1 1/2 pounds boneless skinless chicken breasts
1/2 cup all-purpose flour
1/4 cup milk
1 pinch cayenne pepper
4 large eggs
Kosher salt and freshly ground black pepper
2 cups panko breadcrumbs
Vegetable oil, for shallow frying
Honey mustard, spicy ketchup and/or ranch dressing, for serving

Steps:

  • Cut the chicken lengthwise into 3/4-inch-wide strips. Put the flour in a shallow dish. Whisk the milk, cayenne, eggs and a pinch of salt and pepper in another shallow dish until combined. Put the breadcrumbs in a third shallow dish.
  • Dredge the chicken fingers in the flour, shaking off the excess, then dip into the egg mixture, and finally coat with the panko breadcrumbs, pressing to help adhere well. Set aside on a piece of wax paper or a baking sheet.
  • Heat about 1/2 inch of oil in a large skillet over medium-high heat. Working in batches, fry the chicken fingers, turning occasionally, until golden brown and cooked through, about 3 minutes. Transfer the chicken fingers to a paper towel-lined plate to drain and season with salt. Serve with honey mustard, spicy ketchup and/or ranch dressing for dipping.

IDAHO-STYLE FINGER STEAKS

These golden and crispy deep-fried steak strips are what happens when chicken-fried steak meets chicken fingers. We like them dipped in a homemade "fry sauce" or bottled cocktail sauce, but ranch dressing would be great too.

1 pound boneless beef sirloin or cube steak (about 1/2-inch thick)
2 cups buttermilk
1 teaspoon Worcestershire sauce
Kosher salt and freshly ground black pepper
2 teaspoons granulated garlic
2 teaspoons dry mustard
2 teaspoons sweet paprika
Vegetable oil, for frying
2 cups all-purpose flour
Cocktail sauce, for serving, optional
French fries, for serving, optional
1/3 cup mayonnaise
1/3 cup ketchup
1 teaspoon Worcestershire sauce
1 teaspoon apple cider vinegar
1/2 teaspoon sweet paprika
Kosher salt and freshy ground black pepper

Steps:

  • For the finger steaks: Trim the excess fat and silver skin from the steak and cut into strips about 1/2 inch wide and 2 to 3 inches long.
  • Whisk together the buttermilk, Worcestershire, 2 teaspoons salt and 1 teaspoon each pepper, granulated garlic, dry mustard and paprika in a large bowl. Add the steak strips to the buttermilk mixture, toss to coat, then cover and refrigerate for 2 hours.
  • For the fry sauce: Meanwhile, whisk together the mayonnaise, ketchup, Worcestershire, vinegar, paprika, a good pinch of salt and several grinds of pepper in a medium bowl until smooth and combined. Cover with plastic wrap and refrigerate until ready to serve, up to 2 days.
  • Fill a large Dutch oven with about 3 inches of oil. Attach a deep-fry thermometer and heat to 350 degrees F.
  • Whisk together the flour, 2 teaspoons salt and the remaining 1 teaspoon each pepper, granulated garlic, dry mustard and paprika in a shallow dish. Line a plate with paper towels.
  • Remove the meat from the marinade to a plate using a slotted spoon. Reserve the buttermilk mixture in the bowl. In batches, dredge the steak strips in the seasoned flour, then into the buttermilk mixture, and back again into the seasoned flour until well coated.
  • Place a few battered steak strips in the hot oil. Fry, stirring occasionally, until golden brown and crispy, about 4 minutes. Remove with a clean slotted spoon onto the prepared plate. Repeat with the remaining steak strips.
  • Serve the steak fingers with fry sauce, cocktail sauce and French fries if desired.

