This is another one of those family recipes that we all love and is so easy to make. Great for a week night meal when the family is rushed.

1 lb ground round
1 lb bacon
1/4 cup diced onion
4 cans pork and beans
1 can kidney bean
1 can butter beans
3/4 cup brown sugar
1 cup white sugar
2 teaspoons liquid smoke
3 tablespoons vinegar
3/4 cup ketchup

Steps:

  • Cook ground round with onions until meat is browned, drain off grease.
  • Cut up bacon and fry until well done and drain.
  • Mix meat, bacon and remaining ingredients in crockpot.
  • Cook for 6-8 hours on low.

16 ounces dry pinto beans
1 large onion, chopped
3 garlic cloves, minced
2 -3 bay leaves
1/2 lb sliced bacon

Steps:

  • The night before you want to cook the beans.
  • Rinse beans several times in warm water.
  • Put them in a large pot.
  • Cover with cold water up to 2-3 inches above beans.
  • Let set over night.
  • Drain and rinse beans.
  • Layer bacon strips on bottom of crock pot.
  • Top with remaining ingredients and beans.
  • Cover with water about 1 inch or so above beans.
  • Add remaining ingredients to pot.
  • Turn on and cook all day until beans are tender.
  • Bacon will float to the top but that's ok.
  • Remove bay leaves.
  • Mash beans with potato masher.
  • As mashed as you like them.
  • I mash the bacon up with the beans but you can remove it.
  • I like to leave it with some whole beans too.
  • You can re-cook these in a non stick skillet.
  • Serve with grated cheese and chopped green onions.
  • Or anything else that you like to go with your beans.

1 onion, coarsely chopped
1 1/2 cups dried pinto beans, picked over and rinsed
1 1/2 cups dried black beans, picked over and rinsed
1/2 fresh jalapeno pepper, seeded and chopped
2 tablespoons minced garlic
3 teaspoons salt
2 teaspoons fresh ground black pepper
1/8 teaspoon ground cumin
1 bay leaf
4 cups water
4 cups chicken broth

Steps:

  • Combine all ingredients in a slow cooker. Cook on low 12 hours or high 8 hours. Add more water if necessary.
  • Remove and discard bay leaf. Drain beans, reserving broth. Mash beans by hand with a potato masher, adding broth as necessary to achieve desired consistency. Discard unused broth, or use in other recipes.

1 cup brown sugar
1/4 cup barbecue sauce
1 small green pepper, diced
1 small yellow onion, diced
1/2 teaspoon fennel seed

Steps:

  • Cook sausage, and drain.
  • Mix all ingredients in crock pot.
  • Cover and cook 3-4 hours.
  • Cook in oven 350 degrees for 1-1 1/2 hours.

1 lb pinto beans, dried
1 teaspoon salt
1 vidalia onion, chopped
6 garlic cloves, minced
3 tablespoons extra virgin olive oil
1/2 cup fresh green chile, chopped
1 teaspoon ground cumin

Steps:

  • Sort and rinse beans, add to crockpot, cover with 6 cups of water and soak overnight.
  • Remove water from the crockpot and rinse beans.
  • Add 6 cups of water and salt.
  • Cover and cook at least 10 hours.
  • Remove liquid and save for later.
  • Move beans to a bowl.
  • Sauté onions and garlic in oil over medium heat until tender, then add to blender along with chilies and cumin.
  • Blend until smooth.
  • Add about 2 cups of the cooked beans to blender and blend until smooth.
  • Pour into crock pot.
  • repeat until all of the beans have been blended and added to the crockpot.
  • Stir well and add liquid from cooking the beans into the crockpot about 1 cup at a time until the beans are the consistency that you like, I usually do about 2 cups.
  • Cook on high for about 30 minutes.
  • Stir and enjoy.

One side serving is 1/2 cup, which also makes about 4 tacos or burritos These are a great side dish, may also be used for burritos, and can be served as a main dish with plenty of shredded cheddar and salsa on top. Take the time and make these ahead. You won't be sorry!

