Steps:
- Preheat the oven to 425 degrees F and lightly grease a baking sheet with oil. Using a food processor, pulse together the cornflakes, almonds, sesame seeds, chili powder, garlic powder, smoked paprika, thyme, cumin, 1 teaspoon salt and 1 teaspoon black pepper until coarsely chopped; transfer to a shallow bowl.
- In a second shallow bowl, whisk together the eggs and nut milk. Place the flour in a third shallow bowl. Dredge the chicken in the flour, shaking off any excess, then in the egg mixture, then the cornflake mixture; place on the prepared baking sheet. Repeat with the remaining chicken. Bake until golden and cooked through, about 20 minutes.
CRISPY HERB-BAKED CHICKEN - GLUTEN FREE
This is a clever idea - using potato flakes as an herb mixture instead of flour. I haven't tried this but can't wait. I intend to try this as part of chicken parmesan (with rice noodles of course!)

CRISPY HERB BAKED CHICKEN
I found this recipe on a box of Idaho Spuds Mashed Potato flakes and tried it tonight. Absolutely delicious and as simple as can be. Just a few simple ingredients and voila, chicken fit for a king! I used a 350 degree oven instead of 375 because I fixed some roasted red potatoes at the same time. They both turned out deliciously well.

Steps:
- Heat oven to 375. Grease or line with foil and grease 15x10x1-inch baking pan or 13x9- inch pan. In medium bowl, combine potato flakes, Parmesan cheese and garlic salt; stir until well mixed. Dip chicken pieces into margarine; roll in potato flake mixture to coat. Place in greased pan. Bake at 375 for 45-60 minutes or until chicken is fork-tender and juices run clear.
- I used garlic powder instead of salt and boneless, skinless breasts and thighs instead of the entire chicken because that is what I had available.

EASY LEMON CHICKEN -GLUTEN FREE
This dish is very easy to prepare. It has pan cooked chicken breast with a lemon sauce drizzled over the top. Ensure your flours, soy sauce and liquid stock used are all gluten free. I use Massell brand stock and Fountain brand soy sauce as they are currently GF. You can substitute the soy sauce for a gluten free Tamari sauce. Nobody would guess this is a GF dish. Make double quantity of the sauce if you like a lot of sauce to serve

CRISPY HERB BAKED CHICKEN
The crispy coating on this chicken makes it flavorful and tender! This was adapted from a Hungry Jack recipe. The original recipe called for dipping the chicken in 1/3 cup margarine instead of spraying it with cooking spray, so feel free to do that instead if you prefer!
