Layered Broccoli-Rice Casserole...(No Canned Soup) image

I am not a big fan of cooking with soup in a can, so I searched everywhere to find a broccoli casserole that did not contain soup. I found this site by Paula and it was exactly what I was looking for. I made this and it is so delicious. You can also use the chopped frozen broccoli.

4 c (10 ounces) fresh broccoli florets and stems, chopped (stems should be very finely chopped)
1/2 lemon
1/2 c chopped onions
1 clove garlic minced
1 celery stalk, chopped
2 Tbsp butter
1 c mushrooms, sliced
1 Tbsp flour
12 oz can regular evaporated milk
1/2 tsp salt
1/8 tsp white pepper
2 c cheddar cheese, shredded
1, 1/4 c rice, cooked

Steps:

  • 1. First: Steam (about 3 minutes on HIGH) chopped broccoli and stems until tender but still bright green. Squeeze lemon over broccoli.
  • 2. Second: Melt butter in skillet. Add onions, garlic, celery and mushrooms and saute' until softened. Stir in flour and cook about one minute to take away the raw flour taste. Whisk in milk and continue whisking until slightly thickened. Season with salt and pepper. Add 1, 1/2 cup cheese and stir to melt. Season with salt and pepper. Add 1 1/2 cup cheese and stir to melt. Sauce will thicken more as it sits.
  • 3. Third: Combine broccoli, rice, and cheese sauce. Turn into 1, 1/2 quart greased casserole dish. Sprinkle with remaining 1/2 cup cheese.
  • 4. Bake at 350 degrees F until bubbly. I usually cook for 45 minutes.

Southern comfort food. My mom makes this when cold weather hits - ooey, gooey, and oh so rich. Occasionally, I'll swap out part of the cheddar cheese with Velveeta Crumbles. Cook time includes time for the casserole to sit. You can use about a pound of cooked chicken breasts, shredded or cubed, in place of the canned chicken.

2 (10 ounce) packages frozen chopped broccoli
2 (10 ounce) cans white chicken meat packed in water
16 ounces cottage cheese
1 (10 3/4 ounce) can cream of chicken soup, undiluted
1 cup mayonnaise
8 ounces cheddar cheese, shredded (2 cups shredded)
36 Ritz crackers (1 sleeve)
8 tablespoons butter (1 stick) or 8 tablespoons margarine (1 stick)

Steps:

  • Preheat the oven to 400°F Thaw the broccoli, making sure it is well-drained. Drain the canned chicken chunks.
  • In a large bowl, combine the cottage cheese, cream of chicken soup, mayonnaise, and cheddar cheese.
  • Spoon half of the broccoli in the bottom of a 9 x 13 baking dish. Spread one can of the chicken over the broccoli, followed by half of the cheese mixture from step 2. Smooth with a spatula, and repeat layers. You will end with the cheese mixture on top.
  • Crush the Ritz crackers, and melt the butter in a small saucepan. Add the cracker crumbs to the melted butter, tossing to coat. Spread over the top of the casserole.
  • Bake for 35-40 minutes, or until bubbly and the crackers are slightly browned. Let set for 30 minutes before serving.
  • NOTES: Casserole can be assembled through step 3 the day ahead. Cover with foil and store in the refrigerator until time to bake. Pick up with step 4. Also, the cracker topping can be made by melting the butter in the microwave, crushing the crackers in a large ziptop bag, and pouring the butter over the crumbs. Squeeze the bag to make sure the butter is distributed evenly. Ingredients can be swapped for their low-fat counterparts, but the texture won't be as creamy.

2 (10 3/4 ounce) cans cream of chicken soup
1 cup mayonnaise

grated cheese, for topping
breadcrumbs, for topping

Steps:

  • Preheat oven to 350°F.
  • For sauce combine soup, mayo, lemon juice and curry powder in a bowl.
  • In bottom of 13x9x2-inch baking dish layer frozen broccoli, chicken, and sauce.
  • Sprinkle with grated cheese and breadcrumbs.
  • Bake for 30 minutes.
  • Can be eaten plain or on top of rice.

