- PLEASE NOTE: DO NOT PREHEAT THE OVEN!!
- Line a rimmed baking sheet very well with heavy-duty aluminum foil. I like to use the extra-wide aluminum foil for lining my baking sheets when cooking bacon. **If you use to skinny pieces to line the baking sheet, the bacon fats can find their way between them and you've got a mess to clean up later.
- Lay a single layer of bacon over the foil, side-by-side, just barely touching each other, but not overlapping. You can usually fit 10-12 slices of bacon onto the baking sheet, depending on it's size.
- Place the baking sheet of bacon, uncovered, into the COLD oven on the center rack. Now set the oven temperature to 400 degrees F.
- Cook the bacon to your preferred degree of doneness. We like ours more crispy, with a little bit of chew, which is right around 25 minutes. You may have to play around a bit to get to the very best cooking time for your preference and also for your brand and thickness of bacon. Sometimes, depending on the bacon, I flip it over, or at least turn my pan around in the oven half way through the baking time to ensure really even cooking. I think turning the bacon over half way through the cooking time helps it cook faster and also gets it more crispy on each side.
- Using tongs, carefully transfer the cooked bacon to a paper towel-lined plate to drain away any excess fats. Let the bacon cool just a bit to allow it to get nice and crispy. Enjoy!
- Pour the excess bacon fat remaining on the baking sheet through a strainer into your "Bacon Fats" jar to use for future cooking.

- Put the bacon in a non-stick frying pan in a single layer. Top with another heavy pan or frying pan that fits snugly into the pan on top of the bacon. If it's not very heavy, top with another pan, or anything heatproof and weighty.
- Fry on a medium-low heat for 10-15 mins until golden and super-crispy. Check the bacon halfway through cooking - increase the heat slightly if there's lots of liquid in the pan, and flip the bacon over. Keep cooking until the bacon is uniformly golden and crisp.

- Place a pizza stone on the middle rack of the oven and preheat the oven to 500 degrees F.
- In a medium size saute pan, add olive oil and heat over medium heat. When the oil is hot, add the bacon and cook until the bacon is very crispy and all of the fat is rendered. Remove the bacon with a slotted spoon and drain on a paper towel-lined plate. Remove all but 2 tablespoons of the bacon fat from the pan and discard. Place the pan over high heat. Add the onions to the hot bacon fat and cook until the onions are well browned, about 8 to 10 minutes, stirring often. Remove to a paper towel lined plate.
- In a small bowl, combine the mascarpone and farmer's cheeses. Season with nutmeg and black pepper. Reserve.
- On a lightly floured surface, stretch or roll the dough as thinly as possible, about 14 to 15-inch circle. Evenly spread the mascarpone mixture over the dough. Sprinkle with the mozzarella and Parmesan cheeses, bacon, thyme, and sauteed onion. Bake until the pizza crust is nicely browned, about 8 to 10 minutes.
- Remove pizza from the oven, transfer to a cutting board, cut into slices and serve immediately.
- In a small bowl, dissolve the yeast and honey in 1/4 cup warm water.
- In a food processor, combine the flour and the salt. Add the oil, the yeast mixture, and the remaining 3/4 cup of water and process until the mixture forms a ball. (The pizza dough can also be made in a mixer fitted with a dough hook. Mix on low speed until the mixture comes cleanly away from the sides of the bowl and starts to climb up the dough hook).
- Turn the dough out onto a clean work surface and knead by hand 2 or 3 minutes longer. The dough should be smooth and firm. Cover the dough with a clean, damp towel and let it rise in a cool spot for about 2 hours. (When ready, the dough will stretch as it is lightly pulled).
- Divide the dough into 4 balls, about 6 ounces each. Work each ball by pulling down the sides and tucking under the bottom of the ball. Repeat 4 or 5 times. Then on a smooth, unfloured surface, roll the ball under the palm of your hand until the top of the dough is smooth and firm, about 1 minute. Cover the dough with a damp towel and let rest 1 hour. At this point, the balls can be wrapped in plastic and refrigerated for up to 2 days.

