CRISPY SALTED OATMEAL WHITE CHOCOLATE COOKIES

I got this recipe from smitthkitchen.com. Use good quality white chocolate and fleur de sel salt for sprinkling on top. I used Penzey's French Grey Sea Salt.

1 cup all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon table salt
14 tablespoons unsalted butter, slightly softened
1 cup white sugar
1/4 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
2 1/2 cups old fashioned oats
6 ounces good quality white chocolate baking bar, chopped
1/2 teaspoon flaky sea salt

Steps:

  • Preheat oven to 350 degrees. Line a baking sheet with parchment paper.
  • Whisk flour, baking powder,baking soda and table salt in a medium bowl.
  • In a mixer beat butter and sugars until light and fluffy.
  • Scrape down bowl with rubber spatula then add egg and vanilla and beat until incorporated.
  • Scrape down bowl again.
  • Add flour mixture gradually and mix until just incorporated and smooth.
  • Gradually add oats and white chocolate and mix until incorporated.
  • Divide dough into 24 equal portions, about 2 tablespoons eac. Roll between palms into balls, then place on lined baking sheet 21/2 inches apart. Using fingertips, gently press down each ball to about 3/4 inch thickness.
  • Sprinkle a flake or two of sea salt on each cookie.
  • Bake until cookies are deep golden brown, 13-16 minutes.

This is straight from America's Test Kitchen -- wonderful caramel-y, crispy-chewy, salty cookies. Use a nice sea salt if you've got it.

Number Of Ingredients 11

1 cup unbleached all-purpose flour
3/4 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon table salt
14 tablespoons unsalted butter, softened but still cool, about 65 degrees (1 3/4 sticks)
1 cup granulated sugar (7 ounces)
1/4 cup light brown sugar, packed (1 3/4 ounces)
1 large egg
1 teaspoon vanilla extract
2 1/2 cups old fashioned oats (see note)
1/2 teaspoon coarse sea salt

Steps:

  • Adjust oven rack to middle position and heat oven to 350 degrees. Line 3 large (18- by 12-inch) baking sheets with parchment paper.
  • Whisk flour, baking powder, baking soda, and salt in medium bowl.
  • In standing mixer fitted with paddle attachment, beat butter and sugars at medium-low speed until just combined, about 20 seconds. Increase speed to medium and continue to beat until light and fluffy, about 1 minute longer. Scrape down bowl with rubber spatula.
  • Add egg and vanilla and beat on medium-low until fully incorporated, about 30 seconds. Scrape down bowl again.
  • With mixer running at low speed, add flour mixture and mix until just incorporated and smooth, 10 seconds.
  • With mixer still running on low, gradually add oats and mix until well incorporated, 20 seconds. Give dough final stir with rubber spatula to ensure that no flour pockets remain and ingredients are evenly distributed.
  • Divide dough into 24 equal portions, each about 2 tablespoons (or use #30 cookie scoop), then roll between palms into balls.
  • Place cookies on prepared baking sheets, spacing them about 2 1/2 inches apart, 8 dough balls per sheet (see note above). Using fingertips, gently press each dough ball to 3/4-inch thickness. Lightly sprinkle sea salt evenly over flattened dough balls before baking.
  • Bake 1 sheet at a time until cookies are deep golden brown, edges are crisp, and centers yield to slight pressure when pressed, 13 to 16 minutes, rotating baking sheet halfway through.
  • Transfer baking sheet to wire rack; cool cookies completely on sheet.

12 tablespoons unsalted butter, at room temperature
1 cup light brown sugar
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon ground cinnamon
2 large eggs
1 teaspoon vanilla extract
1 3/4 cups flour
2 cups rolled oats (not quick-cooking)
sea salt, for sprinkling

Steps:

  • In the large bowl of a stand mixer fitted with the paddle attachment, beat the butter for a few minutes on medium-high speed until light and fluffy. Scrape down the sides of the bowl and add the sugars, baking powder, baking soda and cinnamon, beating until the mixture is well blended. Reduce the speed to medium and add the eggs and vanilla extract, mixing until well incorporated. Reduce the speed to low and add the flour and oats, scraping down the sides of the bowl as necessary and mixing just until they are incorporated. Cover the bowl with plastic wrap and chill the dough for at least an hour before baking.
  • Preheat the oven to 375 degrees. Line a large baking sheet with parchment paper.
  • Form the dough into golf ball-size balls and place about 2 inches apart on the baking sheet. Sprinkle sea salt generously on top of each ball of dough, as you would sugar. Bake 1 sheet at a time for 15 minutes or until the cookies are puffed and beginning to turn golden, being careful not to overbake. (The cookies should have a tender interior.) Transfer the cookies, still on the parchment paper, to a wire rack to cool completely.
