1 tablespoon paprika
3 teaspoons pepper, divided
2-1/2 teaspoons poultry seasoning

2 broiler/fryer chickens (3-1/2 to 4 pounds each), cut up
Oil for deep-fat frying

Steps:

  • In a large shallow dish, combine 2-2/3 cups flour, garlic salt, paprika, 2-1/2 teaspoons pepper and teaspoons poultry seasoning. In another shallow dish, beat eggs and 1-1/2 cups water; add 1 teaspoon salt and the remaining 1-1/3 cup flour and 1/2 teaspoon pepper. Dip chicken in egg mixture, then place in flour mixture, a few pieces at a time. Turn to coat., In a deep-fat fryer, heat oil to 375°. Working in batches, fry chicken, several pieces at a time, until skin is golden brown and a thermometer inserted into chicken reads 165°, about 7-8 minutes on each side. Drain on paper towels.

8 chicken pieces (preferably 2 breasts, 2 thighs, 2 legs and 2 wings)
1/2 cup all-purpose flour
Kosher salt and freshly ground pepper
4 cups cornflakes
2/3 cup buttermilk
2 tablespoons Dijon mustard
1/4 teaspoon cayenne pepper
1 1/2 teaspoons paprika
3/4 teaspoon ground sage
Serving suggestion: Easy Greens, recipe follows

Steps:

  • Preheat the oven to 425 degrees. Place a rack in a roasting pan or on a baking sheet.
  • Rinse the chicken in cold water; pat dry. In a wide bowl or on a plate, season the flour with salt and 1/4 teaspoon pepper. Dredge each chicken piece through the flour so it's fully coated, tap against the bowl to shake off excess flour and set aside. Discard the flour.
  • Here comes the part kids like best: Crush the cornflakes by placing them in a big resealable plastic bag, carefully pressing the bag to push out the air. Seal up the bag (with as little air inside as possible) and run over the flakes with a rolling pin. Open the bag and pour the crushed flakes into a wide bowl or onto a plate.
  • In a large bowl (big enough to dredge the chicken pieces), mix the buttermilk, mustard, cayenne pepper, paprika and sage. Give each floured chicken piece a good buttermilk bath and then roll in the cornflake crumbs.
  • Arrange the chicken pieces on the rack and place in the hot oven. Cook for 15 to 20 minutes, lower the heat to 375 degrees and cook for another 25 to 30 minutes, until cooked through and crispy. The juices should run clear when the meat is pierced with a knife. Serve with Easy Greens.

I experimented for many years before developing this recipe. It's bits and pieces of hints I had heard over the years. I have had many compliments on this chicken. Most of this recipe is dependant on your own taste. It's more a matter of preparation and cooking method!

1 (4 pound) chicken, cut into pieces
1 cup buttermilk
2 cups all-purpose flour for coating
1 teaspoon paprika
salt and pepper to taste
2 quarts vegetable oil for frying

Steps:

  • Take your cut up chicken pieces and skin them if you prefer. Put the flour in a large plastic bag (let the amount of chicken you are cooking dictate the amount of flour you use). Season the flour with paprika, salt and pepper to taste (paprika helps to brown the chicken).
  • Dip chicken pieces in buttermilk then, a few at a time, put them in the bag with the flour, seal the bag and shake to coat well. Place the coated chicken on a cookie sheet or tray, and cover with a clean dish towel or waxed paper. LET SIT UNTIL THE FLOUR IS OF A PASTE-LIKE CONSISTENCY. THIS IS CRUCIAL!
  • Fill a large skillet (cast iron is best) about 1/3 to 1/2 full with vegetable oil. Heat until VERY hot. Put in as many chicken pieces as the skillet can hold. Brown the chicken in HOT oil on both sides. When browned, reduce heat and cover skillet; let cook for 30 minutes (the chicken will be cooked through but not crispy). Remove cover, raise heat again and continue to fry until crispy.
  • Drain the fried chicken on paper towels. Depending on how much chicken you have, you may have to fry in a few shifts. Keep the finished chicken in a slightly warm oven while preparing the rest.

