SLOW COOKER CHICKEN BONE BROTH
This slow-cooked bone broth uses roasted bones and unpeeled veggies, which produces a much deeper flavor and darker color. For a lighter-colored broth, omit the roasting step and use peeled veggies. The longer this simmers, the richer it gets, however don't go longer than 48 hours as the flavor can turn bitter. Make sure about half your bones are collagen-rich, such as chicken backs, feet, or wings. Season with additional salt, if desired, upon serving.

SIMPLE CROCK POT CHICKEN
I made this for my husband when he had to eat his food soft and not too spicy. He loved this! This is a good starting point recipe, so feel free to add vegetables if you like. You may also use any chicken part for this recipe.

Steps:
- Place chicken breasts(you may remove bones if you like) in crock pot. Pour in chicken broth. If it doesn't cover the chicken, you may add a little bit of water. Cook on low 8 hours, or high 4-5 hours. Check for tenderness. When it fall off the bone when pulled with a fork, remove from crock pot. Remove bones.
- In a saucepan, pour 2 cups of broth from crock pot. Add 2 packages gravy mix and stir until it thickens, about 2 minutes. If you like you can make gravy from scratch, using the crock pot broth.
- Serve gravy over chicken. I always serve this with mashed potatoes, but noodles would be good too. You may season to taste at this point, but the gravy mix and the chicken broth are pretty salty, so taste first. Enjoy!
- Note:.
- I served this to my husband, only using 1 cup broth and 1 gravy package. I refrigerated the rest of the chicken and broth, making it again the next day with the other gravy package.

KITTENCAL'S BEST CHICKEN STOCK/BROTH (CROCK POT OPTION)
Plan ahead this method takes 2 days to create the best most richest flavorful stock, far better and cheaper than any canned broth, once you try this you will never purchase cans of broth again! --- this can be done either on a stove top or in a crock pot but start the stock firstly on the stove top then transfer to a crock pot --- the same method may be used for turkey stock use the carcass and leftover legs, thigh and wing bones from your roasted turkey in place of the chicken pieces, also save your carcass and bones from roasted chickens and freeze them to throw in the pot, roasted bones will produce a richer golden colored stock but uncooked chicken works just as well --- I freeze the cooled cooked broth in 2 or 4-cup plastic freezer containers and store in the freezer until ready to use, you may do a quick defrost in the microwave when needed --- yield depends on size of pot and how much water is used, use this broth to make the best tasting chicken soup, don't remove the skins from onions they add color and taste to the stock adding in another onion won't hurt :)

- Fill with cold water to cover ingredients, and up to almost three quarters of the stock pot.
- Place on stove element; cover and bring to a full boil.
- Reduce heat; simmer and remove any fat or scum that is floating on top of the water.
- At this point you can transfer to a crockpot.
- Simmer covered with a lid on low heat for about 4-5 hours for stove top (or 9-12 hours on LOW setting for a crockpot).
- Adjust salt to suit taste.
- After the 5-6 hours of simmering time turn off heat and allow the pot to sit until room temperature with all ingredients still in the pot, DO NOT REMOVE BONES OR VEGGIES.
- Transfer the pot to the fridge (with all ingredients still in it) and chill overnight.
- THE FOLLOWING DAY: Remove the pot from the fridge (mixture will be a jelly consistency).
- Remove any fat that has gathered on top.
- Heat again until just to a liquid (this will make it easier to strain).
- Remove all chicken pieces and strain in a large strainer, if desired you may strain again in a cheesecloth, but it is not necessary.
- Let cool completely and freeze in containers.

- Place chicken or frame, giblets, celery, bay leaves, and onion in large crock pot. Fill with filtered water, leaving 1 inch at the top. Add in vinegar. Let sit at room temperature for 1 hour. (This helps the ACV pull minerals from the bones).
- Allow the stock to cook for 24 hours on low heat. (Check at 12 hours to make sure water level is still good. Add more water if needed.) If using a whole chicken, you can remove the meat at this point and store for uses in soups, tacos, etc. (The meat is so tender. I just use some tongs and pull it right off the bones).
- Remove no more than half of the liquid. Strain. Use right away or store. (Chicken stock freezes really well!)
- Add more filtered water. Repeat step 3: adding water (as needed) every 12 hours, and taking out stock ever 24. You can repeat this for 3 - 5 days. You want a nice rich caramel color. Good broth will become gelatin-like once cooled.
