HEARTY MIXED BEAN SOUP (GLUTEN FREE)
Healthy, delicious, and so substantial that you only need a salad for a complete meal, this wonderful soup will keep you well fed all winter long.

Steps:
- Rinse beans well, drain, and place in a large stockpot. Add water to cover, top pan with a lid, and allow to soak at room temperature for at least 6 hours or overnight. Alternatively, you can boil the beans on high for 2 minutes, remove the stock pot from the burner, and set it aside for one hour before proceeding with the next step of the recipe.
- Strain the water and replace with fresh water to cover the beans. Add the ham hock and bay leaf to the stockpot, cover, and simmer until the beans are just barely tender, approximately 1-1/2 hours.
- Meanwhile, in a large frying pan, heat the oil and sauté the onions and garlic on medium heat for 2 minutes or until softened. Add the celery and sauté for an additional 3 minutes. Add the tomatoes and carrots; sauté for an additional 10 minutes, stirring occasionally.
- When the beans are tender, add the frying pan contents, chipotle, and vinegar to the stockpot and simmer for an additional 30 to 45 minutes, until vegetables and beans are tender, adding water as needed, to achieve the soup consistency you prefer. Add salt and pepper to taste. Remove the ham hock, scoop soup into serving bowls, and sprinkle with chopped parsley. Serve hot.

- In a 5-qt. slow cooker, place parsnips, carrots and onion. Top with beans. Add water, ham, garlic, salt, pepper and hot pepper sauce. Cover and cook on high for 6-7 hours or until beans are tender. , Remove meat and bones from slow cooker. When cool enough to handle, cut meat into bite-sized pieces and return to slow cooker; heat through.

Steps:
- Heat olive oil in a large stock-pot or dutch oven over medium-high heat until the oil begins to shimmer.
- Add onions, celery, carrot, and bell pepper. Cook for 4-5 minutes, stirring occasionally, until vegetables begin to soften.
- Add garlic, salt, and pepper, and continue to cook for an additional 10 minutes until vegetables are soft and the onions are translucent.
- Add cumin, black beans, vegetable stock, and the bay leaf. Bring to a boil then reduce to a simmer.
- Cover the pot and cook over low heat for 30 minutes until the beans are very tender.
- Remove the bay leaf. Transfer about 4 cups (900 g) of the soup to a blender and puree until smooth, being careful not to splatter hot soup all over yourself and kitchen.
- Pour blended soup back into the pot and mix to incorporate.
- Keep over low heat until ready to serve. Garnish with fresh avocado, queso fresco, chopped cilantro, and tortilla chips.
- Enjoy!

HEARTY TUSCAN WHITE BEAN SOUP
This is a really easy Tuscan style white bean and spinach soup. I prefer it meatless, but mini meatballs can be added.

Steps:
- Heat the oil in a 4 quart soup pot over medium heat.
- Add the onion, garlic, carrots, celery and thyme and cook until the vegetables are tender, about 10 minutes.
- Add the chicken broth, tomatoes and bay leaf.
- Drain the beans and roughly mash 1/2 a can of beans. Add the beans and mashed beans to the pot.
- Squeeze the water from the thawed spinach and add to the pot.
- Season with salt and pepper and simmer for at least 10 minutes and up to 30 minutes.
- Add the macaroni and cook until tender according to package directions. (About 10 minutes.).
- Serve sprinkled with grated parmesan and/or pecorino romano.

- Rinse and sort beans; soak according to package directions., Drain and rinse beans, discarding liquid. Place in a Dutch oven. HEARTY BEAN SOUP
Classic bean soup recipe. Can be made Italian by adding 3 tablespoons pesto and 1 cup cooked pasta to the finished soup. Can be made chunky by adding diced carrot, potato and shredded cabbage to the veggie list.

- Pour water over navy beans in a large container to cover by several inches; soak 8 hours to overnight.
- Combine soaked beans, chicken broth, water, onion, celery, garlic, and bay leaf in a large pot; bring to a boil. Reduce heat to low and simmer, partially covered, until beans are almost tender, about 1 hour.
- Stir tomato paste and sea salt into bean mixture; simmer soup another 45 minutes. Remove and discard bay leaf.

- Note: Be sure to sort through all beans and discard unusable ones.
- DO NOT USE INSTANT RICE.
- **NOTE: For jar gifts: layer beans in the jar then put the plastic bags with the rice and spices on top of them.
- OR.
- **In a small plastic bag, mix red beans, lentils, split peas and navy beans, In another small plastic bag, mix bouillon granules, minced onion, basil leaves, pepper, cumin, garlic powder, ginger and bay leaf.
- In a third small plastic bag, place rice.
- Attach this to the Jar:.
- Hearty Winter Soup Preparation.
- To prepare, wash beans and place in a 3-quart saucepan with 6 cups water.
- Bring to a boil for 5 minutes.
- Remove from heat.
- Let stand 30 minutes.
- Drain beans and return to pan.
- Ham can be added for those meat eaters.
- Add package of seasonings with 8 cups water.
- Bring to a boil.
- Cover, reduce heat and simmer 45 minutes.
- Add rice and continue simmering until beans and rice are tender: brown rice, 45 minutes; parboiled rice, 25 minutes; long-grain rice, 20 minutes.
