CRISPY BAKED GOLDFISH® CRACKER FISH STICKS
Steps:
- Preheat the oven to 425 degrees.
- Pour the Goldfish® crackers in a zip top bag and crush with a mallet or rolling pin until a fine crumb forms. Place the crushed crackers in a pie plate or shallow bowl.
- Place the flour in a pie plate or shallow bowl. Whisk in the salt and pepper, set aside. Place the milk in another shallow bowl and set aside.
- Dredge the fish in the flour, then the milk and coat with the cracker crumbs. Place the coated fish on a baking sheet coated with cooking spray (I like to line my baking sheet with foil for easy clean up.) Repeat with the remaining fish. Transfer the fish to the oven and bake for 10-12 minutes or until cooked through.
- Serve immediately.

Steps:
- Pulse the flour, butter, cheese, salt, and pepper together using a food processor until the mixture resembles coarse meal.
- Pulse in 3 to 4 tablespoons of water, one tablespoon at a time, and only enough so that the dough forms a ball and rides the blade.
- Remove, wrap in plastic, and chill for 20 minutes or up to 24 hours.
- Roll the dough out on a cookie sheet to 1/8-inch thickness. (If you roll it thicker, it will still work, but the crackers won't be quite as crunchy.).
- Using a pizza cutter slice dough into 1 inch squares or using a cookie cutter cut out as many crackers as possible.
- Bake at 350 F until golden and crisp - 15 to 20 minutes.

YUMMY CRISPY BAKED FISH
Easy and healthier way to get crispy tasty fish. NOTE: you MUST use the right pan! Please be sure to use a broiler pan so the breading gets hot air on the bottom too and isn't soggy on the bottom when you go to turn it. OR use a cooling rack on a cookie sheet. Do not use a pan with sides as that will steam the fish, not make it crispy. I have never had the breading fall off using the correct methods. If you don't care for cornmeal use panko. I have used mostly mild whitefish like catfish or tilapia with great results. Don't be scared by the number of ingredients-it is mostly spices and herbs. Please adjust the spices, especially salt, to your taste. I have tried to post a balanced blend here but feel free to adjust mild, spicy, lower sodium etc...

Steps:
- Mix milk, vinegar and mustard and let set for 15 minutes. This will make a mustardy, buttermilky dressing to coat the fish.
- In a separate bowl mix cornmeal or panko with all the seasonings.
- Dip fish fillets in the milk mixture and then in the dry mixture.
- Spray broiling pan with cooking spray or brush with a little olive oil.
- Place fillets on prepared pan and place pan under broiler 4 inches from heat.
- Broil for 4 minutes per side or until fish flakes easily with a fork. (Thicker filets will take longer. This timing is for tilapia)
- Serve with lemon wedges if desired.
MY SPECIAL CRISPY BAKED FISH
I adapted this recipe from Better Homes & Gardens. It is much healthier than pan frying fish and tastes just as good. This recipe works great on any fish fillets. My husband and I fish often and this works well with either frozen or fresh fillets. We have used it with trout, bass, and catfish.

Steps:
- Rinse and pat dry fish. Cut into 4 serving size pieces if needed.
- Measure thickness of each piece. This will determine cooking time.
- Create an assembly-type line with milk in one dish, flour in another.
- In the last dish, combine bread crumbs, parmesan, dill, and black pepper. Add melted butter, stir until forms small crumbs.
- Dip fish in milk (this helps the flour stick to fish).
- Then dip in flour.
- Dip again in milk.
- Then dip into bread crumb mixture. Press crumbs into fish if not sticking.
- Place fish on GREASED baking sheet.
- Bake uncovered at 450 degrees for 5 minutes per 1/2 inch thickness of fish. If the thickest part of fish is 1 inch thick, bake for 10 minutes. Check doneness by inserting fork and if fish flakes easily.
- I place rings of onion and lemon juice on bottom and top of fish while baking for extra flavor.

CRISPY FISH STICKS
After experimenting for a while, I came up with the closest recipe in creating the best fish-sticks every-one will love, including picky eaters. Leftover or old bread will also come to good use. However, the speedy-chefs can also use store-bought breadcrumbs, if more convenient for them.

- Mix the first 4 ingredients in a shallow plate and set aside.
- Cut the tilapia fillets in long sticks with a width of about 1 inch. Marinate them in the lemon juice and season with salt and pepper to taste. Store meanwhile in the fridge. Then cover your cutting board with aluminum foil.
- Cut away the thick crusts of the bread. Then, tear the bread in coarse pieces and fill your food-processor or blender with it. Blend it to medium sized breadcrumbs.
- Toast your fresh breadcrumbs for 1-2 minutes at 400°F This is necessary to evaporate most of the water.for a better crunchy skin. Remove and let it cool of and toss it a bit with a fork. Dispose it in another shallow plate.
- Pour a sizable amount of cooking oil in a deep pan, and turn your stove on low heat. Break eggs and whisk in a bowl. Place your marinated fish in front of the board, the flour-mixture next to it. Then follow the eggs and ,the breadcrumbs and finally a bowl of water.
- Now the real deal begins! Lift a piece of fish with 2 forks and drop it into the flour-mix. Wallow the fish until fully covered and shake any excess flour off. Then transfer to the beaten eggs and do the same. At last, transfer to the plate with breadcrumbs and put away the forks in the bowl of water (dirty part in water). Use your hands to tumble and lightly press around the fish until thoroughly covered in the crumbs. Move the fish-stick to the cutting-board and wipe your forks clean with a piece of paper towel. Repeat likewise for the other fish-sticks.
- When done, turn up the heat of your stove to high. The sticks have to rest for about 15 minutes, to get the crust set (otherwise you'll end up with a disaster). So. meanwhile you could clean up the counter in advance.
- The easiest last step: deep-fry the fish-sticks in about 5 minutes to a nice golden-brown colour. Serve with your favourite sauce!
