HEARTY MIXED BEAN SOUP (GLUTEN FREE)



Hearty Mixed Bean Soup (Gluten Free) image

Healthy, delicious, and so substantial that you only need a salad for a complete meal, this wonderful soup will keep you well fed all winter long.

Number Of Ingredients 14

1 lb of assorted dried beans (any combination you have on hand)
2-1/2 quarts (10 cups) water or vegetable stock
1 meaty ham hock, regular or smoked, optional
1 bay leaf
2 tsp vegetable oil
2 medium onions, coarsely chopped (approximately 2 cups)
3 medium garlic cloves, finely minced
2 cups coarsely chopped celery
3 large carrots, cut into 1/2-inch cubes (approximately 2 cups)
2 (15 oz) cans chopped tomatoes
1/2 tsp ground chipotle pepper, optional
1 tbsp balsamic vinegar
Salt and pepper, to taste
Chopped parsley

Steps:

  • Rinse beans well, drain, and place in a large stockpot. Add water to cover, top pan with a lid, and allow to soak at room temperature for at least 6 hours or overnight. Alternatively, you can boil the beans on high for 2 minutes, remove the stock pot from the burner, and set it aside for one hour before proceeding with the next step of the recipe.
  • Strain the water and replace with fresh water to cover the beans. Add the ham hock and bay leaf to the stockpot, cover, and simmer until the beans are just barely tender, approximately 1-1/2 hours.
  • Meanwhile, in a large frying pan, heat the oil and sauté the onions and garlic on medium heat for 2 minutes or until softened. Add the celery and sauté for an additional 3 minutes. Add the tomatoes and carrots; sauté for an additional 10 minutes, stirring occasionally.
  • When the beans are tender, add the frying pan contents, chipotle, and vinegar to the stockpot and simmer for an additional 30 to 45 minutes, until vegetables and beans are tender, adding water as needed, to achieve the soup consistency you prefer. Add salt and pepper to taste. Remove the ham hock, scoop soup into serving bowls, and sprinkle with chopped parsley. Serve hot.

1 cup chopped onion
1-1/2 cups dried great northern beans
5 cups water
1-1/2 pounds smoked ham hocks

Steps:

  • In a 5-qt. slow cooker, place parsnips, carrots and onion. Top with beans. Add water, ham, garlic, salt, pepper and hot pepper sauce. 2 tablespoons olive oil
1 onion, diced
2 stalks celery, chopped
1 carrot, chopped
1 red bell pepper, diced
4 cloves garlic, minced
1 jalapeño pepper, seeded, diced
1 teaspoon salt
1 teaspoon pepper
2 tablespoons cumin
60 oz black beans, 4 cans, drained, rinsed
4 cups vegetable stock
1 bay leaf
avocado, chopped, to serve
queso fresco, crumbled, to serve
fresh cilantro, chopped, to serve
tortilla chip, crumbled, to serve

Steps:

  • Heat olive oil in a large stock-pot or dutch oven over medium-high heat until the oil begins to shimmer.
  • Add onions, celery, carrot, and bell pepper. Cook for 4-5 minutes, stirring occasionally, until vegetables begin to soften.
  • Add garlic, salt, and pepper, and continue to cook for an additional 10 minutes until vegetables are soft and the onions are translucent.
  • Add cumin, black beans, vegetable stock, and the bay leaf. Bring to a boil then reduce to a simmer.
  • Cover the pot and cook over low heat for 30 minutes until the beans are very tender.
  • Remove the bay leaf. Transfer about 4 cups (900 g) of the soup to a blender and puree until smooth, being careful not to splatter hot soup all over yourself and kitchen.
  • Pour blended soup back into the pot and mix to incorporate.
  • Keep over low heat until ready to serve. Garnish with fresh avocado, queso fresco, chopped cilantro, and tortilla chips.
  • Enjoy!

1/4 cup olive oil
1 medium onion, chopped
4 garlic cloves, minced
2 carrots, chopped
2 stalks celery, chopped
1/4 teaspoon dried thyme
1 bay leaf
3 (14 ounce) cans chicken broth
1 (14 ounce) can diced tomatoes, undrained
2 (15 ounce) cans white beans, any variety
1 (10 ounce) packaged frozen chopped spinach, thawed
3/4 cup macaroni, uncooked
salt and pepper
grated parmesan cheese, and or pecorino romano cheese, to serve

Steps:

  • Heat the oil in a 4 quart soup pot over medium heat.
  • Add the onion, garlic, carrots, celery and thyme and cook until the vegetables are tender, about 10 minutes.
  • Add the chicken broth, tomatoes and bay leaf.
  • Drain the beans and roughly mash 1/2 a can of beans. Add the beans and mashed beans to the pot.
  • Squeeze the water from the thawed spinach and add to the pot.
  • Season with salt and pepper and simmer for at least 10 minutes and up to 30 minutes.
  • Add the macaroni and cook until tender according to package directions. (About 10 minutes.).
  • Serve sprinkled with grated parmesan and/or pecorino romano.

1 pound lean ground beef (90% lean)
1 large onion, chopped
1 small green pepper, chopped
1 can (28 ounces) petite diced tomatoes, undrained
1 can (16 ounces) chili beans, undrained
1 can (15 ounces) cannellini beans, rinsed and drained
1 can (15 ounces) black beans, rinsed and drained
1 package (13-1/2 ounces) beef smoked sausage, sliced
2 serrano peppers, seeded and chopped
2 teaspoons chili powder
1 teaspoon salt
1 carton (32 ounces) beef broth
2 cups water

Steps:

  • In a Dutch oven, cook beef, onion and green pepper over medium heat 8-10 minutes or until meat is no longer pink, breaking up beef into crumbles. Drain., Stir in remaining ingredients; bring to a boil. Reduce heat; simmer, uncovered, 15-20 minutes or until flavors are blended. Freeze option: Freeze cooled soup in freezer containers. To use, partially thaw in refrigerator overnight. Heat through in a saucepan, stirring occasionally.

3 cups (1-1/2 pounds) dried navy beans
1 can (14-1/2 ounces) diced tomatoes, undrained
1 large onion, chopped
1 meaty ham hock or 1 cup diced cooked ham
2 cups chicken broth
2-1/2 cups water
Salt and pepper to taste
Minced fresh parsley, optional

Steps:

  • Rinse and sort beans; soak according to package directions., Drain and rinse beans, discarding liquid. Place in a Dutch oven. Add the tomatoes with juice, onion, ham hock, broth, water, salt and pepper. Bring to a boil. Reduce heat; cover and simmer until beans are tender, about 1-1/2 hours., Add more water if necessary. Remove ham hock and let it stand until cool enough to handle. Remove meat from bone; discard bone. Cut meat into bite-sized pieces; set aside. 6 cups reduced-sodium chicken broth
