CHICKEN STEW WITH DUMPLINGS IN THE CROCK POT
Chicken Stew with Dumplings is a hearty slow cooker meal that is full of veggies, meaty chicken, and simple dumplings for a hearty meal!

Steps:
- Add carrots, celery, onion, garlic, salt, pepper, and chicken broth in a slow cooker.
- In a small bowl, whisk together cornstarch and chicken broth. Add mixture to the slow cooker.
- Lay chicken thighs on top of vegetables and broth.
- Add rosemary, thyme, and butter on top of the chicken.
- Cook on high for 3 hours or low for 6 hours.
- Make the dumplings while the stew is cooking. In a medium bowl, stir together the flour, baking powder, salt, rosemary, and thyme. Add milk and melted butter and stir until combined and a loose dough has formed.
- When the stew finished cooking, remove chicken thighs. Shred chicken and add it back to the slow cooker.
- Stir in the heavy cream, milk, and peas to the slow cooker.
- Drop rounded tablespoons of the dumpling dough onto the stew, placing it evenly over the top. Cook the dumplings for an additional hour on high.
- Serve hot.

CROCK POT CHICKEN STEW

- Place onions, celery, carrots, potatoes, garlic, bay leaf, 1 teaspoon salt, thyme, rosemary, paprika, and poultry seasoning in the bottom of a large slow cooker. Stir to combine.
- Season the chicken with salt and pepper, to taste. Place the chicken on top of vegetables.
- Pour chicken broth over everything, cover, and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
- When there are about 30 minutes left in the cooking time, remove the chicken from the slow cooker and chop or shred the meat. Return chicken meat to the slow cooker and discard bones. Discard bay leaf and herb stems (if using fresh herbs).
- In a small bowl, whisk together cornstarch and cold water until smooth. Stir the cornstarch slurry into the stew and cook on HIGH without the lid for 30 minutes (or until broth thickens a little bit). Taste and season with additional salt and pepper, if desired.
- Garnish with chopped fresh parsley, just before serving.

Steps:
- In a 4 or 5 quart slowcooker combine the carrots, potatoes, onions, garlic, bay leaves, sage and pepper and stir to combine.
- Place chicken on top of the vegetables.
- In a medium bowl, gradually whisk broth into soup and pour this mixture over the chicken.
- Cover; cook on low heat for 8-10 hours or on high heat for 4-5 hours.
- Turn slow cooker to high heat. Remove and discard bay leaves. Combine water and cornstarch and stir into stew until combined.
- In a medium bowl combine flour, cheese, cornmeal, baking powers and salt. In a small bowl combine egg, milk and melted butter. Add egg mixture to flour mixture. Stir with a fork until just moistened.
- Use 2 spoons to drop dough directly on top of stew. Cover and cook for 25 to 30 minutes or until a toothpick inserted into dumpling comes out clean. Do not life cover during cooking.

- Cut the pork into 1 inch cubes.
- In a skillet, brown the pork and the garlic in hot oil; drain well.
- Meanwhile, in a crock pot combine carrots, potatoes, water, tapioca, sugar, Worcestershire sauce, bay leaves, thyme, salt, nutmeg, and pepper.
- Stir in the browned meat and undrained tomatoes; cover and cook on low for 9-11 hours or on high for 4 to 5 hours.
- If the stew was cooked on low turn to high.
- Prepare the cornmeal dumplings.
- Remove the bay leaves and stir the stew.
- Drop the dumplings by the tablespoon onto the stew.

- For dumplings: in a medium mixing bowl, stir together flour, 1/2 cup cheese, cornmeal, baking powder, and pepper.

- Use in the pork stew for the dumplings.

- Sprinkle chicken with 1/4 teaspoon salt and 1/4 teaspoon pepper. Meanwhile, in a large skillet, heat oil over medium-high heat. Add chicken; cook and stir until no longer pink, 6-8 minutes. This is a wonderful recipe. Throw it in the crock pot in the morning and let it slowwww-cook all day. It fills the air with such a mouth-watering aroma. I added a package of chicken-flavored ramen noodles the last 5-10 min, which just added to the heartiness.

- Put chicken breasts with Italian dressing in a large zip bag to marinate over-night.
- Layer potato, celery, carrots and onion in crock-pot.
- Dredge marinated chicken breasts in seasoned flour and set them on top of vegetables. Add the garlic powder, Italian seasoning and salt-n-pepper to taste.
- Pour chicken broth over-all, and cook 8-10 hours on low.

- Place chicken, onion, carrot, celery, salt, pepper, cloves, bay leaf, and water in a large saucepan. Heat to boiling; cover and reduce heat to simmer. Cook about 1/2 hour or until chicken is tender.
- Remove chicken and vegetables from broth. Strain broth.
- Skim fat from broth; measure and, if necessary, add water to make 3 cups liquid.
- Mix cornstarch with 1 cup cooled broth.

- In a wide, deep pot, combine the chicken, stock and bay leaf- bring to a boil then reduce the heat to medium, cover the pot and simmer for 15 minutes.
- Skim the broth of any fat.
- Stir in the celery, carrots, onion and thyme.
- Contine to simmer over medium heat, partially covered, until the vegetables are tender (about 15 minutes).
- Stir in the kale.
- Season to taste with salt and pepper.
- Dumplings: Mix the dry ingredients together, then cut in the butter until the mixture is crumbly (a food processor makes this really easy).
- Add the milk and mix just until combined.
- Drop tablespoons of the dumpling batter in clumps over the top of the stew.
- Discard the bay leaf and thyme sprigs and serve.
