1 cup small-dice carrots
⅓ cup small-dice celery
½ cup small-dice yellow onion
2 cloves garlic, minced
½ teaspoon salt
¼ teaspoon pepper
¼ cup white wine or chicken broth
1 tablespoon cornstarch
2 cups chicken broth
5 chicken thighs, boneless and skinless
2 sprigs fresh rosemary
2 sprigs fresh thyme
3 tablespoons butter
¼ cup heavy cream
¼ cup whole milk
½ cup frozen peas
1 cup all-purpose flour
2 teaspoons baking powder
½ teaspoon salt
1 teaspoon fresh rosemary, minced
1 teaspoon thyme, minced
½ cup whole milk
2 tablespoons melted butter

Steps:

  • Add carrots, celery, onion, garlic, salt, pepper, and chicken broth in a slow cooker.
  • In a small bowl, whisk together cornstarch and chicken broth. Add mixture to the slow cooker.
  • Lay chicken thighs on top of vegetables and broth.
  • Add rosemary, thyme, and butter on top of the chicken.
  • Cook on high for 3 hours or low for 6 hours.
  • Make the dumplings while the stew is cooking. In a medium bowl, stir together the flour, baking powder, salt, rosemary, and thyme. Add milk and melted butter and stir until combined and a loose dough has formed.
  • When the stew finished cooking, remove chicken thighs. Shred chicken and add it back to the slow cooker.
  • Stir in the heavy cream, milk, and peas to the slow cooker.
  • Drop rounded tablespoons of the dumpling dough onto the stew, placing it evenly over the top. Cook the dumplings for an additional hour on high.
  • Serve hot.

2 medium sweet onions, chopped into bite-sized pieces
3 stalks celery, chopped
4 carrots, peeled and chopped
2 medium russet potatoes, peeled and chopped into small bite-sized pieces
2 small cloves garlic, minced or pressed ((about 1 teaspoon))
1 bay leaf
3 sprigs fresh thyme (or about 1 teaspoon dried thyme)
2 sprigs fresh rosemary (or about 1 teaspoon dried rosemary)
½ teaspoon paprika
½ teaspoon poultry seasoning
3-4 lbs. bone-in chicken breasts or thighs, skin removed
3 cups low-sodium chicken broth or chicken stock
1 tablespoon cornstarch + 1 tablespoon cold water
Kosher salt and ground black pepper, to taste
For garnish: chopped fresh parsley

Steps:

  • Place onions, celery, carrots, potatoes, garlic, bay leaf, 1 teaspoon salt, thyme, rosemary, paprika, and poultry seasoning in the bottom of a large slow cooker. Stir to combine.
  • Season the chicken with salt and pepper, to taste. Place the chicken on top of vegetables.
  • Pour chicken broth over everything, cover, and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  • When there are about 30 minutes left in the cooking time, remove the chicken from the slow cooker and chop or shred the meat. Return chicken meat to the slow cooker and discard bones. Discard bay leaf and herb stems (if using fresh herbs).
  • In a small bowl, whisk together cornstarch and cold water until smooth. Stir the cornstarch slurry into the stew and cook on HIGH without the lid for 30 minutes (or until broth thickens a little bit). Taste and season with additional salt and pepper, if desired.
  • Garnish with chopped fresh parsley, just before serving.

2 cups carrots, chopped
2 cups potatoes, chopped
1 large onion, diced roughly
4 garlic cloves, crushed
2 bay leaves
1 teaspoon sage
1/2 teaspoon black pepper
2 lbs chicken thighs, cut into 1 inch cubes
1 (14 ounce) can chicken broth
1 (10 3/4 ounce) can condensed cream of chicken soup
2 tablespoons water
1 tablespoon cornstarch
1/2 cup all-purpose flour
1/2 cup sharp cheddar cheese, shredded fine
1/3 cup cornmeal
1 teaspoon baking powder
1/4 teaspoon salt
1 large egg, beaten
2 tablespoons milk
2 tablespoons butter, melted

Steps:

  • In a 4 or 5 quart slowcooker combine the carrots, potatoes, onions, garlic, bay leaves, sage and pepper and stir to combine.
  • Place chicken on top of the vegetables.
  • In a medium bowl, gradually whisk broth into soup and pour this mixture over the chicken.
  • Cover; cook on low heat for 8-10 hours or on high heat for 4-5 hours.
  • Turn slow cooker to high heat. Remove and discard bay leaves. Combine water and cornstarch and stir into stew until combined.
  • In a medium bowl combine flour, cheese, cornmeal, baking powers and salt. In a small bowl combine egg, milk and melted butter. Add egg mixture to flour mixture. Stir with a fork until just moistened.
  • Use 2 spoons to drop dough directly on top of stew. Cover and cook for 25 to 30 minutes or until a toothpick inserted into dumpling comes out clean. Do not life cover during cooking.

Steps:

  • Cut the pork into 1 inch cubes.

3 1/2-4 lbs chicken, cut up and skin removed
4 cups chicken stock
1 bay leaf
2 stalks celery, thinly sliced
4 medium carrots, peeled and sliced about 1 inch thick
6 small white onions, peeled and halved
4 sprigs fresh thyme
1 bunch kale, stems trimmed,leaves coarsely chopped
salt and pepper
1 cup unbleached flour
1/2 cup cornmeal
2 teaspoons baking powder
1/2 teaspoon salt
2 tablespoons cold unsalted butter, cut into pieces
2/3 cup milk

Steps:

  • In a wide, deep pot, combine the chicken, stock and bay leaf- bring to a boil then reduce the heat to medium, cover the pot and simmer for 15 minutes.
  • Skim the broth of any fat.
  • Stir in the celery, carrots, onion and thyme.
  • Contine to simmer over medium heat, partially covered, until the vegetables are tender (about 15 minutes).
  • Stir in the kale.
  • Season to taste with salt and pepper.

  • Add the milk and mix just until combined.
