A tender, well flavored change up from your usual pot roast. My Mother always made it for my birthday dinner, as it was my favorite! Serve the roast, and white or brown rice.

1 (4 pound) boneless beef chuck roast
1 tablespoon garlic salt
1 tablespoon ground black pepper
1 teaspoon dry mustard powder
1 tablespoon vegetable oil
3 cups water
¾ cup soy sauce
3 tablespoons white vinegar
¼ cup honey
1 teaspoon ground ginger
1 teaspoon celery seed
2 tablespoons cornstarch
¼ cup cold water

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Coat the chuck roast with garlic salt, pepper and mustard powder. Heat the oil in a large oven-proof skillet or Dutch oven over medium-high heat. Add the roast and brown on both sides, about 5 minutes per side.
  • In a medium bowl, stir together 3 cups of water, soy sauce, vinegar, honey, ginger and celery seed. Pour over the roast and then cover the roast tightly with a lid or aluminum foil.
  • Bake in the preheated oven until the roast is very tender, 2 1/2 to 3 hours.
  • When the roast is done, remove it from the pan to a serving plate. Set the pan of drippings over medium-high heat and bring to a boil. Stir together cornstarch and 1/4 cup of cold water. Pour into the boiling liquid and stir until thickened, about 1 minute. Serve the roast with the gravy poured over.

3 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon pepper
1 boneless pork loin roast (3 pounds)

1/4 cup hot water
1/4 cup honey
1/4 cup reduced-sodium soy sauce
2 tablespoons rice vinegar
1 teaspoon ground ginger

Steps:

  • Place onions in a 5-qt. slow cooker. Mix garlic, salt and pepper. Cut roast in half; rub with garlic mixture. In a large nonstick skillet coated with cooking spray, brown pork in oil on all sides. Transfer to slow cooker; add bay leaves., In a small bowl, mix hot water and honey; stir in soy sauce, vinegar and spices. Pour over pork. Cook, covered, on low for 4-5 hours or until meat is tender., Remove pork from slow cooker; keep warm. Discard bay leaves. Mix cornstarch and cold water until smooth; gradually stir into slow cooker. 5 lb picnic ham (pork shoulder) or larger
3-4 Tbsp coconut oil
BRAISING STOCK:
1 white onion, sliced
1/2 green pepper, sliced
1/2 Tbsp ground ginger
1 tsp red pepper flakes, soaked
1 Tbsp garlic powder
1 tsp peanut butter, creamy
1/2 tsp nutmeg
ADDITIONAL INGREDIENTS:
1/4 c honey
1 c soy sauce
splash of rice wine (or white wine)
2 c water

Steps:

  • 1. Put coconut oil in a container and microwave for a few seconds to melt. (Coconut oil melts at a very low temperature so it will only take 5 to 10 seconds.)
  • 2. Massage pork with some of the coconut oil.
  • 3. In a frying pan, add the rest of the coconut oil. Fry meat for 4 minutes on each side. Remove meat and place into the slow cooker, fat side up.
  • 4. In the same frying pan, add the braising stock ingredients in with the remaining oil. Simmer for a few minutes.
  • 5. Then add the remainder of ingredients and warm for 1 or 2 minutes.
  • 6. Pour over the meat in the slow cooker. Cover and cook on high for 5-6 hours (or 8-10 hours on low). Baste 2 or 3 times during cooking.
  • 7. Sans Crock Pot, you could also cook this in a roasting pan in a 325-350 oven for the same amount of time.

Steps:

  • In a small bowl, combine the brown sugar, salt, powdered ginger, cinnamon, garlic, cloves, black pepper, and crushed red pepper. Mix until combined
  • Place the roast in your slow cooker and rub the seasonings on both sides of the pork roast.
  • Add ½ cup water in the slow cooker, (don't pour it directly over the roast because you don't want to wash away the rub).
  • Cook on low for 6-8 hours, then preheat your broiler.
  • Just before the pork is done, combine 1/2 cup brown sugar, cornstarch, rice vinegar, cold water, and soy sauce in a small saucepan. Cook on medium heat and stir until mixture thickens, about 4 minutes. Remove from heat and stir in minced ginger.
  • Line a cookie sheet with aluminum foil and spray with nonstick spray.
  • Remove the pork from the crock pot and place on the cookie sheet. Brush a generous amount of the glaze on the pork.
  • Broil the pork for 1 or 2 minutes, until bubbly and caramelized. Watch it closely. Repeat 2 or 3 more times. Serve the remaining glaze on the side.

