- In a small bowl, combine the first five ingredients; set aside. In a large skillet, saute the chicken, garlic and ginger in oil for 5 minutes. Add peanut butter mixture. Bring to a boil. Reduce heat; simmer, uncovered, for 5 minutes or until chicken juices run clear, stirring frequently., Serve with rice; sprinkle with green onions if desired.

- Sprinkle both sides of chicken with pepper,salt lightly.
- Melt the butter in a 10-inch skillet over medium heat.
- Cook chicken in the butter for 15 to 20 minutes, turning once, until juice is no longer pink when centers of thickest pieces are cut.
- Remove chicken from skillet and keep warm.
- In same skillet, add the peanut butter and last 6 ingredients.
- Heat over mdium heat, stirring frequently, until hot and slightly thickened.
- Divide the shredded cabbage on 2 serving plates, top with chicken and sauce.
- Garnish each serving with diced red pepper.

- Allow the chicken to sit at room temperature for 1 hour so you're not working with cold chicken.
- Place a large, rimmed sheet tray on the counter or in a warm oven. Line with paper towels, and place a cooling rack on top of the paper towels. This is where you will drain your cooked chicken.
- In a large bowl or shallow dish, whisk together the flour, salt, pepper, paprika, garlic powder, and baking powder.
- In a separate large bowl or shallow dish, whisk together the eggs and water.
- In a large cast iron skillet, pour enough oil to come about halfway up the side of the skillet. Heat the oil to 350F. Check and maintain the temperature with a deep-fry or candy thermometer.
- Using a paper towel, pat the chicken dry, and then dredge in the flour mixture. Dip into the egg mixture, and then back into the flour mixture to ensure a thick and even coating.
- Gently place the coated chicken into the hot oil, and cook until the breading is golden brown and the chicken registers 165F on a meat thermometer. Turn the chicken 1 or 2 times during cooking to ensure the coating is evenly browned. The time will vary depending on the size of your chicken pieces. A large, bone-in, chicken breast will take about 10-15 minutes. A smaller, boneless, chicken tender will take about 7-10 minutes. Cook a test piece of chicken first, and then cut open with a sharp knife to ensure there is no pink juice or meat.
- Remove the cooked chicken from the oil, and place on the prepared cooling rack to rest 10 minutes before serving.

- To make the dipping sauce, in a bowl, stir together the apricot preserves, soy sauce, ketchup, and Worcestershire sauce. Divide amont 4 small bowls or ramekins (optional- I just put it in one bowl and share with my husband).
- Season the chicken breasts with salt and pepper. Spread the flour on a plate, beat the eggs in a shallow bowl until blended, and spread the bread crumbs on another plate. One at a time, dredge each chicken breast in the flour, dip in the eggs, and then coat evenly with the crumbs. Set aside on a rack or baking sheet.
- In a large frying pan, heat the oil over medium-high heat until very hot but not smoking. Add the chicken breasts and reduce the heat to medium. Cook, turning once, until the crumbs are golden brown and the chicken breasts feel firm when pressed in the centers, about 4 minutes on each side. Adjust the heat as needed so the crumbs don't burn. Transfer to a cutting board.
- Cut each chicken breast across the grain into wide strips. Slide a knife under the strips and transfer to warmed individual plates. Serve immediately with the dipping sauce.
CHICKEN FINGERS WITH PEANUT APRICOT SAUCE
If you do not have coriander on hand you can use ½ tsp dried basil. Also, orange marmalade can be used in lieu of the apricot jam.

- Slice each breast lengthwise into 4 equal strips.
- In shallow bowl, whisk egg with cold water.
- In another shallow bowl, combine bread crumbs, coriander, Cajun seasoning and salt.

- Spray 2 baking sheets with Pam. Beat egg whites with water in one pan. Mix flour, seasoning salt, pepper, garlic, salt and crushed rice cereal in another pan. Dip chicken strips in egg white, roll in cereal mixture and place on baking sheet. Spray with additional Pam to lightly coat chicken. Bake at 400 degrees for 20 minutes or until crispy.

- Add the garlic and ginger to the bowl of a food processor and process for 30 seconds or until minced. Add the coconut milk, peanut butter, lime juice, brown sugar, fish sauce, sesame oil and red pepper sauce. Process until smooth, about 30 seconds to 1 minute. Scrape into a bowl and set aside.
- Put the skinned and separated wings into a gallon size freezer bag and add 3/4 cup of the peanut sauce. Close the bag and massage the peanut sauce into the chicken wings. Add 1/4 cup more sauce if needed. Refrigerate for 2 hours up to 12 hours.

- Put in all of the chicken satay ingredients into a large dish, excluding the chicken. Using a hand whisk, mix the ingredients together until you have a smooth marinade.