- Make a French Dressing. Put the vinegar, oil, lemon juice, mustard and brown sugar into the jar. Season with the salt and pepper.
- Screw the lid of the jar on tightly and shake the contents well for a minute. Pour into a jug ready to serve.
- Wash and dry the lettuce. Shred it and put it into the bowl.
- Chop up the cucumber and apple. Peel the avocado and cut the flesh into medium-sized chunks. Mix with the lettuce.

HOW TO COOK CRISPY BACON

- Add 3-4 slices of bacon to a cold large frying pan and turn the heat to medium-low. What you want to do here is a cook as much fat off the bacon as you can without it burning. In other words, you want to use high enough heat that it cooks the bacon, but low enough that it doesn't burn.
- As your bacon is cooking constantly turn it over so that it cooks evenly on both sides. If too much fat collects in the pan you're going to want to drain it. During this process, there shouldn't be any black on the edges of the bacon at all. If there is that means it's burning and you need to turn down the heat. Depending on how thick your slices are or how many are in the pan, your bacon should be done in about 10-15 minutes. You will know it's done when it turns a deep brown color. When finished drain on paper towels. The bacon should not be fully crisp while it's still in the pan. It will crisp after the paper towels soak up the fat.
- Place 2 plain white paper towels on a plate, and place 3-4 strips of bacon on top without overlapping them. Now place a paper towel on top of the bacon or else it will splatter all over your microwave! Just gently place the paper towel over the bacon without pressing down on it. If you do the bacon will stick to it badly while it cooks.
- Put your bacon into the microwave and microwave on high for 3 minutes. Check and see if your bacon is done. If it isn't, microwave for an additional 30 seconds or until it's crispy.
- With your oven rack in the middle position, preheat the oven to 375 degrees.
- Line your baking pan with aluminum foil. The one I use is about 1 ½ inch deep but you could use one that is about ¾ of an inch deep. Now separate your slices of bacon and place them side by side on the baking sheet.
- Place your baking pan into the oven. During the cooking process if fat becomes excessive you should take your pan out of the oven and drain it off.
- The bacon should be crisp into about 15-20 minutes. Remove from the oven and transfer bacon onto paper towels to soak up the fat.

- Directions - Ground beef mix.
- 1. Use meat from Italian sausage and mix with ground beef.
- 2. Add bread crumb, diced shitake mushrooms, eggs, garlic powder, ground pepper, brown sugar, shredded Parmigiano cheese, parsley, oregano, 1 teaspoon salt, and mix well with above.
- Directions - Zucchini sections.
- 1. Cut zucchini in sections about 1 3/8" each.

- 4. Insert stuffed zucchini sections into round bacon rings and bake in 300F oven on a pan. About 20 minutes until internal temperature reaches 160°F.
- 5. Collect juice from the baking of the stuffed zucchinis in the pan.
- Directions - two sauces, each to be enjoyed by guest separately or combined.
- Corn sauce.
- 1. Cut kernels from two ears of fresh corn, about one cup.
- 2. Collect juices from the bacon drippings, and from the baking of stuffed zucchinis and mix with corn kernels.
- 3. To above, mix heavy cream, garlic powder, chopped onion, salt and wine. Use a hand blender to Purée all into a creamy sauce.
- 4. Simmer the above for 10 minutes.
- Black garlic sauce (Optional).
- 1. Peel all black garlic cloves.
- 2. Mix black garlic with Balsamic vinegar, a pinch of salt and Olive oil and blend with hand blender. The mixture will become a sweet pure black sauce of ketchup consistency.

- Rinse well. Fat is good, but too much fat is not. Right off the bat, rinse your bacon well with hot water to remove all the congealed excess. Give it a little shake in the sink to remove excess water, then pat dry.

- Combine lager, garlic, salt and pepper in a shallow bowl. Add in the chicken breasts, cover with plastic wrap and allow to marinade in the refrigerator for 2 hours if time allows, or over night for a deeper flavour.
- When ready to cook, take out of the fridge for at least 20 minutes before cooking. Heat skillet or pan over medium - high heat. Drain chicken from marinade and fry breasts in a small amount of oil until golden browned on both sides and completely cooked through the centre (about 6-8 minutes per side, depending on the thickness of your chicken breasts). Fry in batches of two if you need to.
- In the same pan, cook bacon until crisp, (about 6 minutes). Transfer the bacon to a paper towel-lined plate to let drain.
