Full of flavorful, juicy, chicken, tender potatoes, and loads of fresh vegetables and herbs, this healthy Crock Pot Chicken Stew is a cozy, easy dinner recipe for chilly nights!

2 medium sweet onions, chopped into bite-sized pieces
3 stalks celery, chopped
4 carrots, peeled and chopped
2 medium russet potatoes, peeled and chopped into small bite-sized pieces
2 small cloves garlic, minced or pressed ((about 1 teaspoon))
1 bay leaf
3 sprigs fresh thyme (or about 1 teaspoon dried thyme)
2 sprigs fresh rosemary (or about 1 teaspoon dried rosemary)
½ teaspoon paprika
½ teaspoon poultry seasoning
3-4 lbs. bone-in chicken breasts or thighs, skin removed
3 cups low-sodium chicken broth or chicken stock
1 tablespoon cornstarch + 1 tablespoon cold water
Kosher salt and ground black pepper, to taste
For garnish: chopped fresh parsley

Steps:

  • Place onions, celery, carrots, potatoes, garlic, bay leaf, 1 teaspoon salt, thyme, rosemary, paprika, and poultry seasoning in the bottom of a large slow cooker. Stir to combine.
  • Season the chicken with salt and pepper, to taste. Place the chicken on top of vegetables.
  • Pour chicken broth over everything, cover, and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
  • When there are about 30 minutes left in the cooking time, remove the chicken from the slow cooker and chop or shred the meat. Return chicken meat to the slow cooker and discard bones. Discard bay leaf and herb stems (if using fresh herbs).
  • In a small bowl, whisk together cornstarch and cold water until smooth. Stir the cornstarch slurry into the stew and cook on HIGH without the lid for 30 minutes (or until broth thickens a little bit). Taste and season with additional salt and pepper, if desired.
  • Garnish with chopped fresh parsley, just before serving.

1.5 lbs boneless, skinless chicken thighs cut into 1 inch chunks
3 medium russet potatoes, rinsed and chopped into 1/2 inch chunks
2 cups sliced carrots
1 cup diced onions
1 1/2 cups frozen corn
21 oz condensed cream of chicken soup ( 2 x 10.5 oz cans)
0.87 oz chicken gravy mix
1 tsp salt
1 tsp pepper
1 tbsp onion powder
1 tbsp garlic powder
1/2 tsp ground sage
1 cup chicken broth
1 cup heavy cream
1/4 cup water
2 tbsp cornstarch

Steps:

  • Spray inside of Crock Pot well with cooking spray.
  • Dump the chicken thigh chunks into the bottom of the pot and spread them out evenly.
  • Dump the potato chunks on top of the chicken and spread them out.
  • Dump the sliced carrots, diced onions and frozen corn on top spreading them out as evenly as possible.
  • Dump the cream of chicken soup into a large mixing bowl.
  • Add the chicken gravy mix, salt, pepper, onion powder, garlic powder and ground sage to the bowl.
  • Stir well.
  • Add the chicken broth and heavy cream to the bowl.
  • Stir well again.
  • Pour the mixture over the ingredients in the Crock Pot.
  • Place the lid on the Crock Pot and set it to cook on LOW.
  • After 6 - 7 hours of cooking time, remove the lid and stir the contents well.
  • Combine the water and cornstarch and stir until the cornstarch is completely dissolved.
  • Add the cornstarch mixture to the stew and stir well.
  • Return the lid to the Crock Pot and leave the stew to simmer and thicken for at least 15 minutes.
  • Serve and enjoy!

We left this stew in the slow cooker for 8 hours on a low heat but if you want it ready bit sooner than that, you can turn the heat up to medium and it should be ready in about 4 hours.

1 onion, chopped
3 cloves garlic, minced
4 skinless, boneless chicken breasts

1 teaspoon ground black pepper

1 large onion, rough chopped into a 1-inch dice
3 large carrots, peeled and cut into 1-inch chunks

2 celery ribs, including leaves, thickly sliced

1 cup frozen corn

A savory autumn stew with apple, red potatoes, onion and seasoning. This is a very easy tasty chicken dish I concocted when I was trying to think of a dish like pot roast yet using chicken rather than beef. My husband hates mushrooms, so I tried condensed celery soup, and it works great. This dish is light yet very zesty and full of flavor. You can substitute using chicken thighs, but it will increase calories and fat. I think using biscuit gravy mix rather than onion gravy mix would work (the flavor would go well with chicken), adding richness, although I haven't tried it that way yet, but again, it would add more fat and calories to this dish. Serve with a side of rice or over noodles.
