- Cut roast in half. In a large nonstick skillet coated with cooking spray, brown meat on all sides over medium-high heat. , Place onion in a 5-qt. slow cooker. Top with meat. Combine the broth, gravy mix, garlic and pepper; pour over meat. Cover and cook on low for 6-7 hours or until meat is tender. , Remove meat to a cutting board. Let stand for 10 minutes. Thinly slice meat and return to the slow cooker; serve with cooking juices and onion.

CROCK POT (SLOW COOKER) FRENCH DIP ROAST BEEF SANDWICHES
I have another tried and true French Dip recipe and also use another great one here on 'zaar, but when I went to make it the other day, I was lacking all of the ingredients to make either...so the following was born. Turns out everyone liked it better than either of my previous ones, so I figured I better post it for posterity!

Steps:
- Place roast in 4.5 - 6 quart slow cooker.
- Sprinkle with onion soup mix and then pour onion soup and beer over it.
- Drop bouillon cubes in different spots into the liquid and sprinkle pepper and salt to taste over all.
- Cook on high for 4-5 hours. (I guess you could also cook on low for 8 hours or so, but I haven't tried it!).
- Remove meat and slice or shred; return to slow cooker and cover.
- Turn to low and let meat soak up the juices until ready to serve.
- Our favorite way to serve: open rolls and place a slice of provolone on one side of each; place under broiler until cheese is almost melted. Spoon beef on top with slotted spoon and serve sandwich with a side cup of au jus.
CROCK POT BEEF SANDWICHES AU JUS
This family staple is adapted from the October 2002 issue of "Betty Crocker" magazine on Slow Cooker Meals. It creates simple and delicious meat that you can use for sandwiches, quesadillas, salads, or whatever you like! The leftovers also freeze. There is no taste of beer in the meat; just hearty, good flavor.

- Trim any huge amounts of fat from the beef. Place beef in slow cooker.
- Place dry onion soup mix, sugar, oregano, broth, beer and garlic in crock pot.
- Cover and cook on LOW setting for 8 to 10 hours, or HIGH for 5 hours.
- Slice or shred beef, and place meat on sliced sandwich rolls.
- Serve with the meat juices for dipping the sandwiches.

- Place beef roast in 3 1/2 to 4-quart slow cooker. In medium bowl, combine all remaining ingredients except buns; mix well. Pour over roast.
- Cover; cook on low setting for 8 to 10 hours.
- Remove beef from slow cooker; place on cutting board or large plate. Slice beef with knife or shred with 2 forks; place in buns. If desired, skim fat from juices in slow cooker. Serve sandwiches with individual portions of juices for dipping.

HOMEMADE ROAST BEEF SANDWICH AU JUS

- For the au jus: Heat the oil over medium heat in a medium saucepan. Add the peppercorns, salt, thyme, garlic, rosemary and shallots. Cook the shallots, stirring occasionally, until they become translucent, 6 to 8 minutes. Add the sherry and simmer, a few minutes. Add the stock and simmer, 20 to 25 minutes. Remove the saucepan from the heat and strain the liquid. Keep warm.
- For the pickled radishes: Simmer 1/2 cup water, the vinegar, sugar, coriander seeds, salt, star anise, bay leaf and garlic. After 10 minutes of simmering, pour the mixture over the radishes in a heat-proof container and cool.
- For the sandwich build: Place the bottom halves of the rolls on a work surface. Place the sliced Homemade Roast Beef on the bottom. Top with 1 slice gruyere each, some pickled radishes and watercress. Cover with the tops of the rolls. Cut each sandwich in half, dunk into the au jus and realize sometimes leftovers are just better.
- Preheat the oven to 400 degrees F. Mix the rosemary, thyme, salt, pepper and garlic in a small bowl. Rub the mixture all over the roast, cover with plastic wrap and refrigerate, about 20 minutes.
- Heat the oil in a large heavy skillet over high heat. Wipe off the excess garlic and herbs and add the roast to the pan. Sear the roast on all sides, 2 to 3 minutes per side. Transfer the roast to a roasting pan with a rack. Roast until an instant-read thermometer inserted into the center registers 125 degrees F, about 50 minutes. Transfer the roast to a cutting board and let rest, about 10 minutes. Thinly slice the roast and serve.

- In a medium pot simmer roast beef slices, consomme, and soup until fully cooked.
- Meanwhile, slice hoagie rolls in half lengthwise, sprinkle with garlic and toast until golden brown.
- Once the meat has heated through and cooked down, place on half of the hoagie rolls and top with slices of cheese as needed to cover meat.
- Broil until cheese melted and bubbly.
- Spread mayo on other half of hoagie rolls and top, cutting sandwich in half diagonally.
- Cut on a diagonal and serve with au jus on the side.

EASY CROCK POT FRENCH DIP WITH AU JUS
Easy, delicious French Dip Sandwiches with almost no work on your part. My husband can make a meal of these, and they disappear quickly. - Rinse the roast and sprinkle it with salt and pepper to taste. I often skip the salt, since the broth and soup mix are salty already.
- Put the roast into your crock pot, and pour the broth and coffee (if using) over the roast.
- Add the soup mix and garlic (if using)into the liquid and stir a bit. Don't worry about getting the soup mix to dissolve. The crock pot does all the work!
- Cook on Low for 8 to 10 hours, slice
- the meat, and serve hot on hoagie rolls with your favorite cheese (I prefer provolone or swiss). These are great with sauteed onions (can add bell pepper too). The broth makes delicious au jus for dipping your sandwiches.