Using vegetable shortening rather than oil gives the crust a snappy crispness. Use some of the chicken bits, removed from the oil, to make my Cream Gravy recipe!

salt and black pepper
2 eggs
1/2 cup milk
1 teaspoon salt
1 1/2 cups flour
2 teaspoons salt

2 -3 inches shortening
paprika

Steps:

  • Rinse and dry the chicken parts with paper towels.
  • Sprinkle the chicken parts generously with salt and pepper.
  • Whisk thoroughly in a medium bowl the 2 eggs, 1/2 cup milk and the 1 t. salt.
  • Mix together on a plate: flour, 2 t. salt and 2 t. black pepper.
  • Heat the shortening in a deep, heavy pot or deep-fat fryer to 350 degrees.
  • Toss the breast meat pieces in the flour mixture and then moisten thoroughly in the egg mixture. Lift each piece out of the egg mixture, letting the excess drip off.
  • Roll in the flour mixture again until completely coated. Sprinkle each piece with paprika.
  • Then immerse into the hot oil. Fry for about 15 minutes or until cooked "through," turning the pieces several times.
  • Remove the pieces to a baking sheet lined with brown paper bag or paper towels. Hold in a warm oven.
  • Repeat the process with the thighs and drumsticks, frying those pieces for about 20 minutes.

150ml buttermilk
2 plump garlic cloves , crushed
4 x skinless, boneless chicken breasts (total weight 550g), preferably organic
50g Japanese panko breadcrumbs
2 tbsp self-raising flour
½ rounded tsp paprika
¼ rounded tsp English mustard powder
¼ rounded tsp dried thyme
¼ tsp hot chilli powder
½ tsp ground black pepper
3 tbsp rapeseed oil

Steps:

  • Pour the buttermilk into a wide shallow dish and stir in the garlic. Slice the chicken into chunky slices, about 9.5cm long x 3-4cm wide. Lay the chicken in the dish and turn it over in the buttermilk so it is well coated. Leave in the fridge for 1-2 hrs, or preferably overnight.
  • Meanwhile, heat a large, non-stick frying pan and tip in the panko crumbs and flour. Toast them in the pan for 2-3 mins, stirring regularly so they brown evenly and don't burn. Tip the crumb mix into a bowl and stir in the paprika, mustard, thyme, chilli powder, pepper and a pinch of fine sea salt. Set aside.
  • When ready to cook, heat oven to 230C/210C fan/gas 8. Line a baking tin with foil and sit a wire rack (preferably non-stick) on top. Transfer half the crumb mix to a medium-large plastic bag. Lift half the chicken from the buttermilk, leaving the marinade clinging to it. Transfer it to the bag of seasoned crumbs. Seal the end of the bag and give it a good shake so the chicken gets well covered (you could do all the crumbs and chicken together if you prefer, but it's easier to coat evenly in 2 batches).
  • Remove the chicken from the bag. Heat 1 tbsp of the oil in a large, non-stick frying pan, then add the chicken pieces and fry for 1½ mins without moving them. Turn the chicken over, pour in another ½ tbsp of the oil to cover the base of the pan and fry for 1 min more, so both sides are becoming golden. Using tongs, transfer to the wire rack. Repeat with the remaining seasoned crumbs, oil and chicken.
  • Bake all the chicken on the rack for 15 mins until cooked and crisp, then serve with the Crunchy coleslaw (see 'Goes well with', below right).

2 teaspoons salt

3 cups all-purpose flour
1/2 cup cornstarch

2 teaspoons onion powder
2 teaspoons garlic powder
1 teaspoon dried oregano

Steps:

  • In a large mixing bowl, whisk together buttermilk, hot sauce (optional, for added flavor), salt, and pepper in a mixing bowl. Add in chicken pieces. Cover the bowl with plastic wrap and refrigerate 4 hours.
  • When ready to cook, pour the vegetable oil in a skillet until it is about 3/4 inch deep. Heat to 350 degrees.
  • Prepare the breading by combining the flour, cornstarch, onion powder, garlic powder, oregano, basil, white pepper, cayenne pepper, paprika, and salt in a gallon sized resealable plastic bag or shallow dish. Mix it thoroughly.
  • Working one at a time, remove chicken pieces from buttermilk mixture. Shake it gently to remove the excess. Place it in the breading mix and coat thoroughly. Tap off the excess.
  • Place the breaded chicken into the 350 degree oil. Fry 3 or 4 pieces at a time. The chicken will drop the temperature of the oil so keep it as close to 350 degrees as possible. Fry each piece for 14 minutes, turning each piece about half way through, until the chicken reaches an internal temperature of 165 degrees F.
  • Remove from the oil and place on paper towels. Let them rest for at least 10 minutes before serving.

  • Combine flour, salt, and pepper in a medium bowl. Mix eggs and water together in a small bowl.

