4 boneless skinless chicken breast halves
salt and pepper to taste
1-2 Tablespoons olive oil
1 medium shallot-finely diced
1/2 cup chicken broth
4-5 garlic cloves-minced
1/3 cup freshly squeezed lemon juice
½ teaspoon red pepper flakes
2 Tablespoons cornstarch dissolved in ¼ cup water
2 Tablespoons salted butter-softened
¼ cup heavy cream
Chopped fresh parsley-for serving

Steps:

  • Pound chicken breasts to ½ inch thickness, season with salt and pepper o taste. Heat Olive oil in a skillet and sear the chicken on both sides until browned (about 5 minutes). Remove the chicken from the skillet and place diced shallots, simmer in the same skillet until soft and gets golden brown color.
  • Grease the bottom of Slow Cooker and arrange seared chicken breast on the bottom.
  • In a measuring cup combine chicken broth, lemon juice, minced garlic, browned shallots and red pepper flakes, then pour the mixture in slow cooker. Cover and cook on high for 2-2.5 hours (depending on size of chicken breasts).
  • Dissolve cornstarch in cold water. Remove the chicken from slow cooker. Place softened butter and cornstarch mixture in slow cooker and stir to dissolve. Stir in heavy cream. Place chicken back in slow cooker, cover and cook on high for 30 minutes, or until the sauce thicken.
  • Sprinkle with chopped fresh parsley before serving.

4 bonelsss, skinless chicken breasts
salt and pepper
5 tablespoons butter, (divided)
1 teaspoon dried basil
1/4 teaspoon crushed red pepper flakes
1/4 cup lemon juice
zest of 1 lemon
1 cup half-and-half
1 tablespoon cornstarch
1 tablespoon chicken base
1 tablespoon capers, (rinsed and drained)

Steps:

  • Heat 1 tablespoon butter in either a cast iron skillet or a nonstick skillet. Season chicken with salt and pepper and add to skillet.
  • Cook until golden brown, about 3 minutes per side. Place in 6 quart crock pot.
  • Cut remaining 4 tablespoons of butter into 4 pieces and place a piece over each chicken breast.
  • Add basil, red pepper flakes, lemon juice, and lemon zest. (Note: The lemon slices in the picture were added just before taking pictures for presentation. Only add the juice and the zest.)
  • Cover crock pot and cook on LOW for 3 1/2 hours or on HIGH for just under 2 hours.
  • Add 1 tablespoon of the 1 cup of half-and-half to a small bowl and whisk in the cornstarch. Whisk into the rest of the half-and-half. Whisk in chicken base and add the capers.
  • Add half-and-half mixture to crock pot. Mix it in and cover and cook on HIGH for 1 more hour.

6 tablespoons unsalted butter (divided)
1/2 teaspoon kosher salt
1/4 teaspoon coarse ground black pepper
1 teaspoon Italian seasoning
2 lemons (juiced and zested)
2 garlic cloves (minced)
1 cup half and half
1 tablespoon cornstarch
1 tablespoon chicken base (optional, but delicious!)

Steps:

  • In a large cast iron skillet add 1 tablespoon of butter to melt on medium high heat.
  • Add the kosher salt, black pepper and Italian seasoning to the chicken and add it to the pan.
  • Cook on each side for 4-6 minutes.
  • Add the chicken to your slow cooker.
  • Cover with lemon juice, lemon zest, garlic and the rest of the butter in pieces (I added the lemons in the before picture just for reference. Don't cook the lemons in the slow cooker).
  • Cook on low for 4 hours or on high for 2 hours.
  • In a large measuring cup add the half and half, cornstarch and chicken base and whisk well.

½ cup butter (divided)
Salt (to taste)
ground pepper (to taste)
2 lemons (zested and juice reserved)
3 cloves garlic (minced)
1 red onion (cut into wedges)
1 cup chicken stock
1 cup Parmesan cheese (freshly shredded or grated is best)
1 cup heavy cream
Parsley (for garnish)

Steps:

  • Season chicken breast generously on both sides with salt and pepper.
  • In a large skillet, melt ¼ cup butter over medium-high heat. Add the chicken breast and sear on both sides for 2 to 3 minutes or until slightly browned.
  • Spray inside slow cooker with non-stick cooking spray. Place chicken breast in the slow cooker.
  • Add chicken stock to the skillet and deglaze the bottom of the pan by scraping with a wooden spoon. Add lemon juice and stir gently to combine. Pour chicken stock from skillet over chicken in slow cooker.
  • Tuck onion wedges around chicken. Top with lemon zest, minced garlic, additional pepper, and remaining butter, cut into slabs.

1 teaspoon oregano
1/2 teaspoon seasoning salt

1 cup chicken broth, divided use (or 1 cup same amount of water and 4 tsp. chicken bouillon powder)
3 tablespoons lemon juice (bottled is fine)
2 -3 garlic cloves, minced

Steps:

  • Spray crock pot with non-stick.
  • Combine lemon rind, 1/2 cup broth (or 1/2 cup water and 2 teaspoons chicken bouillon powder), garlic and lemon juice. Pour into pot.
  • Sprinkle both sides of each frozen breast with seasonings, add to pot.
  • Cover and cook on low 6 - 8 hours.
  • Remove chicken to plate and keep warm.

