COLESLAW CRISP
This is the best coleslaw I have ever tasted! It goes wonderfully with the tomato pesto chicken and strawberry pecan dessert in my recipe box.

FARMHOUSE APPLE COLESLAW
A friend from church gave me this apple coleslaw recipe that her grandmother handed down to her. The flavors complement each other well, while the fruit creates a refreshing change of pace from the usual coleslaw. -Jan Myers, Atlantic, Iowa

LIGHT AND TART COLE SLAW (LOW MAYO)
Red apple adds color and punch to this tangy cole slaw. It is so light and refreshing compared to the heavy mayo cole slaws. Also has less sugar since it has the natural sugars of the apples. With a bit of pepper sauce it makes a fun, festive side to ribs, fish or chicken.

CRISP PICKLED COLE SLAW
This was passed down to me from my mother and it is just great!! My 6 year old son and his friends love it! It is great on the side with burgers or BBQ sandwiches and baked beans. I also like it as a snack. The purple cabbage makes it look so pretty, but you can also use just one type of cabbage(one type of vinegar may be used as well). Also, if you like it hot, try putting in a sliced jalapeno pepper or put some Tabasco sauce in it when you serve it. This recipe makes a lot, but it's ok because it keeps so well.

Steps:
- Finely shred the 2 different color cabbages(I use a mandolin, but a very sharp knife does just fine).
- Slice the peppers thinly and chop into small pieces.
- Cut the onion into 4 pieces.
- Thinly slice the four pieces and separate into slices.
- Finely julienne the 2 carrots(or more if desired) and cut into small pieces or grate them on a grater.
- Place all the chopped and shredded vegetables into a large bowl.
- In a small saucepan combine the sugar, vinegars, salt and celery seed.
- Bring to a boil.
- Boil for 3 minutes.
- Pour the hot vinegar over the shredded and chopped vegetables.
- Combine well.
- Transfer into large jars to store in the refrigerator.
- Cool before serving.
- This keeps for a very, very long time in the frig and actually gets better after "pickling" for several days.

CRISP-TART COLE SLAW
This is from Miriam B. Loos Family Favorite Cookbook. I have been making it since about 1978! It is my 'go to' recipe for Cole Slaw, you can tell because the page this is on is really messy now. Mrs. Loos said about the recipe "Salad is made ahead with a oil and vinegar dressing...store covered in the refrigerator...will stay...

Steps:
- 1. Combine cabbage, onion and pepper in a bowl. Sprinkle salt over top and pour boiling water over all; let stand at room temperature for 1 hour. Drain in colander.
- 2. Combine sugar, vinegar, oil, celery and mustard seeds; add to cabbage mixture.
- 3. Stir in pimento. Cover and refrigerate.
- 4. I like it to set for at least 30 minutes but an hour is better. Some things I have learned through the years. The 1 cup water can be increased to enough to cover the cabbage. I usually use at least 3 cups. I cut the sugar to 1/2 cup, personal preference. I make the dressing while the cabbage soaks and I have even heated it for 1 minute to melt the sugar and meld the flavors. The water soak works really well to take the excess moisture from the cabbage, even if making other recipes.

- Use a mandolin to shred your cabbage, carrots (peeled), and apple (discarding core) at your desired thickness. (If you do not have a mandolin, simply shred as best you can.)
- Immediately before serving, add both vegetable mixture and dressing to a large container with a tightly fitting lid. Once the lid is securely fastened, shake container for a good 20-30 seconds or until cabbage mixture is evenly coated with dressing.

- In a small mixing bowl combine 1/2 cup mayo & sour cream with 1 tbsp dijon mustard & apple cider vinegar, 2 tsp sugar, 1/2 tsp & 1/4 tsp black pepper (or to taste).
- Peel outer layer of cabbage if damaged, then slice in to quarters. Use your knife to slice out the firm cores from those quarters, then finely slice the cabbage into long shards. Shred carrots on a box grated and squeeze out as much moisture as you can over the sink. Slice spring onion, then add everything to a large bowl.
- Pour dressing into the veg and toss to coat. Best served after resting in the fridge for an hour to marry the flavours (give it a quick toss before serving). Even better rested overnight, just I recommend removing moisture from the veg first (see notes).
