These breaded fillets have a zesty crumb with a golden crunch which also works with chicken or British rose veal

4 pork loin steaks
3 slices thick white bread , torn into pieces
zest 1 unwaxed lemon
50g grated parmesan
50g pine nut
2 rosemary sprigs, leaves picked
3 tbsp plain flour
2 eggs , beaten
olive oil , for shallow-frying
4 lemon wedges, to serve

Steps:

  • Trim the fat from the steaks, then place, one at a time, between 2 pieces of baking parchment and bash with a rolling pin or meat mallet until about 5mm thick. Set aside.
  • Put the bread, lemon zest, Parmesan, pine nuts and rosemary leaves in the bowl of a food processor and blitz to a fine crumb. Transfer to a shallow bowl.
  • Spread the flour onto a plate and put the egg in a shallow bowl. Season the pork, then dust in flour. Dip each steak into the egg, then press into the crumbs, coating evenly. Heat the oil in a large frying pan and cook the pork for 2-3 mins each side until golden and crunchy. Serve immediately with lemon wedges.

¼ cup lemon juice
2 tablespoons vegetable oil
4 cloves garlic, minced
1 teaspoon salt
¼ teaspoon dried oregano
¼ teaspoon pepper
6 (4 ounce) boneless pork loin chops

Steps:

  • In a large resealable bag, combine lemon juice, oil, garlic, salt, oregano, and pepper. Place chops in bag, seal, and refrigerate 2 hours or overnight. Turn bag frequently to distribute marinade.
  • Preheat an outdoor grill for high heat. Remove chops from bag, and transfer remaining marinade to a saucepan. Bring marinade to a boil, remove from heat, and set aside.
  • Lightly oil the grill grate. Grill pork chops for 5 to 7 minutes per side, basting frequently with boiled marinade, until done.

6 Bay Leaves. Tear in to pieces Grated lemon zest Juice from 2 lemons
½ cup of Crispin Honey Crisp Hard Cider (tip & swirl bottle to ensure even dispersion of apple wine sediment through the bottle before opening & pouring)
1 tablespoon organic honey
6 Juniper berries, lightly crushed Salt & Pepper
1 firm Honeycrisp apple

Steps:

  • - Place pork scallops in a large, shallow, non-metal dish. - Heat oil in a small heavy-bottom pan. - Add bay-leaves, and stir-fry for 1 minute. Stir in lemon zest. - Add lemon juice, Crispin Honey Crisp hard cider, honey and juniper berries. Stir in. Season to taste with salt & pepper. Marinade: - Pour the mixture over the pork & Coat on both sides. - Cover with cling wrap. - Let cool. - Marinate in refrigerator for up to 8 hours. Grilling: - Pre-heat the BBQ. - Drain the pork. - Reserve marinade in a small bowl. - Core the apple, and cut in to thick rings. - Cook pork over medium-hot coals for 5 minutes each side, or until cooked through. Whilst cooking, brush frequently with the marinade. Towards the end cook apple rings for 90 seconds on each side, continually basting with marinade. - Transfer to a large serving plate with apple rings on top of pork scallops.

4 pork loin chops (1/2 inch think)
1/2 cup lemon pepper marinade
1/2 cup corn flake crumbs
1 tablespoon italian seasoning
1 teaspoon garlic powder
1/4 cup parmesan cheese
cooking spray

Steps:

  • Pour marinade over chops and put in fridge to marinate at least an hour.
  • Mix crumbs, seasonings and cheese. Take chops out of marinade and shake off excess. Dredge in crumb mixture on both sides and place in casserole dish coated with cooking spray Spray top of chops lightly with cooking spray.
  • Put chops in 350 oven for 10 minutes Then increase cook temp to 425. Leave chops in oven and when heated cook for 10 more minutes. Take chops out of oven and cover with foil. Let sit for about 10 minutes Enjoy.

6 big pork loin chops
3 garlic cloves , crushed
small handful flat-leaf parsley , chopped
½ tsp fennel seeds , roughly chopped
zest and juice 1 lemon , plus 1 lemon, quartered
3 tbsp olive oil
6 bay leaves

Steps:

  • Sit the chops in a dish. Mix together the garlic, parsley, fennel seeds, lemon zest and juice, oil and bay, then rub all over the chops. Leave the chops to marinate for at least an hour, or up to a day.
  • Heat a barbecue, frying pan or griddle pan. Season the chops, then cook for 5-8 mins on each side until cooked through (if cooking in batches, wrap the cooked chops in foil while you finish the rest). Add the lemon quarters for the last min to char, then serve alongside the pork.

2 teaspoons finely shredded lemon peel
2 tablespoons lemon juice

1/4 teaspoon cayenne pepper

Steps:

  • Trim fat from chops.
