CHEESY HASH BROWNS POTATOES (CROCK POT)
Since it's so hot, I've been searching for crock pot recipes for things I normally cook in the oven. This recipe is from the Slow Cooker Fix It and Forget It Cookbook and is credited to Clarice Williams of Fairbank, IA.

Steps:
- Combine soup, buttermilk, butter, seasoned salt, garlic powder, and pepper in slow cooker. Mix well.
- Stir in hash browns. Sprinkle with parmesan cheese and paprika.
- Cover. Cook on Low 4 to 4 1/2 hours, or until potatoes are tender.

SLOW-COOKER CHEESY HASH BROWN CASSEROLE
When you're cooking for a crowd, break out the slow cooker for an easy, delicious side dish. These crockpot cheesy potatoes are the stuff of legend at potlucks everywhere. Don't count on having any leftovers the next day, but if you do, rewarm them in the microwave and serve them with scrambled eggs for a hearty next-day breakfast.

Steps:
- Spray 5-quart slow cooker with cooking spray.
- In 8-inch skillet, melt butter over medium heat. Cook onion and garlic in butter, stirring frequently, 2 to 3 minutes or until translucent and soft.
- In large bowl, stir onion mixture and remaining ingredients until well combined.
- Place in slow cooker. Cover and cook on Low heat setting 3 hours; stir. Cover and cook on Low heat setting 2 to 3 hours longer or until center of casserole reaches at least 165°F and edges are bubbly. Stir.

Fluffier than the shredded cheesy potatoes. For added zing, I like to use the "O'Brien" variety of frozen hash browns that comes with bits of red pepper and onion in it. For super-fast prep, use dried minced onion and the prepackaged shredded cheese.

CROCK POT CHEESY HASH BROWNS PATTIES
Very easy and a quickly cooked side dish made in the crock pot: dump and go. Serve these at breakfast or as a side dish at dinner; or double the recipe and eat for dinner and serve as leftovers with tomorrow mornings breakfast. This recipe worked out great for me because I had to use up some hash brown patties; the standard ingredient usually called for in this dish is the hash browned potatoes. This recipe is courtesy of "Fix It and Forget It" crock pot cookbook.

- Spray the slow cooker with non-stick spray, set aside. In a extra large bowl, stir together the sour cream, 3 cups of the cheese, salt, pepper and onion powder. Add in the frozen hash brown and stir until there is sour cream mixture coating all the hash browns.
- Cover and cook on HIGH for 3 hours and 20 minutes. Add remaining cheese (1 cup) and put the lid back on until the cheese melts.
