Modified version of a recipe I found on the 'net that I thought turned out great. Apart from a few small changes to seasoning the original recipe called for a cup of wine rather than beer, sometimes I feel with tomato that makes things a bit rich when slow-cooked and I thought the beer substitution worked well. If you don't want to use beer try a cup of beef stock instead of the stock powder / beer. Also whole garlic cooked this way doesn't taste strong at all, if you want it to have a strong garlic taste you'd need to crush some of it.

1 kg lamb shank (4 medium shanks)
1 tablespoon olive oil
1/2 teaspoon ground black pepper
2 medium brown onions, sliced
12 garlic cloves, peeled
200 g mushrooms, coarsely sliced
1 cup beer
1 tablespoon Worcestershire sauce
2 teaspoons beef stock powder
400 g crushed tomatoes
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon dried thyme
1 bay leaf, broken into quarters

Steps:

  • Heat oil in pan over medium to high heat and brown lamb shanks on all sides.
  • Season lamb shanks with pepper.
  • Place sliced onions at bottom of crock pot and put lamb shanks on top drizzled with remaining oil and juices from the pan.
  • Place mushrooms and garlic cloves over the top.
  • Mix beer, Worcestershire sauce, stock powder, tomatoes, oregano, basil, thyme and bay leaf in a bowl.
  • Pour mixture over the top of lamb shanks.
  • Cook in crock pot on low for 6-8 hours depending on your crock pot.
  • Remove bay leaves.
  • Serve with vegetables and juices poured over the top of the shanks. I served over wholegrain bread but mashed potatoes would be the best match.

1 lamb shank
1 teaspoon sea salt
1 teaspoon black pepper
1 teaspoon cayenne pepper (optional)
garlic clove
1 stalk fresh rosemary
3 bay leaves
cumin
1 sweet onion
3 small red potatoes (miniature )
3 small golden potatoes (miniature )
2 -3 whole carrots
2 teaspoons extra virgin olive oil
pinot noir wine or merlot
1 cup water

Steps:

  • Rub lamb shank with ample amount of sea salt, pepper, Cheyenne pepper and two tea spoons of olive oil. Let it sit in a zip-loc bag over night or for 8 hours.
  • Dice several bulbs of garlic and put into fry pan.
  • Dice one sweet onion.
  • Dice golden and red potatoes in halves or thirds.
  • Dice carrots.
  • Throw the diced items into the fry pan at medium and stir occasionally so items are evenly golden brown.
  • Remove diced items and place them in the crock pot.
  • Take the lamb shank and place in fry pan at medium high rotating it enough to get the outside a light golden brown as to seal juices inside.
  • Remove the lamb shank from pan and place on a hard surface (cutting board) and make slits in the shank with a knife.
  • 1 Press the remaining fresh slices of garlic and rosemary into the slivers (a garlic slice in one sliver and a small fig of rosemary in another sliver).
  • Place shank into crock pot.
  • Take a bottle of your favorite red wine and pour just enough into the pan to break down the brown bits in the pan and gather other vegetable residue into the wine.
  • Pour the wine from the pan into the crock pot with the lamb (add a little more wine from the bottle if you wish).
  • Add a cup of water to the mix in crock pot and gently stir.
  • Add a pinch of cumin and three or four bay leaves into mix and gently stir.
  • Cook lamb shank for 10 hours in crock pot until done.

This is a great dish to serve with rice, orzo pasta or polenta. It makes a good impression on guest and is easy to fix. To be really fancy sprinkle each serving with toasted pine nuts.

3 -4 lbs lamb shanks, bone cracked (usually 4)
fresh ground pepper
1 medium onion, chopped
1 red bell pepper
1 cup sliced celery
1 (8 ounce) box frozen artichokes or 1 (12 ounce) can artichokes, drained
1 cup drained sliced black olives
1 (14 1/2 ounce) can diced tomatoes
1 1/2 tablespoons red wine vinegar
1 1/2 tablespoons cornstarch
2 tablespoons chopped parsley

Steps:

  • In a 4 1/2 quart, or larger, electric crock pot, combine onion, bell pepper, celery, artichoke hearts,and olives.
  • Rinse shanks and pat dry.
  • Sprinkle all over with pepper.
  • Place shanks in pot on top of vegetables.
  • Add tomatoes with juice, add vinegar.
  • Cover pot and cook until lamb is very tender.
  • About 6-7 hours on low, less time on high.
  • Remove shanks to a bowl and keep warm.
  • Skim and discard fat from cooking liquid Turn crock pot to high.
  • Mix cornstarch with 1 1/2 tablespoons water and pour into crock pot.
  • Stir often until sauce bubbles (about 10 minutes).
  • Spoon sauce and vegetables over lamb.
  • Garnish with parsley.

