4 -6 boneless skinless chicken breasts
2 large onions, coarsely chopped
2 garlic cloves, minced
2 tablespoons butter
2 (14 ounce) cans tomatoes with juice, crushed
1 teaspoon cinnamon
2 tablespoons curry powder
1/2 cup raisins

Steps:

  • Brown chicken in butter; add garlic and onions and saute about 2 minutes.
  • Transfer to slow cooker.
  • Combine remaining ingredients and add to cooker.
  • Cook low for 6-8 hours.
  • Serve over rice.

1 large sweet onion, chopped
1 (10.5 ounce) can condensed cream of chicken soup
2 ½ cups water
1 (8 ounce) package yellow rice mix (such as Zatarain's®)
1 tablespoon butter
1 (15 ounce) can whole kernel corn, drained
1 cup shredded Cheddar cheese

Steps:

  • Place chicken in the bottom of a slow cooker. Scatter onion over the top. Spoon soup over that. Cover and cook on Low for 7 to 8 hours or on High for 3 to 4 hours.
  • When chicken is almost finished cooking, combine water, rice mix, and butter in a 2-quart saucepan until well blended. Bring to boil. Reduce heat to low, cover, and let simmer until rice is tender, about 25 minutes.
  • Stir cooked rice, corn, and Cheddar cheese into the slow cooker a few minutes before serving. Serve hot.

1 can (13.66 ounces) light coconut milk
1 teaspoon curry powder
1/2 teaspoon ground turmeric

3 green onions, sliced, divided
2 tablespoons cornstarch
2 tablespoons cold water
1 to 2 tablespoons lime juice
3 cups hot cooked rice

  • Sprinkle chicken with salt. In a large nonstick skillet coated with cooking spray, brown chicken on both sides. 1 green onion, finely chopped
2 garlic cloves, minced
1 tablespoon grated fresh ginger
1 tablespoon olive oil
1/8 teaspoon cayenne pepper
1 lb chicken, cubed
2 cups Minute Rice
2 cups chicken broth

Steps:

  • Combine curry, onion, ginger, oil and cayenne in a medium mixing bowl.
  • Stir in meat, working spice mixture into meat with fingers.

1 medium Golden Delicious apple unpeeled, cored and coarsely chopped
1/4 cup raisins
1/4 cup McCormick® Onions, Chopped
2 McCormick® Bay Leaves broken in half
