CRISPY BAKED BUFFALO CHICKEN TENDERS



Crispy Baked Buffalo Chicken Tenders image

Truly crispy baked buffalo chicken tenders with simple blue cheese dip - perfect party fare! I love to serve cold and crunchy carrot and celery sticks with this too.

1 cup panko breadcrumbs
1/2 teaspoon kosher salt
1/4 cup butter
1/4 cup hot sauce (such as Frank's Red Hot or Cholula)
1 small clove garlic (minced)
1 egg
1/3 cup all-purpose flour
1 pound chicken breast tenders
1/4 cup blue cheese (crumbled)
1 small clove garlic (minced)
1/2 cup sour cream
milk (for thinning)
salt and freshly ground black pepper

Steps:

  • Preheat oven to 350°F.
  • Spread panko breadcrumbs in a single layer on a rimmed baking sheet. Bake 3 to 5 minutes, until lightly browned. Transfer to shallow plate immediately to keep them from continuing to cook. Stir in kosher salt.
  • Place an oven-proof cooling rack inside the rimmed baking sheet and spray or brush with oil to keep tenders from sticking. (If you don't have an oven-proof cooling rack, just line the baking sheet with parchment paper)
  • Increase oven temperature to 425°F.
  • Meanwhile melt butter in a small saucepan and transfer to a bowl. Whisk hot sauce into butter to cool it down.
  • Whisk egg and garlic together in a shallow bowl. Add butter and hot sauce mixture and whisk to combine.
  • Spread flour on a shallow plate for dredging.
  • Pat tenders dry with paper towels. Dredge one tender in flour and shake to remove excess. Dip in egg mixture and lift to let excess drip away. Then dredge the tender in toasted panko crumbs, patting crumbs down to be sure they adhere. Transfer to prepared baking sheet. Repeat with remaining tenders.
  • Bake tenders at 425°F for 15 to 18 minutes until breading is crisp and chicken is cooked through but still juicy.
  • Serve with Simple Blue Cheese Dip (recipe below)

1 to 1 1/4 pounds chicken breast halves (boneless)
1/2 cup Buffalo wing sauce (such as Frank's, Stonewall Kitchens, or your favorite)
1 1/2 cups panko crumbs
1/2 teaspoon garlic powder
1 teaspoon parsley flakes
1/2 teaspoon paprika (sweet)
2 tablespoons butter (melted)
For the Buffalo Aioli:
1/2 cup mayonnaise
1 tablespoon celery (finely chopped)
2 teaspoons dill relish
1 pinch garlic powder
2 tablespoons Buffalo wing sauce

Steps:

  • Line a large baking sheet with foil. Oil the foil or spray with nonstick cooking or baking spray.
  • Pat chicken dry. Cut the chicken breasts crosswise into 1/2-inch strips. Put them in a food storage bag or bowl and toss with 1/2 cup of the wing sauce. Let stand for 15 minutes or marinate in the refrigerator for 30 to 45 minutes.
  • Heat oven to 425 F.
  • After the chicken has marinated, add the panko crumbs, 1/4 teaspoon garlic powder, parsley, paprika, and melted butter to the bag and toss to blend.
  • Transfer the coated chicken to the lined baking sheet.
  • Bake for 12 to 15 minutes, until chicken is cooked through.
  • Meanwhile, combine the mayonnaise, finely chopped celery, relish, a dash of garlic powder, and 2 tablespoons of the Buffalo wing sauce.
  • Serve with the aioli for dipping.

I finally found a way to make my chicken fingers crispy! I try not to eat fried foods but I love fried chicken and chicken fingers and chicken nuggets! Everytime I try to make 'oven fried chicken' with regular bread crumbs or corn flakes or potato chips, it always ends up soggy. Well.. I finally tried Panko and it is a Godsend! And I've found the sour cream also helps a ton! For dips I use Blue Cheese and also mixed the Buffalo sauce with some honey and it turned out great. Enjoy!

