Time 25m

Number Of Ingredients 20

1/2 block of Extra Firm Tofu, cut into 1/2 inch cubes (or sub for chicken or shrimp)
1 tablespoon coconut oil
1 tablespoon sweet chili sauce (optional)
1 cup cooked thick flat rice noodles
2 cups romaine lettuce, chopped
1 carrot, cut into matchstick pieces
1/2 cucumber, cut into matchstick pieces
1/2 cup cherry tomatoes, halved
1/2 cup pea shoots or bean sprouts
1 green onion, chopped
2 tablespoons chopped cilantro
1 tablespoon sesame seeds (optional, as a garnish)
1 clove garlic, minced
1 tablespoon fresh ginger, minced
2 tablespoons lemongrass, minced (I used fresh, you can also use prepared lemongrass paste)
1 teaspoon chili flakes
1 tsp ground turmeric
4 tablespoons gluten free soy sauce or tamari
2 tablespoons fresh lime juice
1 tablespoon raw honey (or 1 tablespoon coconut palm sugar, for vegan)

Steps:

  • In a small bowl combine all ingredients for the lemongrass dressing, whisk together and set aside.
  • Cook the rice noodles according to package instructions.
  • Once cooked, drain noodles in a colander and rinse under cold water until chilled, then transfer to a bowl.
  • Add 2 tablespoons of the dressing to the noodles and toss to coat, then set dressed noodles aside.
  • In a small bowl, toss tofu cubes with the coconut oil, sweet chili sauce, and 1 tablespoon of the dressing mixture.
  • Heat a non-stick pan over medium to high heat and add in tofu, then saute until browned and crispy on all sides, around 5-minutes.
  • Assemble the salad by dividing the romaine lettuce between two bowls and topping each with the dressed rice noodles.
  • Next, layer over the crispy tofu, carrot, tomato, cucumber, and sprouts, then drizzle with the dressing and sprinkle with the green onion, cilantro, and sesame seeds.
  • Enjoy!

THAI SHRIMP LEMONGRASS SALAD

Thai Shrimp Lemongrass Salad image

The Thai chili paste is sweeter and has lemongrass in it. You may find it in your local Asian store, or even from your local Thai restaurant. To make regular chili paste, sauté oil with yellow onion and garlic until soft, then add chili powder and paprika for color. I would grill the shrimp for extra flavor. This makes a small appetizer for 2 people, or a nice sized one for one.

PLA GOONG (SPICY THAI SHRIMP SALAD)

Pla Goong (Spicy Thai Shrimp Salad) image

This dish is somewhere between a shrimp salad and a ceviche - just-cooked shrimp dressed with a sour-savory-sweet mixture of lime, fish sauce, and sweet chile paste, then showered with herbs and chiles. In classic Thai fashion, it's combination of many tastes, each moment on your palate different from the next. It's a favorite of Pornpong Kanittanon, the Consul General of Thailand in New York, and the recipe is adapted from his wife, Jaisamarn.

Categories     main course

Time 35m

Yield 2 to 4 servings

Number Of Ingredients 13

Salt (optional)
3 ounces lime juice (from about 3 limes)
3 tablespoons fish sauce
1 1/2 tablespoons sugar
2 tablespoons nam prik pao (Thai chile paste in oil)
2 finely chopped Thai bird chiles, or to taste
1 pound large shrimp (1 1/2 pounds if heads-on)
2/3 cup very thinly sliced lemongrass (see note)
1 large shallot, thinly sliced
1/2 cup roughly chopped cilantro
1/2 cup whole mint leaves
6 makrut lime leaves, finely shredded
Jasmine rice, for serving

Steps:

  • Bring a pot of 3 quarts of water to a boil. (I like to salt the water like pasta water; Kanittanon does not add salt.)
  • In a large bowl, combine the lime juice, fish sauce, sugar, nam prik pao and chopped chiles. Taste, and adjust with any of the ingredients, including salt. The sauce's flavor should be led by sourness and savoriness, but with a good balance of sweetness and heat.
  • Cook the shrimp in the water until it just turns opaque, medium or medium-rare, about 1 minute. For better flavor, cook the shrimp with heads or shells on; peel when just cooled enough to handle.
  • Add the shrimp to the sauce while still warm and toss; the lime will continue to "cook" the shrimp like a ceviche. Add the lemongrass, shallot, cilantro, mint leaves and makrut lime leaves, reserving a little of each herb for garnish. Toss, and place on a dish; scatter the reserved herbs on top. Serve immediately with hot rice.