1 lb. chicken breasts (chopped into large bite size pieces)
salt and pepper
1/4 teaspoon paprika
4 tablespoon olive oil (divided)
3 tablespoons unsalted butter (divided)
1 yellow onion (chopped)
1 red bell pepper (chopped)
1 cup chopped carrots
1 1/2 lbs. (about 8 cups) broccoli florets
1/3 cup all-purpose flour
2 1/2 cups low sodium chicken broth ( divided)
2 cups milk
1 tablespoon cornstarch
2 teaspoons chicken bouillon
1 1/2 teaspoons Dijon mustard
1 1/2 teaspoons Worcestershire sauce
1 tsp EACH garlic powder, dried parsley
1/2 teaspoon ground cumin
1 1/2 cups freshly grated sharp cheddar cheese (divided)
1/2 cup freshly grated Parmesan cheese
1/2 cup sour cream
3 cups cooked basmati rice ((measure cooked))
3/4 cup panko breadcrumbs (preferably Italian panko)
2 tablespoons melted butter
1 tablespoon olive oil

Steps:

  • Preheat oven to 350 degrees F. Lightly spray a 9x13 pan with nonstick cooking spray.
  • While the chicken is still on the cutting board, dab it with paper towels and season with 1/2 teaspoon salt, 1/4 teaspoon pepper and 1/4 teaspoon paprika; set aside.
  • Melt 1 tablespoon butter in 2 tablespoons olive oil in a large skillet. Add onions, carrots and bell peppers and sauté for 5 minutes. Add chicken and cook just until the outsides are opaque.
  • Layer broccoli on top of chicken/vegetables. Add 1/2 cup chicken broth, cover pan, and lower heat to medium. Steam broccoli until tender but not limp, about 3 minutes (cook longer if you like softer broccoli). Transfer vegetables (and any excess liquid) to a large bowl.
  • To the same skillet (don't wipe out), melt 2 tablespoons butter with 2 tablespoons olive oil over medium heat. Whisk in flour then cook, while stirring, for 1 minute. Turn heat to low then gradually whisk in remaining 2 cups chicken broth and 1 cup of milk. Whisk cornstarch with remaining 1 cup milk and add to skillet followed by Dijon, Worcestershire sauce, chicken bouillon and all spices/seasonings. Season with an additional 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Bring the sauce to a boil, whisking constantly then reduce heat to a simmer, whisking often until thickened. Remove from heat and whisk in 1/2 cup cheddar until melted followed by Parmesan cheese until melted. Whisk in sour cream until blended.
  • Add veggies/chicken to the sauce if your pan is large enough, otherwise pour sauce over the veggies/chicken in the bowl and stir to combine. Fold in rice. Transfer to the prepared baking dish and spread into an even layer. Top with remaining 1 cup cheddar cheese.
  • Panko topping: Melt butter in olive oil over medium heat in a medium skillet. Add panko and stir to coat. Continue cooking until crumbs become golden brown. Evenly sprinkle over cheese.
  • Cover casserole with foil and bake at 350 degrees for 30 minutes or until hot and bubbly and cheese is melted.

  • Layer 3 - water chestnuts.

  • Add layer of grated cheese.
  • Cover with croutons.
  • Bake for additional 10 minutes (no lid).

1 1/2 cups white rice
3 cups water
2 chicken bouillon cubes
1 head broccoli, chopped
1 tablespoon butter
1 small onion, diced
3 -4 garlic cloves, minced
1/4 teaspoon thyme
2 cups cooked chicken, diced
1/2 cup milk
3 tablespoons mayonnaise
salt and pepper
2 cups shredded cheddar cheese

Steps:

  • Boil water, adding bouillon cubes.
  • Add rice and broccoli and cook covered on low heat for 12-15 minutes.
  • While rice is cooking, heat butter over medium heat in medium pan. Add onions and cook until softened and just starting to carmelize, about 8 minutes.
  • Add garlic and cook an additional 2 minutes.
  • Turn off heat, add thyme, chicken, mayonnaise and milk, stirring to combine.
  • Once rice mixture is ready, remove from heat and dump in 9x11" glass pyrex pan.
  • Add chicken and sauce mixture, 1 1/2 cups of cheese and mix well.
  • Add salt and pepper to taste.
  • Sprinkle remaining cheese on top.
