liquid.
  • Add the remaining 1 tablespoon of oil to the saucepan, then the onions and cook, stirring occasionally, until soft, about 5 minutes. Add the garlic and cook, stirring, for 1 more minute.
  • Return the turkey to the saucepan, add the tomatoes, tomato paste, Italian herbs and salt. Stir and bring to a boil then cook until the sauce thickens slightly, 3 to 5 minutes.
  • Meanwhile, whisk the eggs in a medium bowl. Stir in the cottage and Parmesan cheeses.
  • In the slow cooker, spread a thin layer of the tomato sauce. Top with a single layer of the dried lasagna noodles (I break them into pieces and slightly overlap them to fit the pot), then 1/3 of the cottage cheese mixture, then 1/3 of the mozzarella (see Cook's Note). Repeat the layering, ending with mozzarella. Cover and cook on low for 4 to 6 hours.
  • Turn off the slow cooker, uncover and let rest for 20 minutes before serving. This will help the lasagna keep its shape.

  • Cover, and cook on LOW setting for 4 to 6 hours.

This is an easy way to make enchiladas, without all the fuss. You start off with making the hardest part in the crockpot, throw everything in a casserole dish, and pop it in the oven. Awesome.

4 boneless chicken breasts
1 (8 ounce) can black beans
1 (8 ounce) can corn
1 (8 ounce) jar mild salsa
1 (8 ounce) package cream cheese
corn tortilla
cheddar cheese
1 (8 ounce) can enchilada sauce
sour cream

Steps:

  • 1) Put the chicken, beans, corn, and salsa all in the crockpot.
  • 2) Cook on low for 8 hours or high for 4 hours.
  • 3) When done, add package of cream cheese. Stir around until cream cheese is combined and all the meat has fallen apart, essentially becoming shredded.
  • 4) Preheat oven to 400 degrees.
  • 5) Line bottom layer of casserole dish (u can use any size, I usually make one big one, and one the size of a bread loaf pan) with corn tortillas. top off with cheese and part of can of enchilada sauce.
  • 6) Add a 1 inch layer of the meat from the crock pot.
  • 7) Repeat tortilla, cheese, and enchilada layer.
  • 8) Repeat 1 inch layer of meat
  • 9) End with another layer of tortilla, extra chees, and the rest of the enchilada sauce.
  • 10) Put tin foil on dish and pop in oven for 30 minutes. Take off tin foil last 5 minutes.
  • 11) Cut into pieces and serve with a dollop of sour cream on top.
  • **Variations: You can use a spicy jack cheese instead of cheddar to add spice, along with using spicy salsa in the crock pot. I have also used fat free shredded cheddar and I only got rave responses. No one noticed it was a healthier cheese. Also, you can use pinto beans instead of black, and last, but not least, you can try boneless pork chops instead of chicken. They all come out yum.

6 1/2 cups uncooked wide egg noodles
3 tablespoons butter
1 1/2 lbs ground beef
2 1/4 cups spaghetti sauce
6 ounces process cheese, cubed (Velveeta)
3 cups shredded mozzarella cheese

Steps:

  • Cook noodles according to package directions and drain. Add butter and toss to coat.
  • In a large skillet, cook beef over medium heat until no longer pink and drain.