GRILLED SHRIMP SALAD WITH LEMONGRASS AND CHILES

Grilled Shrimp Salad with Lemongrass and Chiles image

Categories     Salad     Pepper     Shrimp     Summer     Grill/Barbecue     Lemongrass     Gourmet

Yield Serves 4 as a first course

Number Of Ingredients 13

1 lb jumbo (8 to 12 per lb) shrimp
2 teaspoons sea salt dissolved in 1 cup water
4 to 8 (1- to 2-inch) fresh red Thai chiles, minced
2 fresh serrano or jalapeño chiles (preferably red), minced
1 tablespoon minced garlic
3 tablespoons Asian fish sauce (preferably Thai naam pla)
3 to 4 tablespoons fresh lime juice
2 to 3 teaspoons sugar
2 stalks fresh lemongrass
2 small shallots, halved lengthwise and thinly sliced crosswise (1/4 cup)
2 scallions (white parts and half of greens), thinly sliced
1/2 cup fresh mint leaves, torn into pieces
Accompaniments: green-leaf lettuce, sliced tomato, and fresh cilantro or mint sprigs

Steps:

  • Prepare grill for cooking.
  • Soak shrimp (still in shells) in salt water 5 minutes, then rinse well in a colander.
  • Pound all chiles with garlic to a coarse paste with a mortar and pestle and stir in fish sauce and lime juice and sugar to taste. Transfer to a large bowl.
  • Snip shells of shrimp with scissors down center of back, from wide end to second-to-last tail section. Butterfly shrimp in their shells, making a deep incision along length of back where shells are cut, and devein.
  • Discard tough outer leaves of lemongrass and trim root ends. Thinly slice lower 6 inches of stalks.
  • Grill shrimp on their sides on an oiled rack set 5 to 6 inches over glowing coals until shells are pink and slightly charred and shrimp are just cooked through, 3 to 4 minutes on each side. (Alternatively, grill shrimp in a hot well-seasoned ridged grill pan over moderate heat.)
  • Toss shrimp (with shells still on) with chile mixture and stir in sliced lemongrass, shallots, scallions, and mint.
  • Serve on a bed of lettuce and tomato with cilantro or mint.

Estimated Reading Time 6 mins
  • Clean and peel shrimp, defrosting if needed. Lately we've been buying frozen, deveined, easy-peel shrimp. All I have to do is defrost, peel, and cook! You can also buy frozen raw shrimp already peeled if you'd like.
  • Chop/shred your romaine and cabbage. Thin small pieces are best here since we're going for that chopped salad vibe! Grab your matchstick carrots and give them a rough chop as well. Trim the edges then slice radish into matchsticks and chop your cucumber in to bite-sized pieces. Slice sweet mini peppers, discarding the stem. Combine all your veggies in a large bowl and set aside.
  • Heat a large pan or skillet to medium-high heat with 1 TBSP of oil and sauté your shrimp. Season with turmeric and sea salt. Cook on each side for about 2 minutes until shrimp curl and become opaque. The cook time will depend on the heat setting you choose and the size of your shrimp, but regardless they’ll be perfectly cooked in a matter of minutes. Add garlic towards the end and cook until fragrant. Lastly, add ginger and lemongrass and stir to coat/season the shrimp. Once it's all hot and ready, remove from heat.

  • Start by dry roasting your cashews and dried shrimp. Heat a large flat pan over medium heat, and add these ingredients, separately, stirring around the pan until they are toasted on both sides. Remove and set aside.
  • Heat a pot of water over medium heat until it is simmering. Add the shrimp and allow them to cook through, removing as soon as they are done. Then add the ground pork to the pot, again allowing to cook through, stirring occasionally to break up large chunks. Remove from the pot and set aside.
  • Slice the lemongrass as finely as possible, using only the tender part of the stalks. Slice the shallots and red Thai chili finely, and coarsely chop the mint and cilantro.
  • Combine the fish sauce, lime juice, and palm sugar in a small bowl, stirring until the palm sugar is dissolved into the mixture. Taste and adjust the flavors as needed to suit your palate.
