Steps:
- In a large skillet, brown chicken in oil. With a slotted spoon, transfer chicken to a 3- or 4-qt. slow cooker. In the same skillet, saute onion and garlic in drippings until tender; add to chicken., Place chipotle peppers and 1/4 cup broth in a blender or food processor; cover and process until blended. Add to chicken mixture. Stir in the hominy, chilies, seasonings and remaining broth. Cover and cook on low for 4-5 hours or until chicken is tender.

CROCK POT CHICKEN STEW
Crock Pot Chicken Stew is a hearty slow cooker dinner recipe loaded with chicken thigh chunks, russet potatoes, carrots, onions and corn all cooked in a creamy chicken soup mixture.

Steps:
- Spray inside of Crock Pot well with cooking spray.
- Dump the chicken thigh chunks into the bottom of the pot and spread them out evenly.
- Dump the potato chunks on top of the chicken and spread them out.
- Dump the sliced carrots, diced onions and frozen corn on top spreading them out as evenly as possible.
- Dump the cream of chicken soup into a large mixing bowl.
- Add the chicken gravy mix, salt, pepper, onion powder, garlic powder and ground sage to the bowl.
- Stir well.
- Add the chicken broth and heavy cream to the bowl.
- Stir well again.
- Pour the mixture over the ingredients in the Crock Pot.
- Place the lid on the Crock Pot and set it to cook on LOW.
- After 6 - 7 hours of cooking time, remove the lid and stir the contents well.
- Combine the water and cornstarch and stir until the cornstarch is completely dissolved.
- Add the cornstarch mixture to the stew and stir well.
- Return the lid to the Crock Pot and leave the stew to simmer and thicken for at least 15 minutes.
- Serve and enjoy!

- Place onions, celery, carrots, potatoes, garlic, bay leaf, 1 teaspoon salt, thyme, rosemary, paprika, and poultry seasoning in the bottom of a large slow cooker. Stir to combine.
- Season the chicken with salt and pepper, to taste. Place the chicken on top of vegetables.
- Pour chicken broth over everything, cover, and cook on LOW for 6-8 hours or on HIGH for 3-4 hours.
- When there are about 30 minutes left in the cooking time, remove the chicken from the slow cooker and chop or shred the meat. Return chicken meat to the slow cooker and discard bones. Discard bay leaf and herb stems (if using fresh herbs).
- In a small bowl, whisk together cornstarch and cold water until smooth. Stir the cornstarch slurry into the stew and cook on HIGH without the lid for 30 minutes (or until broth thickens a little bit). Taste and season with additional salt and pepper, if desired.
- Garnish with chopped fresh parsley, just before serving.

SLOW-COOKER CHICKEN-RICE STEW

- Toss the chicken in a 6- to 8-quart slow cooker with the sesame oil, grated ginger and a pinch each of salt and pepper. Stir in the rice to coat. Stir in the chicken broth, ginger slices and 4 cups water. Cover and cook on low until the chicken is very tender and the rice is thick, 7 to 8 hours. Stir gently a few times, then let stand, uncovered, 10 minutes. Discard the ginger slices.
- Meanwhile, heat the vegetable oil in a large skillet over medium heat. Add the garlic and cook, stirring constantly, until golden and slightly crisp, 5 to 6 minutes. Remove with a slotted spoon to a small dish. Add the bok choy stems to the skillet, season with salt and cook, stirring, until crisp-tender, about 3 minutes. Add the bok choy leaves and cook until wilted, about 2 minutes.
- Add the bok choy mixture and fish sauce to the slow cooker and stir gently, breaking the chicken apart slightly; season with salt and pepper. Divide among bowls. Top with the fried garlic, scallions, soy sauce and hot sauce. Serve with lime wedges.

- Combine first 9 ingredients (through stock) in medium crock pot (I used a 3 1/2 quart - don't use anything bigger unless you plan to double the recipe).
- Lay chicken on top of this mixture, and top with hominy and salsa.
