T.G.I. Friday's doesn't exactly specialize in health food: The mega-chain is famous for bar food like loaded potato skins and Jack Daniel's-glazed chicken wings. So, it's no surprise that when the restaurant added veggies to the appetizer list, they were deep-fried. The dish, Crispy Green Bean Fries, hit the menu in 2006, and customers went crazy. The beans are coated in a garlicky breading, fried and served with cucumber-wasabi ranch dip. They're a top-seller these days, and fans like Karlyn Siegwarth from Pittsburgh have been begging us for the recipe. Reps in Carrollton, TX, wouldn't give it up, so our chefs created this perfect copy.

1/2 cup ranch dressing
1/2 cup peeled, seeded, chopped cucumber
1 tablespoon horseradish, drained
1 tablespoon milk
1 teaspoon distilled white vinegar
2 teaspoons wasabi powder (found in the spice aisle or with the Asian foods)
Pinch of cayenne pepper
Kosher salt
2 cups low-sodium chicken broth
1/2 pound green beans, trimmed
1 large egg
1/2 cup milk
1 cup instant flour (such as Wondra)
1 cup breadcrumbs
1/4 teaspoon onion powder
1/8 teaspoon garlic powder
Pinch of cayenne pepper
Kosher salt and freshly ground black pepper
Peanut or vegetable oil, for frying

Steps:

  • Make the dip: Puree the dressing, cucumber, horseradish, milk, vinegar, wasabi powder, cayenne pepper, and salt to taste in a blender until smooth. Cover and refrigerate until ready to serve.
  • Prepare the beans: Fill a large bowl with ice water. Bring the broth to a boil in a saucepan over high heat. Add the green beans and cook until tender, about 5 minutes. Remove the beans with a slotted spoon and transfer to the ice water to stop the cooking. Let cool in the water, then drain and pat dry.
  • Whisk the egg and milk in a shallow bowl. Put 1/2 cup flour in another shallow bowl. Combine the breadcrumbs, the remaining 1/2 cup flour, the onion powder, garlic powder, cayenne, and salt and pepper to taste in another bowl.
  • Line a baking sheet with parchment paper. Toss the green beans in the flour and shake off the excess. One at a time, dip the beans in the egg mixture, dredge in the breadcrumb mixture and lay on the prepared baking sheet. Freeze until the coating is set, about 30 minutes.
  • Heat 3 inches oil in a deep pot over medium heat until a deep-fry thermometer registers 350 degrees F. Fry the green beans in batches until golden brown, 1 to 2 minutes. Transfer the beans with tongs or a skimmer to a rack or paper towels to drain. Serve with the dip.

1 cup sour cream
1/2 cup buttermilk
1 to 2 teaspoons wasabi paste
2 to 3 tablespoons finely chopped fresh chives
Salt and pepper
1 1/4 to 1 1/2 pounds green beans
Frying oil
1 cup flour
1 1/2 teaspoons baking powder
1 tablespoon granulated onion
1 tablespoon granulated garlic
2 large eggs, beaten

Steps:

  • Combine the sour cream, buttermilk, wasabi, chives and season with salt and pepper. Reserve.
  • Bring a few inches of water to a boil, salt it and cook the green beans, 2 minutes. Remove, cold shock in an ice bath, drain and dry on a kitchen towel.
  • Meanwhile, heat a few inches of oil over medium to medium-high heat. Combine 1 cup water, the flour, baking powder, onion, garlic and eggs in a bowl to form a batter. Dip the beans in the batter, a dozen at a time, and fry them up in batches. Cool on a cooling rack. Sprinkle with salt while hot.
  • Serve the fried beans with the wasabi dipper.

1 tablespoon milk

8 ounces fresh green beans
1 egg
1 cup milk
4 cups chicken broth
1 cup flour
1/4 cup breadcrumbs
1/4 cup panko breadcrumbs
1/2 cup French-fried onions, crunched
2 tablespoons baking powder
1 teaspoon garlic powder
1 teaspoon pepper
1/2 teaspoon salt

Steps:

  • first prepare wasabi dip.mix all ingredients together cover and set in fridge.
  • Blanch the beans in the chicken broth until cooked NOT softened,about 5-7 minutes.Strain the beans taking out as much water as you can.
  • In one bowl mix the egg and milk.
  • in the second bowl mix flour and baking powder.
  • in a third bowl mix bread crumbs .panko bread crombs,french fried onions,.
  • garlic powder,pepper and salt.
  • first dip all the beans into flour mixture coating evenly.
  • Next dip all the beans into the egg/milk mixture,after that dip the beans into the bread crumb mixture coating thoroughly.
  • place the coated beans in a dish a refrigerate for about 3 hours.(this allows the coating to completely stick to the beans).
  • you can either deep fry these to a golden brown,or bake in the oven at 400 for about 25 minutes. i prefer them deep fried.

3 tablespoons fat-free mayonnaise
2 tablespoons cucumbers, peeled and chopped
1 tablespoon nonfat sour cream
1 1/2 teaspoons dry ranch dressing mix (a.k.a. Dip Mix)
1/4 teaspoon wasabi paste
1 dash cayenne pepper
2 cups fresh green beans, trimmed
3/4 cup all-bran cereal, ground to a breadcrumb-like consistency in a food processor (Fiber One Original)
1/4 cup liquid egg substitute, fat free (like Egg Beaters Original)
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper

Steps:

  • Preheat oven to 400 degrees. Combine dip ingredients in a food processor or small blender (our Magic Bullet works wonders!). Blend until smooth. Place dip in a dish, and then cover and chill in the fridge.
  • Place the green beans in a large pot with 4 cups of water. Bring to a boil. Once boiling, cook for 9 minutes. Carefully drain the beans, and then place them in cold water for a few minutes to stop the cooking process. Drain and dry them well.
  • Put the egg substitute in a small bowl, and set aside. In a separate bowl, combine the Fiber One "breadcrumbs" with the spices (add extra seasonings, if you like). Cover a large baking pan with aluminum foil and/or nonstick spray. Set aside.
  • Place about 1/3rd of the crumb mixture into a large sealable plastic bag. One by one, dip green beans into the egg substitute, and place them in the bag with the breadcrumbs -- continue this with 1/3rd of the beans. Seal the bag and shake it up. Remove the "breaded" green beans, and place them on the pan. Repeat this process two more times, so all of the beans are coated.
  • Pop the pan in the oven and cook for 16 minutes, flipping green beans halfway through cooking. Beans are done once they're crispy. Allow green beans to cool slightly, and then serve with the dip. Yum!