1 lb chicken tenders
1/2-1 tablespoon paprika
1/2-1 tablespoon cayenne
1 teaspoon kosher salt
12 ounces Frank's red hot sauce (Buffalo)
1/4 cup flour
1/2-1 cup sour cream
2 large eggs
8 ounces panko breadcrumbs (original)

Steps:

  • Preheat oven to 425 degrees.
  • Put Panko in a bowl or pan (something you can fit the chicken into when dipping).
  • Put the chicken into a gallon size zip lock bag.
  • Toss in the paprika, cayenne, salt and Red Hot Buffalo sauce (just enough to coat the chicken).
  • Seal the bag and smoosh the chicken around to coat evenly.
  • Add the flour to the bag.
  • Seal the bag again and shake to coat.
  • Crack eggs into bowl, and whisk.
  • Add sour cream. (start with 1/2 cup and add to make thicker).
  • Beat well to incorporate. It will be thick.
  • Grab your seasoned chicken, dish of breadcrumbs, bowl of batter, and lined sheet pan.
  • Take a piece of chicken and shake it to knock off excess flour.
  • Dip it into the batter to coat it on all sides.
  • Drop the battered chicken into the breadcrumbs and turn it over a few times to coat the chicken.
  • Place on sheet.
  • Bake for 20-25 minutes, until the breading is lightly browned. Your final cooking time will vary depending on how thick your chicken tenders are.
  • *I served with blue cheese dressing, more Buffalo sauce, and even some honey. YUMMY.

3 pounds raw chicken breast tenders
1/4 to 1/2 cup buttermilk
3 cups all-purpose flour
2 to 3 teaspoons seasoned salt, such as Lawry's Seasoned Salt, or spices of your choosing
Vegetable oil
Dipping sauce, for serving

Steps:

  • Submerge the chicken strips in the buttermilk for 15 to 20 minutes (or longer if you'd like).
  • In another bowl, combine the flour and seasoning salt (or other seasonings if you prefer). Mix this together well. Next, gradually drizzle 1/4 to 1/2 cup of the buttermilk into the flour mixture and stir lightly with a fork as you add it to achieve clumps.
  • Heat about 1 inch vegetable oil in a large skillet over medium-low to medium heat.
  • Remove a few of the buttermilk-soaked chicken strips and place them in the flour mixture, turning them over to coat thoroughly. Place them on a plate. Continue coating the chicken strips until they are all ready to cook.
  • When the oil is sufficiently heated, begin cooking the strips a few at a time. Cook them for about a minute and a half or so on each side. When golden and crispy and the chicken is done, remove them to a paper-towel-lined plate. Do not allow them to burn.
  • Serve with your favorite dipping sauce. Yum!

4 large boneless skinless chicken breast halves (cut into 1 inch strips)
3 tablespoons honey
3 tablespoons Dijon mustard
1 teaspoon granulated garlic
1 teaspoon onion powder
2 1/2 cups panko breadcrumbs, crushed
1 teaspoon salt
1 teaspoon black pepper, freshly ground
1 tablespoon dried oregano
1 tablespoon dried basil

Steps:

  • In a Ziploc bag, mix together the bread crumbs, salt, pepper, oregano and basil. Set aside.
  • In a medium sized bowl, wisk together the honey, dijon mustard, garlic and onion powder.
  • Coat each strip of chicken with the spiced honey mustard. Be careful not to put too much, or it will get goopy. Just a thin, even coat is all you need.
  • Place a few strips at a time into the ziploc bag filled with breadcrumbs. Seal the bag. Shake to toss and coat the strips thoroughly.
  • Place the breaded strips on a baking sheet sprayed with cooking spray. Repeat with remaining strips of chicken.
  • Bake for 20 min in a preheated 400 degree oven. (or until chicken is done and juices run clear).
  • Flip each strip over during the last 5 minutes of cooking to brown and crisp on both sides.

1/2 cup fat free blue cheese dressing

Steps:

  • Preheat oven to 400°.
  • Combine first 6 ingredients in a shallow dish, stirring with a whisk.
  • Place egg whites in a shallow dish.
  • Place Panko in a shallow dish.
  • Working with 1 chicken strip at a time, dredge in flour mixture. Dip in egg whites; dredge in panko. Place on a baking sheet coated with cooking spray. Repeat procedure with remaining chicken strips, flour mixture, egg whites, and panko.
  • Lightly coat chicken strips with cooking spray. Bake at 400° for 15 minutes or until done, turning once.