SLOW COOKED MOROCCAN LAMB SHANKS

I have another recipe for Moroccan lamb shanks that we really enjoy, but I thought I would experiment a bit more the other day with some more flavours. We really enjoyed how they turned out and for us the flavour had just the right amount of spice. I cooked ours on the stove top on a really low heat for about 4 1/2-5 Hours and the lamb came out falling off the bone as lamb shanks should. I am not sure how long these would need in a slow cooker as I do not own one, so if anyone does them that way please let me know.

4 lamb shanks
2 tablespoons olive oil, divided use
1 onion, chopped finely
5 garlic cloves, crushed
1 tablespoon cumin
2 teaspoons ground coriander
2 teaspoons cinnamon
3/4 teaspoon cayenne pepper
1 teaspoon grated fresh ginger
1/2 cup white wine
4 cups water
4 teaspoons instant chicken bouillon granules
1 tablespoon tomato paste
4 tablespoons honey
2 tablespoons hot mango chutney
10 dried apricots, chopped finely
1 1/2 tablespoons cornflour

Steps:

  • Heat 1 tablespoon of olive oil in a large pan add lamb and cook until shanks are browned all over.
  • Heat remaining olive oil in a large saucepan, add onion and garlic, cook until onion softens.
  • Add cumin, coriander, cinnamon, cayenne and ginger, stir until fragrant.
  • Add wine, water, stock granules, paste, honey and chutney, bring to the boil, add lamb shanks, reduce heat to low, cook, covered, for approx 41/2-5 hours, until lamb is falling off the bone, turn shanks several time during cooking.
  • About 10 Min's before the end of cooking, add apricots, stir to combine.
  • Remove shanks and cover with foil to keep warm.
  • Mix a little water with the cornflour, add to liquid, bring to the boil, stir until sauce becomes a gravy consistency, it will not be super thick.
  • I served ours over couscous and poured the sauce around the dish.

SLOW-COOKER LAMB SHANKS

4 lamb shanks
2 tbsp olive oil
1 onion, finely chopped
2 tbsp tomato purée
250ml light red wine (such as pinot noir)
2 tbsp plain flour
500ml stock, vegetable, chicken or lamb
2 carrots, chopped
2 garlic cloves, peeled
2 bay leaves
2 thyme sprigs
1 bunch parsley, leaves chopped separately to the stalks

Steps:

  • If you need to preheat your slow cooker then turn it on now. In a large hot frying pan, add half the oil and brown the lamb shanks all over, then transfer them to the slow cooker. This will take you about 10 mins and you may need to do it in batches. Add the remaining oil to the frying pan and fry the onion gently until it starts to turn translucent, then stir in the tomato purée and flour and cook for a minute.
  • Add the red wine and bring it to a boil, stirring the flour and purée into the wine until you have a smooth sauce around the onion pieces. Tip into the slow cooker. Pour the stock into the same pan and bring it to a boil, then tip into the slow cooker. Add the carrots garlic, bay leaves, thyme and parsley stalks to the slow cooker and put the lid on. Cook on low for eight hours or on high for four hours. Turn the shanks over at some point during the cooking.
  • After eight hours the lamb should be tender and starting to fall off the bone. If the sauce is too thin lift out the lamb and carrots and tip the sauce into a pan, boil it rapidly until it starts to thicken before adding the parsley.

1 1/4 cups beef broth
1 1/2 teaspoons ground cardamom
1 teaspoon ground cumin

1 1/2 cups boiling onions, peeled

1/3 cup kalamata olives or 1/3 cup other black olives, halved if desired

Steps:

  • Using a vegetable peeler, remove the orange part of the peel from 1 of the oranges . Cut the peel into thin strips (should have about 1/4 cup); set aside. Squeeze the juice from both oranges to make about 2/3 cup. In a small bowl stir together orange juice, broth, cardamom, cumin, salt, turmeric, and pepper. Set aside.
  • Place carrots, onions, and garlic in the bottom of a 5- to 6-quart crockery cooker. Top with lamb shanks, strips of orange peel, and cinnamon sticks. Pour orange juice mixture over all. Cover and cook on low-heat setting for 8 to 9 hours or until lamb pulls easily from the bone.
  • When ready to serve, transfer the lamb shanks and vegetables to a serving dish using a slotted spoon. Skim the fat from the cooking liquid. Remove and discard the cinnamon sticks. Measure 1 1/2 cups juices; transfer to a small saucepan.
  • Combine water and cornstarch; add to saucepan. Cook and stir over medium heat until thickened and bubbly. Cook and stir 2 minutes more. Spoon sauce over lamb and vegetables. Sprinkle with olives and cilantro. Makes 4 to 6 servings.

2 tablespoons Dijon mustard (heaping)
2 teaspoons sea salt
1 teaspoon black pepper
6 small lamb shanks

2 tablespoons fresh rosemary, chopped (heaping)

Steps:

  • Combine the red wine, Dijon mustard, salt, pepper in a small dish. Place the lamb shanks in the crock pot.