1 large stalk celery (chopped)
1 clove garlic (minced)
4 cups chicken stock (homemade or low sodium)
2 cups water (or sub with more chicken stock for added flavor)
1/2 cup uncooked white rice or orzo pasta (do not use instant rice)
¼ cup fresh lemon juice
2 large eggs
salt and pepper (to taste)

Steps:

  • Season the chicken with salt and pepper. Place the chicken, onion, celery, garlic, stock and water in your slow cooker. Cook about 3 hours on high, or 4-5 hours on low, adding the rice or orzo during the last hour or so of cooking time to prevent overcooking.
  • When the chicken is done, remove it from the slow cooker and allow to cool slightly. Chop into chunks or shred, and place back in the slow cooker.
  • Place the eggs in a medium bowl and beat lightly, then whisk in the lemon juice until combined. 2 large boneless skinless chicken breasts
Lemon pepper seasoning
1/2 cup all-purpose flour
¼ cup Parmesan cheese (finely grated)
1 teaspoon garlic powder
1/4 cup olive oil
½ cup dry white wine (like chardonnay or pinot grigio)
4 cloves garlic (minced)
1 ½ cups chicken broth
¾ cup heavy cream (at room temperature)
1 chicken bouillon
1 teaspoon mustard powder
1 cup Parmesan cheese (grated. See notes.)
3 Tablespoons freshly squeezed lemon juice
2 Tablespoons cold salted butter (Optional)
3/4 lb. spaghetti (optional)
1/4 cup fresh parsley (roughly chopped)
Freshly sliced lemon

Steps:

  • Slice the chicken in half to create 2 thinner slices. Place the chicken in a gallon freezer bag (or in between saran wrap) and use the textured side of a meat mallet to pound it to ½ inch thick.
  • Season with lemon pepper seasoning. You may also season with salt if desired, the Redmond Real Salt brand of lemon pepper seasoning that I use already contains sea salt.
  • Combine the flour, Parmesan cheese, and garlic powder, on a large plate. Set aside.
  • Pat the chicken dry and dredge each side in the flour mixture. Tap off excess.
  • Heat olive oil in a large skillet over medium-high heat. Sear the chicken in batches for 4-5 minutes per side, until a golden crust has developed. Set aside and leave brown remnants in the pan.
  • Add the wine and garlic. Set heat to medium. Bubble gently for about 4 minutes, until the liquid has reduced by half. Use a silicone spatula to "clean" any remaining brown flecks on the pan while the wine reduces and incorporate it into the liquid for more flavor.
  • Add the chicken broth, chicken bouillon, and mustard powder. Bring to a gentle boil and let it simmer for 5 minutes or so, to thicken and concentrate the flavor. Reduce heat to low.
  • Add the heavy cream slowly, stirring continuously.
  • Stir in the lemon juice and slowly sprinkle in the Parmesan, stirring continuously, until combined. Add the chicken back and let the chicken warm through.
  • Optional: Swirl in 2 Tbsp. cold butter to give the sauce a smooth, velvety finish.
  • Boil up to 3/4 lb. of spaghetti once the chicken is added back to the sauce. Drain.
  • Remove chicken and set on serving plates. Use kitchen tongs to add the spaghetti to the pot with the sauce until your desired sauce/pasta ratio is obtained. Toss to coat. (OR, serve this with my easy Buttered Noodles.)
  • Garnish with parsley and lemon slices and serve!

Comforting, citrusy, and flavorful Crockpot Lemon Chicken never disappoints! Made with juicy lemons, heads of garlic, and herbs, this easy lemon chicken will quickly become a new favorite dinner recipe.

3 heads garlic
2 lemons
½ teaspoon kosher salt
¼ teaspoon ground black pepper
1 teaspoon dried oregano
4 tablespoons unsalted butter
4 boneless, skinless chicken breasts
1 cup low-sodium chicken broth
2 tablespoons lemon juice
1 teaspoon Better Than Bouillon chicken base
5 sprigs fresh thyme
Fresh parsley (for garnish)

Steps:

  • Cut the tops and bottoms off of the garlic heads and lemons. Cut the lemons in half. Place the garlic and lemons in the bottom of the crockpot insert.
  • Combine the salt, pepper, and oregano in a small bowl. Season both sides of each chicken breast with the seasoned salt mixture.
  • Melt the butter in a large skillet over medium high heat. Place the chicken breasts in the skillet to brown, 5 minutes per side.
  • Transfer the browned chicken to the crockpot and place on top of the garlic and lemons.
  • In a pot, whisk the chicken broth, lemon juice, and bouillon together. Pour over the chicken in the crockpot.
  • Place thyme sprigs on top of the chicken.
  • Cover the crockpot and cook on high for 3 hours or low for 6 hours. Remove the thyme springs, garnish with fresh parsley, and serve hot.
