BEEF STROGANOFF CASSEROLE

- Preheat oven to 325 degrees F. Grease a 9 x 13-inch casserole dish with cooking spray and set aside.
- Cook the egg noodles in a large pot of salted boiling water according to package instructions, just until barely al dente (about 6 minutes). Drain. Toss the noodles with the melted butter; set aside.
- Meanwhile, in a large skillet over medium-high heat, cook the beef, mushrooms, onion and garlic until the meat is no longer pink (about 7-10 minutes). Drain.
- In a medium bowl, whisk together the condensed soup and the milk. Add the soup mixture to the ground beef. Cover and simmer over low heat for about 5 minutes. Remove from the heat and stir in the sour cream.
- Place ⅓ of the buttered noodles in the bottom of the prepared casserole dish. Add ⅓ of the beef mixture over top. Repeat layers two more times. Cover and bake in the 325 degree F oven for about 20 minutes, or just until warmed through. Remove cover, sprinkle fried onions on top, and return to the oven (uncovered) for about 5-8 more minutes. Garnish with parsley just before serving, if desired.

- Preheat oven to 350 degrees. Lightly grease a 13x9x2-inch baking dish.
- In a large skillet, cook ground chuck, onion, and garlic over medium heat until meat is browned and crumbles. Drain.
- Return meat to skillet and stir in Worcestershire, mushrooms, and beef broth. Bring to a boil, reduce heat, and simmer for 15 minutes.
- Stir in soup, sour cream, salt and pepper. Remove from heat.
- Combine hot cooked noodles and butter, stirring until butter melts.
- Combine noodles and meat sauce. Spoon into prepared baking dish. Bake for 30 minutes.
- Top evenly with fried onions and bake for 10 more minutes.

We used a marbled, tender piece of ribeye as the star of this comfort food classic. Two kinds of mushrooms are cooked until crispy to add an extra element of flavor. The whole dish is brought together with a rich, tangy sauce made with sour cream and Dijon and served over egg noodles.

- Bring a large pot of salted water to a boil.
- Season the beef with 1 teaspoon salt and a generous amount of freshly ground black pepper. Heat the vegetable oil in a large skillet over medium-high heat. Add the beef and cook, untouched, until starting to turn brown in some spots, about 1 minute. Use tongs to flip the pieces and continue cooking until deep golden brown but still undercooked in the center, about 1 minute (the beef will finish cooking in the sauce). Transfer the beef to a bowl and return the skillet to the stovetop on medium-high.
- Add 1 tablespoon butter to the skillet. Add the onion and 1/2 teaspoon salt and cook, stirring occasionally to scrape up the browned bits in the pan, until the onions are softened, 4 to 5 minutes. Add 2 tablespoons butter, the button mushrooms, shiitakes and thyme and cook, stirring occasionally scraping up any browned bits, until the mushrooms have released some liquid and are starting to crisp up, 5 to 6 minutes. Stir in the garlic and cook until fragrant, about 1 minute. Pour in the wine and bring to a boil. Reduce the heat to medium and simmer until evaporated, about 5 minutes.
- Sprinkle the flour over the vegetables and stir until incorporated. Fold in the sour cream, Dijon, Worcestershire sauce and 1/4 teaspoon freshly ground black pepper. Pour in the beef broth and stir until smooth. Bring to a simmer and cook, stirring occasionally, until the sauce has thickened, about 5 minutes.
- Meanwhile, while the sauce reduces, cook the egg noodles according to the package directions for al dente. Drain and toss with the remaining 2 tablespoons butter, the chopped parsley and chives.
- Fold the beef and any accumulated juices from the bowl into the sauce and cook, stirring occasionally, until the beef is cooked through but still slightly pink on the inside, about 1 minute.
- Divide the noodles between 4 bowls and top with the sauce and beef. Sprinkle with more chives, if desired.
BEEF STROGANOFF BUBBLE-UP CASSEROLE

- Preheat oven to 350. In a large skillet over high heat, brown and drain beef in cooking spray. While meat is cooking, grease a 9x13 pan with cooking spray. Evenly distribute 1/2 of the cut biscuits in the bottom of the pan. Alternatively, save all of the biscuits for the top (see recipe notes)
- Reduce heat to medium-high and add mushrooms, onions, and garlic to skillet. Cook until soft, about 5 minutes.
- Add paprika, salt, pepper, Worcestershire sauce, and tomato paste to meat and veggie mixture. Saute for about a minute, until everything is mixed together.
- Add in beef bouillon and water. Lower heat and saute for a few minutes. Take off heat and let cool for about 5 minutes, then mix in the yogurt (see recipe notes)
- Pour meat and veggies into the 9x13 pan, over biscuits. Top with remaining 1/2 of the biscuits, or all of the biscuits (see recipe notes).
- Bake, uncovered, for 20 minutes. Sprinkle cheese on top and bake for another 10 minutes.

- Heat oven to 375ºF.
- Cook noodles as directed on package, omitting salt. Meanwhile, melt butter in large deep skillet on medium heat. Add onions; cook and stir 5 min. Add mushrooms; cook and stir 5 min. Add meat to skillet; cook, stirring to break up meat, until no longer pink, about 5 min. Add Worcestershire sauce and pepper; cook 1 min.

- Preheat the oven to 350 degrees F (175 degrees C).
- Bring a large pot of lightly salted water to a boil. Add penne and cook, stirring occasionally, until tender yet firm to the bite, about 11 minutes. Drain and return to the pot.
- Remove beef roast from the package and place in a bowl, reserving juices. Shred into bite-size pieces using 2 forks.
- Melt butter in a large skillet over medium heat. Add mushrooms, onion, and garlic; cook and stir until tender, 4 to 5 minutes. Stir in flour and tomato paste until combined. - Heat a frying pan over medium-high heat. Coat bottom with 3 tablespoons oil; add steak and cook, turning as needed, until browned, 5 to 7 minutes. Transfer steak to a 3-quart baking dish.

- In lg, deep frying pan, brown hamburger, salt and pepper until done, breaking up.
- Drain grease, add oil, mushrooms, onion and garlic.
- Cook and stir until onion is tender, about 2 minutes.
- Add wine (*or sub), reduce heat to med-low and simmer 3 minutes.
- Stir in soup, sour cream and mustard until combined.
