CRISPY FRIED SHRIMP
Steps:
- Sprinkle shrimp with cajun seasoning.
- Place 3/4 cup flour in a shallow bowl. In a second shallow bowl, whisk eggs together with 1 tablespoon of water.
- Combine bread crumbs, Panko crumbs, and flour on a paper plate or in a shallow dish.
- Coat shrimp in flour, dip in egg, and then press into bread crumb mixture, throughly coating them.
- Pour 1 inch of oil in a Dutch oven or skillet with high sides. Heat until oil sizzles when you drop a few bread crumbs in.
- Fry shrimp in batches until golden brown. This will only take a minute or two depending on shrimp size and how hot the oil is. Do not overcook them or they will be chewy. Place them on a paper towel-lined plate.
- Sprinkle shrimp lightly with salt when you take them out of the oil.
- Serve with cocktail sauce.
CRISPY FRIED SHRIMP RECIPE
Steps:
- In a shallow bowl, whisk together flour, 1 tablespoon salt, Old Bay seasoning, and black pepper.
- Place the buttermilk in a separate shallow bowl.
- Pour the oil into a medium Dutch oven or cast iron skillet and warm over medium-high heat until it reaches 375 degrees F.
- Meanwhile, pat the shrimp dry and dredge them in the flour mixture first, then coat with buttermilk, and dredge in the flour mixture again. Shake the shrimp after each coating to get off any excess flour or batter.
- Working in batches, fry shrimp until golden brown (about 2-3 minutes). Use a slotted spoon to transfer the shrimp to a paper towel-lined tray. Season with additional salt, to taste. You may need to increase the heat to keep the oil at a steady temperature between 350 degrees F and 375 degrees F as the shrimp fry.
- Keep the fried shrimp warm in a 200 degree F oven while you fry the remaining batches.

ALMOST-FAMOUS SPICY FRIED SHRIMP
When Bang Bang Shrimp first hit the menu at Bonefish Grill eight years ago, it was a flop. The dish - crunchy fried shrimp in Thai chili sauce - wasn't the problem. The name was. After chain founder Tim Curci changed the name from Creamy Spicy Shrimp to Bang Bang Shrimp, the appetizer became the restaurant's best-selling dish. And as the shrimp exploded in popularity, so did Bonefish Grill. The chain now has more than 150 locations across the country. Regulars everywhere have a nickname for the signature snack: They just order a "Bang." Many of these fans, including Lori Piscopo from Valley Township, PA, wrote to us asking for the recipe, and while Curci remained tight-lipped on the details, Food Network Kitchens managed to create this perfect imitation.

- Make the sauce: Mix the mayonnaise, chili sauce, honey, 1/4 teaspoon salt and 1 tablespoon water in a large bowl; set aside.
- Prepare the shrimp: Heat about 2 inches of vegetable oil in a heavy-bottomed pot or Dutch oven over medium heat until a deep-fry thermometer registers 350 degrees F. Meanwhile, whisk the eggs in a shallow bowl. Whisk the flour, cornstarch and 1 teaspoon each salt and pepper in another shallow bowl.

- Toss the shrimp with the prepared sauce. Arrange the lettuce in a shallow serving bowl or on individual plates. Top with the shrimp and garnish with scallions.
CRUNCHY FRIED SHRIMP
The panko bread crumbs give these fried shrimp just the right amount of crunch.

- Pour the oil into a heavy-bottomed pot fitted with a deep-frying thermometer. Heat over medium-high heat to 375 degrees F. Line a baking sheet with paper towels and top with a cooling rack.
- In a medium mixing bowl, whisk together the rice flour and beer until a smooth batter is formed. Season with 1/2 teaspoon salt and pepper.
- Lightly salt the shrimp. Holding the tails, dip the shrimp into the batter to evenly coat on both sides.
- One by one, gently drop the battered shrimp into the hot oil. Fry, flipping once if necessary, until golden brown on both sides, 1 to 2 minutes. While frying the shrimp, be sure to monitor the temperature of the oil and maintain it at 375 degrees F. Transfer the fried shrimp to the cooling rack and sprinkle generously with salt.
- Serve the fried shrimp with Tartar Sauce for dipping.
- Mix the mayonnaise, dill, cornichons, vinegar, capers, mustard and some salt and pepper in a small bowl. Refrigerate until serving.

