I don't know where I found this, but I had it printed and decided to make it tonight - YUM! Very light and quick to put together. I had a can of artichoke hearts on hand and added 1/2 of the can in the sauce and it was delicious!

4 (6 ounce) tilapia fillets
1 cup flour (for dredging)
1 egg, slightly beaten
1/4 cup flour
1/2 cup parmesan cheese, grated
1 tablespoon olive oil
1 teaspoon garlic, chopped
1 1/2 teaspoons capers, drained
1 lemon, juice of
2 tablespoons white wine
1/4 cup chicken stock
canned artichoke heart (optional)
salt and pepper, to taste
1 tablespoon unsalted butter

Steps:

  • Prepare Parmesan flour by combining 1/2 cup flour and parmesan cheese in shallow pan, set aside.
  • Dredge fish in plain flour, shaking off excess flour.
  • Dip in egg wash.
  • Coat in parmesan flour mixture.
  • Heat non-stick frying pan with olive oil (almost smoking).
  • Brown fish on both sides, remove from pan and keep warm.
  • In the same pan, add more oil if needed, and sauté garlic.
  • Add capers, lemon juice, wine and stock, salt and pepper (artichokes if you like).
  • Reduce by half, remove from heat.
  • Add butter and melt through.

1/8 teaspoon white pepper
4 skinless tilapia fillets or other medium-firm fish fillets (6 oz each)
1/4 teaspoon salt
1 tablespoon vegetable oil
1/4 cup chopped toasted hazelnuts (filberts) or almonds

Steps:

  • In 2-quart saucepan, heat wine, lemon juice and shallots to boiling over medium-high heat. Boil uncovered 4 minutes, stirring occasionally, until liquid is reduced by half.
  • Add whipping cream to pan and heat to boiling, stirring occasionally. Boil uncovered 6 minutes, stirring occasionally, until sauce is thickened and reduced to about 1/2 cup. Remove from heat and add lemon peel. Beat in butter, 1 piece at a time, with wire whisk, adding the next piece only after the first has been completely beaten in and melted. When all of the butter has been beaten in, add 1/4 teaspoon salt and the white pepper. Cover to keep warm.
  • Sprinkle fish with 1/4 teaspoon salt; set aside.
  • In 12-inch skillet (preferably nonstick), heat oil over medium-high heat until shimmering and hot. Add fish and cook 3 minutes. Flip and cook 3 minutes longer or until edges begin to brown and fish flakes easily with fork.
  • To serve, spoon sauce over fish and sprinkle with nuts.

  • Position a rack in the center of the oven and heat the oven to 200°F. Line a baking sheet with paper towels and set aside.

1/4 cup all-purpose flour
salt and pepper
1/4 cup butter
2 tablespoons lemon juice

salt and lemon pepper
1/4 cup mayonnaise
2 lemons, cut into wedges

  • Preheat oven to 450 degrees.
  • Season fish with salt and lemon pepper. Mix mayonnaise with juice from 2 lemon wedges (about 1 tablespoon).

14 ounces tilapia fillets, 4 medium fillets
1/8 cup canola oil
1 cup low-fat milk
flour, enough to lightly coat the fillets
salt and pepper, to taste
2 -3 tablespoons butter
1/8 cup capers, Drained
1/8 cup fresh parsley, chopped, adjust to your taste
1 -2 lemon

Steps:

  • Peel the lemon removing the inner white membrane, cut into segments and reserve juice.
  • Place enough flour in a zip bag to coat the fillets and season the flour with salt and pepper.
  • Dip the fillets into the milk and into the flour mixture and shake to coat.
  • Remove and shake off any excess flour and repeat with other fillet.
  • Heat enough oil to coat the bottom of a skillet and place fillets in oil.
  • Brown the fillets on both sides turning only once until the fillets flake easily.
  • Remove from skillet to warm serving plates.
  • Drain excess oil from pan, wipe out skillet and add in the butter.
  • Once melted and slightly browned, add in the lemon with juices, capers and parsley.
  • Warm through and spoon over fillets.
  • Serve immediately with some steamed vegetables and a mixed green salad.

