BUTTERMILK ONION RINGS

- In a large shallow bowl, toss onions with buttermilk. In another large bowl, whisk together flour, cayenne, 1/2 teaspoon salt, and 1/4 teaspoon ground pepper. Sprinkle 1/2 cup flour mixture evenly on a rimmed baking sheet; set aside.
- In a 5-quart heavy-bottom saucepan, heat oil until a deep-fry thermometer registers between 325 and 350 degrees. Lift rings out of the buttermilk (letting excess drip off); toss with remaining flour mixture to coat. Place on floured sheet.
- Working in small batches, carefully place coated rings (shaking off excess flour) into hot oil. Cook until golden, gently turning with tongs, 2 to 3 minutes. Transfer rings to a paper-towel-lined baking sheet. Repeat with remaining rings.

- Cut the onions in 1/4" slices. In a glass dish, soak the onions in the buttermilk for 30 to 60 minutes.
- In a brown paper sack, combine the flour, cornmeal, salt, onion powder, chili powder, and if needed, sugar. Drain the onions lightly and dredge them in the seasoned flour.
- Pour at least 4" of oil into a heavy saucepan. Heat the oil to 375°. Fry the onions, in batches, for 2 to 3 minutes, or until golden. For the crispiest results, drain on paper towels and spread on a serving plattter rather than piling them into a basket, where they could become soggy. Serve immediately.

CRISPY BUTTERMILK ONION RINGS
Steps:
- Slice onion into 1/4 inch slices and separate into rings. (Keep only the firm, large rings)
- In a large bowl, combine flour, baking powder, cornstarch, paprika, onion powder, sugar, salt, and black pepper.
- Coat rings in the flour mixture and set aside.
- Add egg into the leftover flour mixture.
- Add in enough buttermilk to create a thick batter.
- Dip coated rings into the batter and let excess batter drip off.
- Coat in crushed croutons until completely covered.
- Heat oil (about 375 F.) and fry until golden, flipping once.
- Let drain on cooling rack (with paper towel underneath)
- Salt lightly as soon as the rings come out of the oil, optional
- Serve immediately.
CRISPY VIDALIA ONION RINGS IN BUTTERMILK BATTER

- In a 3-quart pot, preheat 4-inches oil to 375 degrees F.
- In a shallow bowl, combine flours, cayenne, paprika, salt, and white pepper. Pour the buttermilk into another shallow dish.
- Toss the onion rings in the flour mixture and shake off excess flour. Add to buttermilk mixture and make sure the rings are thoroughly coated. With a clean hand, add rings to flour mix again and shake off any excess flour.
- Begin to fry in preheated oil in small batches, 1/4 of total amount at a time. Cook onion rings for about 3 to 5 minutes, turning occasionally with metal tongs or slotted spoon, until crispy and browned. Drain on paper towels and keep in warm place (low oven, about 200 degrees F) until ready to serve. Sprinkle with extra salt, if needed.
- In a heavy-bottomed saucepan, sweat onions and garlic in olive oil until translucent. Add peppers and vegetable stock and stew until 1/2 of stock has evaporated. Add spices and chiles. Cover with vinegar and wine. Allow to cook, uncovered, until most of the liquid has evaporated. Let cool, then puree in a food processor, and season with pepper and salt, to taste.

BUTTERMILK ONION RINGS

- Fill a fryer or large Dutch oven with 2 inches vegetable oil; heat to 330 degrees F to 340 degrees F. Prepare the batter: Whisk the all-purpose flour, rice flour, parmesan, mustard powder, paprika, garlic powder and 2 tablespoons salt in a large bowl. Whisk the buttermilk, beer and dijon mustard in a separate large bowl. Add all but 1 cup of the wet ingredients to the dry ingredients and whisk to make a smooth batter, similar to a pancake batter.
- Test 1 onion ring: Dip in the batter and fry until golden brown, about 2 minutes. If the batter is still not cooked through, then it is probably too thick; add a splash more of the wet ingredients to the batter. (You may also need to add more of the wet ingredients to the batter as it sits.)
- Working in batches, dip the remaining onion rings in the batter and fry until golden brown, about 2 minutes. Remove with a slotted spoon and transfer to a rack. Immediately sprinkle with more parmesan.
CRISPY ONION RINGS

