DOUGH:
400 g flour ((0.9 lb; 3 1/4 cups))
1 tsp baking powder
1 egg
100 g sugar ((3.5 oz; 1/2 cup), or more)
150 g butter ((5 oz; 1/2 cup + 1 3/4 Tbsp))
1-2 Tbsp sour cream or milk (optional)
2 Tbsp dry bread crumbs
FILLING:
1,5 kg apples ((3 lb), about 10 medium apples)
3 Tbsp sugar
1 tsp ground cinnamon

Steps:

  • DOUGH: Combine flour, baking powder, egg, sugar and butter to make a dough. If the dough is too dry, add up to 1 Tbsp milk. Do not overwork the dough. Wrap it and cool in refrigerator for about 30 minutes.
  • FILLING: Peel and grate apples. Mix with sugar and cinnamon. Adjust the sweetness to your taste.
  • ASSEMBLE: Divide the dough in half. Roll out the dough with a rolling pin on a floured surface. Press one half of the dough into the bottom of the 9x13" baking pan and up the sides. Sprinkle with dry bread crumbs and spoon in apple filling. Cover with the top crust.
  • Bake at 170 C (340 F) for about 45 minutes or until the crust is pale golden. Sprinkle with powdered sugar, cut into squares and serve.

Croatian apple pie squares feature a fragrant and delicious cooked apple raisin filling, enclosed top and bottom with a flaky crust.

2 1/2 cups all-purpose flour
1 1/4 cup very cold unsalted butter, cut into cubes
1/4 cup Demerara sugar
2 egg yolks
2 tablespoons sour cream
1 tablespoons plum brandy

Steps:

  • Add flour and butter to a large bowl, and use your fingertips to rub butter into flour until mixture resembles coarse breadcrumbs with no large lumps of butter remaining.
  • Add the 1/4 cup Demerara sugar, egg yolks, sour cream, and brandy to flour mixture and combine with a spatula just until the dough comes together. Wrap dough in plastic wrap and chill for at least 2 hours or overnight.
  • Meanwhile, place apples, raisins, the 1/3 cup Demerara sugar, vanilla sugar, cinnamon, and lemon juice in a saucepan. Bring to a simmer over medium-low heat and simmer until apples are tender, and mixture is slightly thickened, about 10 minutes. Set aside to cool.
  • Preheat the oven to 400 degrees F (200 degrees C). Line a 9x16-inch baking pan with parchment.
  • Divide the chilled dough into two equal pieces. Roll the dough out on a lightly floured surface into 2 9x16-inch rectangles. Place one of the rectangles into the prepared baking pan.
  • Bake in the preheated oven until a pale crust develops on top, 10 to 15 minutes. Remove from the oven.
  • Carefully brush the semi-baked crust with apricot jam. Evenly distribute filling over the crust. Place the second rectangle of dough on top and prick it all over with a fork.
  • Bake until crust is lightly browned and filling is hot and bubbly, about 30 minutes.
  • Remove to a wire rack, and allow to cool slightly, about 10 minutes. Dust the still-warm pie with confectioner's sugar, cut into squares, and serve warm or at room temperature.

1 cup walnuts, chopped
1/2 cup packed light brown sugar
1/2 cup butter, softened (no substitutions)
1 tablespoon vanilla extract
1 teaspoon ground cinnamon
3 cups all-purpose flour
1/3 cup sugar
1/4 teaspoon salt
1 cup cold butter, cut up (no substitutions)
3 tablespoons butter (no substitutions)
3 lbs golden delicious apples, peeled,cored,and cut into 1/2 inch pieces
3/4 cup dark seedless raisins
1/2 cup packed light brown sugar
3/4 teaspoon ground cinnamon
4 1/2 teaspoons cornstarch
3 tablespoons fresh lemon juice

Steps:

  • Preheat oven to 375 degrees.
  • Lightly grease 15 x 10 jelly-roll pan.
  • Prepare Struesel Topping: in medium bowl, with hand, mix all topping ingredients until mixture comes together.
  • Shape into a ball; cover and refrigerate.
  • Prepare Shortbread Crust: in large bowl, combine flour, sugar, and salt.
  • With pastry blender or 2 knives used scissor-fashion, cut in butter until mixture resembles fine crumbs.
  • Sprinkle crumbs evenly in prepared pan.
  • With hands, firmly pat crumbs into bottom of pan to form a crust.
  • Bake crust 20 to 25 minutes or until lightly browned (crust may crack).
  • Meanwhile, prepare Apple Filling: in 12-inch skillet, melt butter over medium heat.
  • Add apples, raisins, sugar, and cinnamon, and cook 15 minutes or until apples are tender, stirring occasionally.
  • In cup, mix cornstarch and lemon juice; stir into apple mixture until thickened (it will thicken almost immediately).
  • Remove skillet from heat.
  • Spoon hot apple mixture over warm crust.
  • Break struesel topping into 1/2-inch chunks, and scatter over apple mixture.
  • Bake 30 minutes or until struesel is golden.
  • Cool completely in pan on wire rack.
  • When cool, cut lengthwise into 3 strips, then cut each strip crosswise into 6 pieces.
  • Use wide metal spatula to lift and serve squares.