2 boneless skinless chicken breast halves (7 to 8 ounces each)
1/2 cup canola oil
1/4 cup drained jarred capers, patted dry
2/3 cup all-purpose flour
1/2 cup freshly grated Parmesan
Kosher salt and freshly ground black pepper
1 lemon, zested and halved, plus 1 lemon sliced into rounds
2 large eggs
3 tablespoons heavy cream
4 tablespoons unsalted butter
1/2 cup dry white wine
1/2 cup fresh parsley leaves with tender stems, finely chopped
1 1/2 cups chicken stock
Cooked pasta, rice, and/or vegetables, for serving, optional

Steps:

  • Pat the chicken breasts dry with a paper towel. Press your palm down on a chicken breast and slice the chicken in half with a sharp knife parallel to the cutting board. Repeat with the second chicken breast to make a total of 4 cutlets.
  • Heat the oil in a large heavy-bottomed skillet over medium-high heat until shimmering. Add the capers and fry until golden brown and crispy, 1 to 2 minutes. Remove from the skillet using a slotted spoon and drain on a paper towel-lined plate. Reserve the oil in the skillet and remove from the heat.
  • Set up a dredging station with 2 shallow bowls or pie plates. Combine the flour with 1/4 cup of the Parmesan, 1 tablespoon kosher salt and the lemon zest in 1 bowl; stir with a fork to combine. Whisk the eggs with 2 tablespoons of the cream in the other bowl.
  • Heat the reserved oil in the skillet over medium heat.
  • Working in an assembly line, dredge 1 chicken cutlet in the seasoned flour and turn to coat both sides; tap off any excess. Dip the chicken cutlet into the beaten eggs and coat both sides, letting any excess drip off. Carefully lower the cutlet into the skillet. Repeat with the remaining chicken cutlets, frying them in a single layer, until the chicken is opaque and golden brown, 4 to 5 minutes per side. Transfer the chicken to a paper towel-lined baking sheet and set aside.
  • Carefully pour off the oil and discard. Wipe out the skillet with a paper towel. Add the butter and cook over medium heat, swirling the skillet occasionally, until the butter bubbles and begins to brown, 1 to 2 minutes. Add the wine and the juice of 1/2 the zested lemon, increase the heat to medium-high and continue to cook, stirring occasionally, until the liquid is reduced and thickened, 5 to 6 minutes.
  • Add the chicken stock to the skillet and continue to cook over medium-high heat, stirring occasionally, until the sauce is reduced and thickened, about 5 minutes.
  • Reduce the heat to medium-low and whisk in the remaining 1 tablespoon cream until emulsified.
  • Taste and adjust the seasoning, if necessary. Return the chicken to the skillet, add the lemon slices and increase the heat to medium. Cook, spooning the sauce over the chicken, until it's warmed through and the lemons have started to soften, 3 to 4 minutes.
  • Divide the chicken among plates, top with the lemon slices and spoon the sauce over the top.
  • Sprinkle with the remaining 1/4 cup of Parmesan, the parsley and fried capers and enjoy.

2 tablespoon Olive oil (Extra Virgin)
salt and pepper
1 ⁄4 cup butter
1 onion
2 garlic cloves
2 tablespoons lemon juice
1 teaspoon lemon zest
2 tablespoons capers
2 tablespoons chopped fresh cilantro

Steps:

  • Season the fish lightly with salt and pepper. In a large nonstick fry pan over medium heat, melt the butter with the olive oil. Do no allow butter to brown. Arrange the fish in the pan and cook, turning once, until browned on both sides. The fish should no longer have a pink tint to it, test with a fork approximately 6 to 8 minutes depending on the thickness of the fillet. Remove fish and set aside.
  • Add the onion cook for about 1 minute and the add in the garlic to the pan and cook, stirring often, until fragrant, about 1 minute. Add the lemon juice, increase the heat to medium-high. Allow the sauce thickens slightly. Stir in the cilantro, capers and lemon zest, and season with salt and pepper.
  • Add the fish to the pan and allow fish to reheat. Serve immediately.