Non-stick oil spray (I used Smart Balance spray)
1 cup low-sodium fat-free chicken broth
1/2 cup reduced-sodium soy sauce (for gf use gf tamari)
1/3 cup balsamic vinegar
3 tbsp agave (or sugar)
1 tsp hot sesame oil
1/2 tsp Chinese five spice (I used McCormick)
3 cloves crushed garlic
1 tbsp fresh grated ginger root
8 oz sliced mushrooms (I used baby bella)
1/4 cup chopped scallions

Steps:

  • Season pork on all side with salt and fresh cracked pepper.
  • Heat a skillet on medium-high heat, spray with a little oil and brown the pork on all sides for about 7 - 8 minutes.
  • In the crock pot, combine the broth, soy sauce (or Tamari), balsamic, agave, sesame oil, Chinese five spice, garlic and ginger; add the pork and set the slow cooker to 8 hours on low.
  • Thirty minutes before the timer goes off, remove the pork and set aside to rest a few minutes; add the mushrooms to the crock pot, cover and cook on low for 30 minutes.
  • Meanwhile, shred the pork using two forks.
  • When the mushrooms are tender, remove about 1 cup of the broth and reserve if needed.
  • Add the shredded pork to the crock pot and mix well.
  • If adding baby spinach, add at the end and cover a few minutes until it wilts.

1 (10 ounce) jar hoisin sauce
3 garlic cloves, peeled & smashed
2 tablespoons grated fresh ginger
1 tablespoon chili paste
1 tablespoon rice wine (or rice wine vinegar)
2 tablespoons soy sauce
2 teaspoons dark sesame oil
4 teaspoons cornstarch
3 scallions, white & light green part only (optional)
1/4 cup chopped cilantro (optional)

Steps:

  • Spray crock pot with cooking spray and add the pork roast.
  • In a small bowl, combine the hoisin sauce, garlic, ginger, chili paste, rice wine, soy sauce and sesame oil.
  • Mix in the cornstarch.

Steps:

  • Rub the pork all over with the five-spice powder and salt. Add the chicken broth, soy sauce, brown sugar, sesame oil, and red pepper to the slow cooker. Stir to dissolve the sugar. 6 medium russet potatoes, quartered
1 medium white onion, chopped
6 medium carrots, diced into 4 pieces each
4 cloves garlic, roughly chopped
3 lbs. boneless pork shoulder roast
2 tablespoons olive oil
6 sprigs rosemary, bundled
6 sprigs thyme, bundled
2 tablespoons balsamic vinegar
1/2 cup red wine
1/2 cup chicken broth
1/4 cup brown sugar
1 tablespoon garlic powder
2 teaspoons onion powder
2 teaspoons coarse salt
1/4 teaspoon cinnamon*
2 teaspoons dried thyme
1 teaspoon pepper
1.5 tablespoons cornstarch

Steps:

  • First, prepare your pork dry rub by mixing together all of the spices in a small bowl. Set aside.
  • Then, prepare veggies. Quarter 6 russet potatoes, chop a white onion, dice 6 medium carrots into 4 pieces each, and roughly chop 4 cloves of garlic.
  • Place the veggie medley on the bottom of your crockpot.
  • Next, rub your pork shoulder roast with the dry rub. Make sure that every nook and cranny is covered in rub.
  • Heat around 2 tablespoons of olive oil in a large cast iron skillet over medium/high heat. When olive oil is fragrant, sear pork shoulder for 2 minutes on each side.
  • Then, place the pork roast in crock pot on top of the veggies. Make sure you scrape the skillet to get all of the delicious bits of rub off of it and add that to the crockpot, too.
  • Create herb bundle, by using bakers twine to tie together thyme and rosemary and set that on top of the pork.
  • Next, in a large Pyrex, mix together balsamic vinegar, red wine, and chicken broth.
  • Then, pour that on top of the pork roast.
  • Cover crockpot and turn to high. Let cook for around 6-8 hours (flipping pork roast halfway through cook time, if you can, if you can't no worries!).
  • Remove meat and vegetables from the crockpot and discard the herb bundle.
  • Using two forks, pull the pork roast apart into chunks and set aside.
  • Place 1/2 cup of the liquid left in the crockpot into a microwave safe Pyrex. Whisk in cornstarch.
  • Place cornstarch mixture into the microwave for 45 seconds (mixture should be thick a gelatinous).
  • Remove from the microwave and whisk the cornstarch mixture into the existing liquid in the crockpot until it thickens into a thin gravy.
  • Place pork and vegetables back into the crockpot and mix, coating everything in gravy.