- Put the onions in a large bowl and cover with milk. Let soak for 30 minutes.
- Meanwhile, using a fine-sieve over a large bowl, sift together the flour, baking powder, 2 teaspoons salt, chili powder, and cumin, if using. Stir in the beer until a smooth batter is formed. Set aside.
- Drain the onions and transfer to a paper towel-lined baking sheet. Blot the onions with paper towels until dry.
- In a large, wide heavy-bottomed pot, pour in the oil to a depth of about 2 inches. Place over medium heat and heat to 400 degrees F. (The oil must be heated to 400 degrees F. since the temperature drops oil to about 375 degrees F. when the onions are added.)
- Working in batches, transfer about 8 to 10 of the onions to the batter and mix to coat well. Using tongs, pull several of the onions out of the batter, and let any excess batter fall back into the bowl. Carefully add to the oil and fry, flipping once, until golden brown and crispy, about 3 1/2 minutes per batch. Using the tongs, transfer to a dry paper towel-lined baking sheet to drain. Sprinkle with salt to taste. Repeat with the remaining onions. Serve immediately.
OVEN FRIED ONION RINGS

- Preheat the oven to 450 degrees F. Place parchment paper onto 2 baking sheets and set aside.
- In a small bowl, combine the flour, paprika and 2 teaspoons salt. In another bowl or shallow dish, whisk together the buttermilk and eggs. Add half of the flour mixture to the buttermilk and beat until smooth and thickened.
- In a separate bowl, combine the panko, olive oil and remaining 2 teaspoons salt.
- Lightly dredge the onion rings in the flour mixture and then drop into the buttermilk. Drain the excess batter and then dredge in the panko mixture.
- Arrange on the prepared baking sheets in a single layer. You can place smaller rings inside bigger rings if necessary, just make sure there is space between them. Then place in the oven. Cook until golden brown, 14 to 20 minutes. Halfway through the cooking time, flip over each onion ring to ensure even crisping and browning.

CRISPY OVEN BAKED ONION RINGS
I am trying to stay healthy, but sometimes you like a burger and some onion rings, right?!?! Well, here's what I came up with for the onion rings. I have used all panko bread crumbs when I didn't have any baked potato chips, and all baked potato chips when I felt naughty, and they are all good. I usually just make this recipe for the 2 of us, and we don't have many leftover if any.....and my husband doesn't normally order rings when we are out! Let me know which way you like best :)

- Preheat the oven to 450 degrees F.
- Line a baking sheet with aluminum foil for easy clean-up and spray it slightly with oil and set aside.
- Place potato chips and panko bread crumbs in the bowl of a food processor and process into crumbs, about 20 seconds. Transfer to a shallow bowl, add cayenne, and set aside.
- In another bowl, combine buttermilk, 2 tablespoons of flour, salt and pepper and set aside.
- Slice onions into 1/2-inch circles and separate into rings, keeping only large, whole rings (reserve rest of onions for other uses). You should come out with about 12 to 14 rings.
- Place the remaining flour in a sealable plastic bag, then add onions, and shake to coat.
- Dip onions 1 at a time into the buttermilk mixture, then dip into potato chip mixture and place on baking sheet. NOTE: For those having problems with the coating not sticking, the secret is LET THEM REST! Don't just throw them in the oven from the coating! Give them at least 5-10 minutes to soak in all that good coating you just put on and they'll stick just fine.
- Spray canola oil evenly over rings and bake for 20 minutes, or until coating is crisp. Season with salt, to taste, and serve immediately.
HOMEMADE ONION RINGS
These delicious onion rings take a bit of work, but they are worth the effort, as they make an excellent appetizer or side dish. So there is no need to head to a restaurant to order fried onion rings, you can make them at home---all you need is a little know-how and some friends to share them with you!

- Add enough oil to a Dutch oven so that it comes halfway up the sides of the pot. Heat over medium heat until it reaches a temperature of 375 degrees F (190 degrees C).
- Meanwhile, combine buttermilk, flour, egg, baking powder, paprika, celery salt, parsley, hot sauce, salt and pepper in a large bowl. Whisk until ingredients are combined and batter is very smooth.
- Separate onion slices into rings and dip each one in batter. Shake excess batter off rings and lower them carefully into the hot oil, in batches if necessary. - In a small bowl whisk together buttermilk and eggs.
- In a bowl mix together the coating mixture, then place into a shallow dish (a shallow dish makes for easier coating of the rings).
- Dip/coat the onion rings into the buttermilk mixture.
- Then coat generously into the dry coating mixture.
- Fry briefly in hot oil (turning once) until onion rings are lightly brown on both sides.