Kosher Salt and Black Pepper
2 Tbsp. Butter
2 Tbsp. plus 2 tsp. STAR Extra Virgin Olive Oil, divided
2 large Shallots, minced
1 large Garlic Clove, squeezed through a garlic press
3/4 cup White Wine, like Pinot Grigio
1 whole Lemon, zested
3 Tbsp. Lemon Juice, or more to taste
1 tTbsp. STAR Capers, rinsed

Sliced Lemon, for garnish

Steps:

  • Season both sides of the fish with kosher salt and black pepper.
  • Preheat a large non-stick skillet over medium heat. Melt 2 Tbsp. of butter and add 2 Tbsp. of STAR Extra Virgin Olive Oil.
  • Work in batches of two and carefully place the tilapia into the hot pan. Cook the tilapia for 4 minutes before flipping and cooking for an additional 2 to 3 minutes. Remove and repeat with the second batch. Keep the tilapia warm by covering loosely with foil.

4 large (6 to 7-ounce) tilapia fillets or 8 small fillets
Salt and pepper
1 cup all-purpose flour
2 tablespoons olive oil
2 tablespoons butter, divided
3/4 cup white wine
1 tablespoon finely chopped shallots (optional)
2 tablespoons fresh lemon juice
1 tablespoon or more small capers
Parsley leaves or chopped parsley

Steps:

  • Dry the fillets with paper towels and sprinkle both sides with salt and pepper. Spread the flour out on a plate.
  • Heat the olive oil and 1 tablespoon of the butter over medium heat until the butter sizzles. Lightly dredge the fillets in the flour, shake off the excess and put them in the pan.
  • Pan fry the fillets until lightly browned on both sides, about 2 to 3 minutes per side. Remove the fish from the pan and keep it warm.
  • Raise the heat to medium-high and add the wine to the pan, stirring up any browned bits of flour. Add the shallots and cook for 1 to 2 minutes, or until shallots are softened.
  • Stir in the lemon juice and capers and cook 1 minute. Turn off the heat and stir in the remaining tablespoon of butter. Spoon the sauce over the fish and sprinkle with parsley.

  • Cut the tilapia into "fingers" by first cutting the fillets in half. Leave the thin sides long, then cut the thicker sides in half on a diagonal so they appear longer.
  • Set up three large shallow bowls in an assembly line. Put the flour in the first bowl; the beaten eggs in the second; and the panko in the third.
  • Line a baking sheet with aluminum foil. Dredge the fish fingers in the flour mixture, shaking excess into the bowl so just a light coating remains; dip in the eggs and turn to coat evenly; then dredge in the panko, turning several times to coat evenly. (This can be a messy job...it's best to use one hand for the flour and eggs and the other for the panko.) Set the breaded tilapia fingers on the prepared baking sheet and season with salt and pepper. Cover and refrigerate until ready to cook (this can be done several hours ahead of time).
  • Line a plate with 3 paper towels and set by the stove. Coat a large non-stick sauté pan generously with olive oil and place over medium heat. When the pan is hot, place the first batch of tilapia fingers in the pan (do not crowd) and cook until the first side is golden brown, 2-3 minutes. Flip and continue cooking until done, about 2 minutes more. Transfer the fish fingers to the plate with paper towels and let sit for a minute to drain any excess oil. Remove any brown bits out of the pan, add more oil if necessary and continue to cook the fish in batches until done. Season the cooked tilapia fingers with more salt if desired. Serve with lemon wedges and Lemon-Garlic Mayonnaise.