CORN DOG-BATTERED CHICKEN FINGERS

2 cups all-purpose flour
1 cup yellow cornmeal
1/4 cup sugar
1 1/2 teaspoons chipotle chile powder
1 teaspoon baking powder
Kosher salt
1 1/2 cups milk
3 large eggs
Vegetable oil, for frying
2 large skinless, boneless chicken breasts (about 1 1/4 pounds), each cut on a diagonal into 8 strips

Steps:

  • Make the sauce: Whisk the mayonnaise, mustard and honey in a small bowl. Refrigerate until ready to serve.
  • Make the chicken fingers: Put 1/4 cup flour in a shallow dish; set aside. Whisk the remaining 1 3/4 cups flour, the cornmeal, sugar, chile powder, baking powder and 1 teaspoon salt in a large bowl. Make a well in the center and add the milk and eggs. Whisk until smooth.
  • Set a rack on a baking sheet. Heat 1 1/2 inches vegetable oil in a medium Dutch oven or heavy pot over medium heat until a deep-fry thermometer registers 350˚ F. Working in batches, season the chicken with salt, dredge in the flour, shaking off any excess, then dip in the batter. Fry until golden brown and cooked through, about 5 minutes. (Adjust the heat as needed to maintain the temperature.) Remove to the rack to drain. Serve with the sauce.

1 egg, beaten
1 cup buttermilk

1 cup seasoned bread crumbs

1 teaspoon baking powder
1 quart oil for frying

Steps:

  • Place chicken strips into a large, resealable plastic bag. In a small bowl, mix the egg, buttermilk and garlic powder. Pour mixture into bag with chicken. Seal, and refrigerate 2 to 4 hours.
  • In another large, resealable plastic bag, mix together the flour, bread crumbs, salt and baking powder. Remove chicken from refrigerator, and drain, discarding buttermilk mixture. Place chicken in flour mixture bag. Seal, and shake to coat.
  • Heat oil in a large, heavy skillet to 375 degrees F (190 degrees C).
  • Carefully place coated chicken in hot oil. Fry until golden brown and juices run clear. Drain on paper towels.

10 chicken tenderloins (sliced chicken breast)
1 cup flour
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon pepper
1 egg
1 cup water
1/2 cup flour, for dredging
oil (for deep frying, need a deep fryer)
1/4 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons honey

Steps:

  • Sauce: Combine all ingredients, you can adjust any of the ingredients to suit your taste. Sauce can be doubled.
  • Heat oil in fryer to 350 degrees F.
  • Whisk egg and water medium bowl.
  • Whisk in flour, baking powder, salt, and pepper. Let the batter sit for a few minutes.
  • Coat each piece of chicken with dry flour.
  • Dip the chicken into the batter and let a little batter drip off the chicken.
  • Once the excess batter has dripped off add to fryer.
  • Fry for 7 to 9 minutes (ensure chicken is cooked to an internal temperature of 165 degrees).
  • Repeat with the remaining chicken, frying 3 to 4 tenderloins at a time.

Believe it or not, the best beer batter isn't made with beer! It's actually done with sparkling apple cider, which produces a light, beautifully crispy, and very flavorful coating. Not to mention it's super easy.

4 (8 ounce) skinless, boneless chicken breast halves
1 teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 pinch cayenne pepper
2 tablespoons all-purpose flour
1 cup self-rising flour
1 ¼ cups sparkling apple cider
1 quart canola oil for frying
⅓ cup Dijon mustard
2 tablespoons seasoned rice vinegar
1 teaspoon hot sauce
1 pinch white sugar, or to taste

Steps:

  • Cut each chicken breast into 6 finger-sized strips, and transfer into a mixing bowl.
  • Season with kosher salt, black pepper, and cayenne and toss until evenly coated. Sprinkle the all-purpose flour over top and shake the bowl to coat the strips. Toss until all the surfaces are completely coated, and then transfer onto a rack or plate. Place in the refrigerator, uncovered, for at least 10 minutes, or until ready to fry.
  • Meanwhile, whisk self-rising flour and sparkling apple cider together in a mixing bowl to form a thin batter. Batter should be somewhere between a thin pancake batter and a crepe batter, but still thick enough to coat the back of a spoon. Place in the refrigerator to rest for 5 to 10 minutes before using.
  • Mix Dijon mustard, vinegar, hot sauce, and sugar together for dipping sauce in a bowl.
  • Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
  • Dip each chicken finger into the batter to coat. Deep-fry in batches in the hot oil until golden brown, crispy, and no longer pink in the centers, 3 to 4 1/2 minutes. Drain on paper towels and serve immediately with dipping sauce.