1 lb dried beans, soaked overnight
4 cups water
1 cup brewed coffee
3 minced garlic cloves, don't substitute powdered (optional)
1 bunch fresh cilantro or 1 cup celery & leaves, chopped with stems
1 tablespoon ground cumin
2 teaspoons chili powder
1 1/2 teaspoons oregano
1 teaspoon salt, to taste

Steps:

  • Drain soaked beans and place in a crock pot along with remaining ingredients except salt. Make sure that the beans are covered with liquid by about 1".
  • Stir well, cover and cook on low all day, about 8-10 hours, until tender. Keep an eye on them and make sure they don't get dry.
  • Add salt.
  • Use a potato masher or heat safe (canning) jar bottom to mash well and stir with a wooden spoon.
  • Continue to mash and stir until desired consistency.
  • To freeze, put in a freezer Ziploc and flatten into a layer to freeze, or no more than 2" deep in freezer containers.

I am going to use #87782 Evelyn's Roasted Potatoes along with this recipe to re-create that wonderful meal. This is a Cooks.Com recipe and tweaked a little. I am going to include the oregano, but can not use it due to a severe oregano allergy.

1/2 cup vinegar
1 teaspoon salt

1 (16 ounce) can baked beans, undrained
1 (15 1/2 ounce) can butter beans, drained and rinsed
1 (16 ounce) can kidney beans, drained and rinsed
1 (14 1/2 ounce) can green beans, cut and drained

Steps:

  • Cook the bacon until crisp.
  • Drain saving 2 tablespoons of pan drippings.
  • Sauté the onions in the drippings until tender.
  • Add in the brown sugar,vinegar, salt, mustard and garlic powder.
  • Simmer uncovered for 15 minutes or until the onions are brown.
  • Combine the beans in the crock pot.
  • Add the onions mix and bacon; stir well.
  • Cover and cook on low for 6-8 hours or until the beans are tender.
  • Enjoy!

As football season and the holidays come into full force, I have pulled out my slow cookers for backup.

1 lb. Dried Pinto Beans (or Kidney Beans, Black Beans)
1 Onion, Peeled And Shredded
4 cloves Garlic, Minced
1 tbsp. Ground Cumin
2 tsp. Sea Salt
1/2 tsp. Cayenne Pepper
Optional Add-ins, Such As Ham Bone Or Bacon Strips
7 c. Water
Salt And Pepper, to taste
Optional Toppings, To Serve (See Note)

Steps:

  • Pour dried beans in the slow cooker. Add shredded onion, garlic, cumin, salt and cayenne pepper. For a richer flavor, add a ham bone or a couple of bacon strips to the crock. Pour the water over the top of the beans and cover tightly. Turn slow cooker on high and cook for 8-10 hours. You can also cook on low for 12 hours or longer.Once beans are very tender, remove the ham bone or bacon if necessary. Depending on your slow cooker, you may have excess liquid in the crock. Scoop 1 ½ cups of the bean liquid out of the crock and reserve.Use an immersion blender or a potato masher to smash the beans into a relatively smooth texture. Add some of the bean liquid back in if needed to reach the right consistency. Salt and pepper to taste.Serve as-is or sprinkle with your favorite toppings. Serve warm.Note: Some optional topping suggestions include shredded cheese, sliced jalapenos, chopped green onions, sour cream, and cayenne pepper.

  • Place the rinsed beans in a medium or large saucepan and cover with water by at least an inch. Bring the beans and water to a boil and cover, cooking for 15 minutes (be aware that the beans will expand as they absorb water and cook so make sure your pan isn't overly full to begin with or else you'll have an overflow problem - safest to start with a larger pot).
  • Remove from the heat and drain the beans. Place the beans in the slow cooker insert and cover them with about 2 inches of water. Add the salt, onion, garlic, and jalapeno. Cover and cook on high for 4-6 hours. I haven't tried it but you could experiment by cooking on low for 8-10 hours.
  • When the beans are tender, ladle out about 1 to 1 1/2 cups of the cooking liquid and reserve in a bowl or liquid measuring cup. Drain the beans and veggies in a colander until most of the liquid is gone but there are still a few drips (you don't want the beans bone dry).
  • Place the beans and veggies and 1 tablespoon white vinegar (or 1 tablespoon liquid from a jar of jalapenos) in a food processor or blender (you may need to do this in batches - if so, only use half the amount of vinegar each time if splitting the beans in two batches).