This apple dessert is one of my family's favorites. If you're serving a larger group, I've found that it goes a little further when cut into squares rather than slices like a traditional apple pie."

FILLING:
1/4 cup packed brown sugar
2 tablespoons cornstarch
1 cup water
5 cups thinly sliced peeled apples
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
1 tablespoon lemon juice
PASTRY:
2 cups all-purpose flour
1/2 teaspoon salt
2/3 cup cold shortening
2 large egg yolks, beaten
1/4 cup cold water
1 tablespoon lemon juice
GLAZE:
1/2 cup confectioners' sugar
1 tablespoon whole milk
1 tablespoon butter, melted
1/2 teaspoon vanilla extract

Steps:

  • For filling, combine sugar, cornstarch and water in a saucepan. Mix until well blended. Add apples; heat to boiling, stirring constantly. Reduce heat and simmer 5 minutes, stirring occasionally. Remove from the heat. Stir in spices and lemon juices; set aside., For pastry, combine flour and salt. Cut in shortening until mixture is crumbly. Combine egg yolks, water and lemon juice; blend into flour. Mixture will form a ball. Divided in half. , On a lightly floured surface, roll the dough between two pieces of waxed paper to fit the bottom and halfway up the sides of a 13x9-in. baking pan. Spread filling over pastry. Roll remaining pastry to fit pan exactly; place on top of filling. Fold bottom pastry over top and press to seal. Cut a few small slits in top crust. , Bake at 400° for about 40 minutes or until lightly browned. For glaze, combine all ingredients and drizzle over the warm pastry.

This is the third of my grandmother's famous pies (sour cherry, cheese). The recipe for dough is the same as for previous two. Filling is actually the same as for strudel, so if you have dough for strudel, use it.

300 g flour (for cakes)
150 g butter
2 egg yolks
2 tablespoons breadcrumbs
120 g sour cream
1 lemon (grated rind)
40 g sugar (white, crystal)
12 g baking powder
10 g sugar (with vanilla flavor)
1000 g apples
10 g raisins
4 g cinnamon
30 g sugar (white, crystal)

Steps:

  • Make dough out of flour, breadcrumbs, and lemon rinds, sugar, baking powder, salt, and vanilla flavored sugar and melted butter.
  • Mix everything in a bowl and at the end add egg yolks. Mix some more and add sour cream.
  • Mix more until you get nice greasy dough. If it is too greasy you can add some more flour. When done, put into refrigerator for 2 hours.
  • After 2 hours, put the dough out and work a little to make it softer. Cut ¼ of the dough and put aside.
  • During this, peal the apples and grate them in a bowl. Don't put sugar yet or apples will loose juice (put sugar last). During a day, assuming you have planned to make a pie, soak raisins in rum. When raisins get swelled put them into apples and add cinnamon. Be grateful with cinnamon. Now add sugar.
  • Roll the rest of dough into ½ cm thin sheet. Cover the bottom of 28cm low rim cake pan with butter, and put onto it a dough sheet. Make sure that the rim is also covered with dough from inside.
  • Pour apple stuffing on dough. Roll the rest of the dough into thin sheet and put over the apples making sure that it is covered.
  • Poke 10 holes with a fork on the cover. Put the pie into preheated oven on 180°C and bake 30-40 minutes or until it gets light golden. Before serving sparkle with caster sugar.

250 g all-purpose flour (125 g cake flour and 125 g bread flour)
150 g butter, cut into smaller pieces
1 egg yolk
1 splash milk
30 g sugar
3 tablespoons cranberry jam, or
3 tablespoons rose-hip jam
750 g apples, peeled, thinly sliced (with grater)
2 tablespoons brown sugar, to taste
1 grated lemon, zest of
1/2 teaspoon ground cinnamon
2 tablespoons rum
3 eggs, yolks separated from the whites
30 g sugar
60 g bread flour

Steps:

  • In a bowl combine the flour, butter, egg yolk, a splash of milk and sugar. Knead all ingredients to a firm dough. Chill for 30 minutes.
  • Meanwhile prepare the topping dough: beat egg yolks with sugar until light and foamy. Beat the egg whites until stiff peaks form. Gently fold egg white mixture and flour alternately into the yolk mixture.
  • Roll short-crust dough on a lightly floured counter to a rectangle the size of the parchment paper lined baking pan. Cover the bottom of the pan with the dough, tap with fingers into place.
  • Evenly cover the dough with grated apples, sprinkle with brown sugar, lemon zest, ground cinnamon and rum.
  • Top the apples with the light topping dough and bake the pie in the oven at 200°C for about 45 minutes.
  • Cool the pie in the baking pan, cut into equal sized square pieces and dust with powdered sugar (optional).