- Add the shrimp to a medium bowl or a Ziploc bag, season with ½ teaspoon salt and ¼ teaspoon ground black pepper then add the buttermilk and mix to combine. Let it sit for 10-15 minutes as you prepare the breading and preheat the oil.
- In a shallow bowl, combine the flour with the remaining salt and pepper, garlic powder, onion powder, and smoked paprika.
- Remove the shrimp (one by one) from the buttermilk shaking off any excess then bread in the flour mixture and place onto a plate or a wire rack. Repeat with the rest/all of the shrimp.
- Preheat at least 2 inches of oil in a dutch oven or a deep fryer (it needs more oil to work) to 350°F/180°C. Drop the shrimp in hot oil, do not overcrowd (I do 6-7 at a time) and fry for 2 minutes.
- Remove onto a wire rack or a plate lined with paper towels and serve hot with fresh lemon wedges and your favorite dipping sauces.

- In a large bowl whisk together the eggs, buttermilk, flour, pepper and 1 teaspoon salt. Add the shrimp and let it chill out in the fridge for at most 30 minutes.
- Preheat the oven to 200 degrees F. Heat the oil to 350 degrees F in a deep-fryer or Dutch oven. Fit a sheet pan with a rack.
- In a wide shallow bowl or baking dish, whisk together the breadcrumbs, cornmeal, garlic, paprika, cayenne and remaining 1/2 teaspoon salt.
- Working in batches, use tongs to transfer the shrimp from the buttermilk mixture to the breading mixture. Make sure the shrimp is completely coated. Holding the shrimp by the tails, gently drop into the oil, one at a time. Fry in batches until golden brown, about 2 minutes per batch, allowing the oil to return to 350 degrees F between batches. - In a medium bowl, stir together the soy sauce, sugar, red-pepper flakes and cumin. Add the shrimp, season with salt and pepper, and toss to coat. Set aside while you fry the shallots and garlic.
- Place a fine-mesh sieve over a heat-proof bowl next to the stove. In a large (12-inch) nonstick skillet, heat the canola oil, shallot, garlic and cinnamon stick over medium-high. When the mixture starts to bubble, reduce the heat to medium and cook, stirring occasionally to break up the shallots, until golden brown, 5 to 9 minutes. (Lower the heat if the shallots are browning too quickly.) Drain through the sieve, catching the oil in the bowl below. Discard the cinnamon, season the fried shallots and garlic with salt, and set aside.
- Return the oil to the skillet and heat over medium-high. Add the green beans, season with salt and cook until crisp-tender, 2 to 3 minutes. Push the green beans to one side, then add the shrimp and the marinade, along with the peanuts (if using), and cook until the shrimp is cooked through, 2 to 3 minutes per side. Stir the green beans and shrimp to combine, then sprinkle with the fried shallots and garlic. Serve immediately, over rice or noodles, or in lettuce cups, if desired.
CRISPY FRIED SHRIMP WITH GREEN HERB SAUCE
Steps:
- 1. In a medium bowl, mix the flour with the sugar and 1 teaspoon of salt. Make a well in the center of the dry ingredients; stir in the ale, egg yolk, ginger and the 1 tablespoon of oil. Gradually stir the dry ingredients into the wet ingredients. Let the batter stand at room temperature for 20 minutes. 2. Meanwhile, in a large, heavy saucepan, heat the 1 quart of oil to 360°. In a small bowl, whisk the egg white with a pinch of salt until stiff peaks form. Gently fold the egg white into the batter. Dip the shrimp into the batter, one at a time, letting any excess batter drip back into the bowl. Fry the shrimp in batches over moderate heat until golden and crisp, 2 to 3 minutes.
