These don't even have to rise before baking! Ideal if you are short on time and want fresh bread for dinner! Can be used to make rolls or a loaf of bread (I like to do round loafs on a cookie sheet). From http://craftykin.blogspot.ca/.

1 1/4 cups warm water
3 tablespoons sugar
1 1/2 tablespoons yeast
1 tablespoon oil
3 cups flour (can use white or wholemeal)
1 teaspoon salt
1/2 teaspoon baking powder

Steps:

  • Combine all ingredients in a stand mixer bowl and knead for 4 minutes.
  • Shape for use as buns or loaf.
  • Paint with oil or milk (if you can be bothered).
  • Bake at 400 degrees (10-15 minutes for buns, 30-40 minutes for loaf).

2 to 2-1/2 cups all-purpose flour
2 tablespoons sugar
1 package (1/4 ounce) quick-rise yeast
1/2 teaspoon salt
1/2 cup milk
1/4 cup water
2 tablespoons butter

Steps:

  • In a large bowl, combine 3/4 cup flour, sugar, yeast and salt. In a small saucepan, heat the milk, water and butter to 120° -130°. Add to dry ingredients; beat just until moistened. Stir in enough remaining flour to form a soft dough. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Cover and let rest for 10 minutes., Divide dough into 12 pieces; shape each piece into a roll. Arrange in a greased 9-in. round baking pan. Cover and let rise until doubled, about 35 minutes. , Bake at 375° for 20-25 minutes or until golden brown. Remove from pan to a wire rack to cool.

2 (1/4 ounce) packages active dry yeast
3 tablespoons granulated sugar, divided
1/2 cup warm water (105-115 degrees)
1 1/4 cups milk
5 cups bread flour
1 1/2 teaspoons salt
2 tablespoons butter or 2 tablespoons margarine, cut into pieces

Steps:

  • Combine yeast, 1 Tablespoon sugar, and warm water in a 2-cup liquid measuring cup; let stand 5 minutes. Add milk to yeast mixture and stir.
  • In a food processor, combine flour, salt, remaining 2 Tablespoons sugar, and butter or margarine. Pulse until thoroughly incorporated. With food processor running, slowly drizzle yeast mixture through feed tube until ball forms. Run machine for about 2 minutes to knead dough thoroughly.
  • Remove dough from processor and place in a well greased bowl, turning to coat top. Cover and let stand in a warm place for 15 minutes.
  • Punch down dough. Divide dough in half; shape one portion of dough into 12 balls. Place in a greased 8 or 9-inch square pan. Repeat with remaining half of dough. Cover pans and let rise in a warm place for 15 minutes.
  • Bake at 425°F for 10-15 minutes or until rolls are golden brown.

I made these one time to go with soup that we were having for dinner. I made the dough balls too big and/or let them rise too much and they ended up being huge, but they were good and they were easy to make.

2 tablespoons very warm water
1/3 cup oil
1/4 cup sugar
2 tablespoons yeast
1 teaspoon salt
1 egg, beaten
3 -4 cups flour

Steps:

  • Mix warm water, oil, sugar and yeast; let rest for 10 minutes until yeast activates.
  • Add salt and beaten egg; blend well.
  • Add flour, one cup at a time until soft dough if formed.
  • Knead on a floured surface 5-10 minutes or until dough is smooth and elastic.
  • Shape into small balls (walnut sized) and put into a greased baking pan.
  • Let rise at least 5-10 minutes.
  • Bake at 425 degrees for 15-20 minutes.
  • *If you have more time, you can let the rolls rise in the pan until they have doubled in size.

This recipe comes from "Dining on a Dime" by Tawra Kellam and has become my recipe of choice for making rolls and pocket sandwiches. *I have made some very minor adjustments to this but it is essentially Tawra's recipe. Gotta give credit where credit is due!

2 -2 1/2 cups flour (may need more)
1/2 teaspoon salt
2 tablespoons sugar
1 tablespoon yeast
1/2 cup milk
1/4 cup water (I use all milk)
2 tablespoons margarine (I use butter)
oil
melted butter

Steps:

  • Melt butter in small saucepan. Add milk and water and heat until very warm, 120-130 degrees.
  • While milk is heating, mix 3/4 cup flour, sugar, yeast and salt.
  • Add warmed milk/butter to dry ingredients and beat for 2 minutes on medium speed.
  • Add 1/4 cup flour and beat 2 minutes on high.
  • Stir in enough flour to make a stiff dough. Knead 2-3 minutes.
  • Place in greased bowl and let rise for 15 minutes.
  • Divide into 12 pieces and shape into balls.
  • Place in 8 inch cake pan, brush with oil, and let rise for 15 minutes.
  • Bake at 375 degrees for 20-25 minutes or until golden brown.
  • Brush with melted butter and enjoy!

Very quick and simple. Nothing is better than fresh hamburger buns. This is a very sticky dough that requires very little kneading.

2 tablespoons fast-rising yeast
¼ cup white sugar
2 cups warm water
2 tablespoons vegetable oil
6 cups all-purpose flour
2 teaspoons salt
1 egg white
2 tablespoons water

Steps:

  • In a large mixing bowl, dissolve yeast and sugar in warm water. Let stand until creamy, about 10 minutes.
  • Add oil, 2 cups of flour and the salt; stir well to combine. Add the remaining flour, 1/2 cup at a time, stirring well after each addition. When the dough has pulled together, turn it out onto a lightly floured surface and knead until smooth and elastic, about 8 minutes. Lightly oil a large bowl, place the dough in the bowl and turn to coat with oil. Cover with a damp cloth and let rise in a warm place until doubled in volume, about 40 minutes.
