1 1/2 lbs boneless chicken breasts, cut into strips
1 sweet vidalia onion, cut into thin wedges and separated
2 tablespoons lime juice
1 -2 garlic cloves, minced or 1 teaspoon garlic powder
3/4 teaspoon ground cumin
1 teaspoon seasoning salt
1/2 teaspoon chili powder
1 green bell pepper, thinly sliced (optional)
6 -8 flour tortillas, warmed
shredded cheddar cheese (optional)
salsa (optional)
sour cream (optional)
shredded lettuce (optional)

Steps:

  • Place chicken and onions (and peppers, if using) in crockpot. Sprinkle spices over all. Add the lime juice and stir well.
  • Cook on low for 4-6 hours. If you start with frozen chicken breast, you might need to cook for longer than 6 hours.
  • Serve in warm tortillas with your favorite fajita toppings.

1 red bell pepper, sliced
1 yellow bell pepper, sliced
1 green bell pepper, sliced
1 yellow onion, sliced
2 lb boneless, skinless chicken breast, cut in half
2 tablespoons taco seasoning
4 cloves garlic, diced
1 lime
10 oz canned diced tomatoes with green chiles, drained
flour tortilla
cheese, optional
sour cream, optional
guacamole, optional

Steps:

  • Add half of the sliced peppers and onions to your slow cooker.
  • Layer the chicken and coat all sides with taco seasoning.
  • Top with garlic, the juice from one lime, and tomatoes (be sure to drain).
  • Add the remaining peppers and onions, cover and any remaining lime juice.
  • Cook on high for 3-4 hours.
  • Remove chicken and cut/shred into slices (chicken left longer will tend to shred more - cook to your preference).
  • Return the sliced chicken to the slow cooker to marinate in the juices for about 10 more minutes (on LOW) until ready to serve.
  • NOTE: If you find that there is too much liquid, you can remove till there is a desired amount before serving.
  • Assemble Fajitas to your liking - we recommend topping with cheese, sour cream, and guacamole!

2 1/2 lbs boneless pork loin roast
1 medium onion, thinly sliced
2 cups barbecue sauce
3/4 cup salsa
3 tablespoons chili powder
1 tablespoon Mexican seasoning
9 flour tortillas

Steps:

  • Trim off excess fat from pork.
  • Place pork in slow cooker and place onions on top of roast.
  • Mix remaining ingredients together except tortillas; pour over pork.
  • cover and cook on low heat setting 8 to 10 hours or until pork is very tender.
  • Remove pork; place on large platter or cutting board and pull pork apart.
  • Place pork in serving bowl and pour sauce on top.

Edited to add: I just made these again last night using 1 lb of pork stir fry strips instead of chicken and it turned out great! Very flavorful. I stirred in an extra TBS of taco seasoning an hour before it was done based on the other reviews but I'm not sure it needed it. I would suggest maybe only adding the extra taco seasoning if your chicken breasts are large or you're using more than a pound of pork. These are really easy to make and taste Great rolled up in warm flour tortillas with all the usual fajita toppings.

3 chicken breasts (cut into about 3 or 4 strips each)
1 red bell pepper, julienned
1 onion, sliced
1 lime, juice of

1 (1 1/8 ounce) package mckormick fajita seasoning mix (or your favorite brand-found usually by the seasonings and dry gravy mixes in the grocery store)

Steps:

  • Mix chicken broth and fajitas seasoning until blended.

4 large boneless chicken breasts
1 large yellow onion
2 can(s) mild green chilies, diced, 4.5 oz each
1 green or red bell pepper
fajita seasoning
1 large can mild green enchilada sauce, 28 oz.
16 soft flour tortillas, taco sized
2 c shredded cheddar cheese
sour cream

Steps:

  • 1. Peel and chop onion.
  • 2. Remove core and seeds from bell pepper and chop it.
  • 3. Put onion and pepper in the bottom of Crock Pot.
  • 4. Add green chilies.

I discovered this one a few weeks ago. I started out trying to make chicken and rice and ended up with this. It is very tender and very good. An excellent make-ahead dish for summer. All the work is done before the crock pot is even warm. This is excellent for fajitas, pasta salads, chicken salad, soup, added to beans and rice, just laying on bread for chicken sandwiches, or just eating cold.

1 chicken (in any quantity, size, shape. usually 2-4 lb.)
cajun-louisiana seasoning blend (Any brand, i.e. Tony Chachere's)
to taste lemon pepper
1 dash salt
bell pepper
celery, Thinly-sliced
carrot, Thinly-sliced
green onion, Thinly-sliced
garlic, Thinly-sliced
water (to cover chicken)

Steps:

  • If using thigh portions or a cut up fryer, etc, remove all skin and as much fat as possible. I boil the skins with garlic for the dog.
  • There is no need to bone the chicken.
  • Put about 1/4 inch water in the slow cooker.
  • Rinse the chicken well, getting into the crevices, and sprinkle with the Cajun seasoning on both sides.
  • Go easy at first; this is NOT low-salt and it tends to be a little spicy.
  • I start immediately placing the chicken in the slow cooker.
  • I rinse one piece, season both sides, and layer it in the pot. When you are done seasoning all the chicken (I generally do 2-3 lbs in a batch; less is not worth the time), cover the pot and let the chicken stand for 30 minutes.
  • At the end of that time, cover the chicken fully with water (don't skimp) and set the cooker on "Low." Cooking time is up to you.
  • A minimum of 8-10 hours is what I recommend. I usually set the chicken cooking in an afternoon, and let it cook overnight. Often it will cook for 12-24 hours.
  • This is an excellent dish for those of us who never learned to properly debone a chicken ;) At the end of the cooking time, merely pull out the chicken pieces and separate the bones from the meat. It will literally fall apart. Save the broth for adding to mashed potatoes, gravy, rice or soup.
  • You will have a good deal of chicken here. Separate into smaller portions and freeze.