0.6 kg/1.3 lbs chicken thighs or legs, skin removed (about 6 pieces)
454g/ 1lb vegetable shortening/4 cups Cooking oil for frying
1 cup buttermilk
1 tablespoon salt
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon dried parsley or thyme
2 large eggs
2 cups all-purpose flour
2 tablespoons cornstarch
1 tablespoon salt
1 tablespoon cayenne pepper
1 tablespoon dried parsley
2 teaspoons onion powder

Steps:

  • Whisk buttermilk marinade ingredients together in a large mixing bowl.
  • Mix in the chicken thighs with this buttermilk marinade and wrap the top of the bowl with cling wrap. Refrigerate for at least 2 hours or, even better, overnight.
  • In a 10-inch cast iron skillet, unwrap the shortening and melt it completely using medium-high heat (or add cooking oil at least 3 inches deep and heat until the temperature is 350°F/175°C).
  • Fry chicken thighs for 8-9 minutes on each side until brown on both sides. Don't overcrowd the pan as that reduces the temperature of the oil so I like frying 3-4 pieces at a time.
  • Make sure the internal temperature of the chicken reads at least 170°F/76°C to avoid biting into a blood-filled chicken. Yes I've been there.
  • Once your chicken is ready, let it cool on a wire rack. Serve warm!

  • Heat the oil in a large cast iron skillet. Remove the chicken from the refrigerator and drain. Season the flour with Essence. In a shallow bowl, whisk the eggs with the remaining buttermilk. This is my favorite fried chicken recipe! Due to the labor intensiveness of it, I only make it for special occasions, but it is well worth the effort when i have the time. Maintaining an even oil temperature is key to the success of this recipe. An instant-read thermometer with a high upper range is perfect for checking the temperature; a clip-on candy/deep-fry thermometer is fine, though it can be clipped to the pot only for the uncovered portion of frying.

1 1/4 cups kosher salt or 1/2 cup plus two tablespoons table salt
1/4 cup sugar
2 tablespoons paprika
3 heads garlic, cloves separated
3 bay leaves, crumbled
2 quarts low-fat buttermilk
1 (3 1/2 lb) whole chickens (about 3 1/2 pounds, giblets discarded, cut into 12 pieces)
4 cups all-purpose flour
1 large egg
1 teaspoon baking powder
1/2 teaspoon baking soda
refined peanut oil (about 12 cups) or vegetable shortening (about 12 cups)

Steps:

  • In large zipper-lock plastic bag, combine salt, sugar, paprika, garlic cloves, and bay leaves.
  • With rubber mallet or flat meat pounder, smash garlic into salt and spice mixture thoroughly.
  • Pour mixture into large plastic container or nonreactive stockpot.
  • Add 7 cups buttermilk and stir until salt is completely dissolved.
  • Immerse chicken, cover with plastic wrap, and refrigerate until fully seasoned, 2 to 3 hours.
  • Remove chicken from buttermilk brine and shake off excess; place in single layer on large wire rack set over rimmed baking sheet.
  • Refrigerate uncovered for 2 hours. (After 2 hours, chicken can be covered with plastic wrap and refrigerated up to 6 hours longer).
  • Measure flour into large shallow dish.
  • Beat egg, baking powder, and baking soda in medium bowl; stir in remaining 1 cup buttermilk (mixture will bubble and foam).
  • Working in batches of 3, drop chicken pieces in flour and shake pan to coat.
  • Shake excess flour from each piece.
  • Then, using tongs, dip chicken pieces into egg mixture, turning to coat well and allowing excess to drip off.
  • Coat chicken pieces with flour again, shake off excess, and return to wire rack.
  • Adjust oven rack to middle position, set second wire rack over second rimmed baking sheet, and place on oven rack; heat oven to 200 degrees.
  • Line large plate with double layer of paper towels. Meanwhile, heat oil (oil should have 2 1/2-inch depth in pan) to 375°F over medium-high heat in large 8-quart cast-iron Dutch oven with a diameter of about 12 inches.
  • Place half of chicken pieces skin-side down in oil, cover, reduce heat to medium, and fry until deep golden brown, 6 to 8 minutes; after about 3 minutes, lift chicken pieces with tongs to check for even browning; rearrange if some pieces are browning faster than others. (Spot-check oil temperature; after first 6 minutes of frying, oil should be about 325°F Adjust burner if necessary).
  • Turn chicken pieces over and continue to fry, uncovered, until chicken pieces are deep golden brown on second side, 6 to 8 minutes longer.
  • Using tongs, transfer chicken to paper towel-lined plate; let stand 2 minutes to drain, then transfer to rack in warm oven.
  • Replace paper towel lining on plate. Return oil to 375°F and fry remaining pieces, transferring pieces to paper towel-lined plate to drain, then transferring to wire rack.
  • Cool chicken pieces on wire rack (outside oven) about 5 minutes and serve.
