French Canadian Crepes image

This basic French Canadian crepes recipe can be filled with a variety of ingredients. They are traditionally served as a dessert.

Number Of Ingredients 5

2 cups milk
1 cup all-purpose flour
1 egg
1 tablespoon butter (melted)
1 to 2 tablespoons butter (for cooking crepes)

Steps:

  • Gather the ingredients.
  • In a large bowl, whisk all the ingredients vigorously until the crepe batter is completely smooth.
  • Place the batter in the refrigerator and allow it to rest for at least 20 minutes.
  • Melt a little bit of the butter in a crepe pan or large skillet over medium-low heat.
  • Add 3 tablespoons of the batter to the pan and swirl until the bottom of the pan is completely covered.
  • Cook the crepe for 1 minute, or until it is slightly moist on top and golden underneath.
  • Using a spatula, loosen the edges of the crepe, then slide the spatula underneath, and gently flip it, trying to have it lay flat.
  • Cook for 1 more minute, until the edges are starting to crisp up, and transfer the cooked crepe to a plate to keep warm. Repeat with the remaining batter, adding more butter if the pan becomes dry.
  • Fill with desired ingredients and fold or roll up .
  • Serve and enjoy.

It is never too early in the day for Pommies Dry Cider. This delicious crepe recipe is great for breakfast, but also makes a nice dessert. And as we often find ourselves saying, it is noon somewhere in the world.

Number Of Ingredients 11

1 cup all purpose flour
1 cup milk
2 eggs
2 tbsp.'s vegetable shortening, melted
1 tbsp. baking powder
1 tbsp. sugar
1/4 tsp. salt
2 tbsp's unsalted butter, melted (for brushing skillet)
2 tbsp's unsalted butter
2 cups of Pommies Dry Cider
1 cup sugar

Steps:

  • Make crepe batter: Whisk together flour, milk, eggs, shortening, baking powder, sugar and salt in a large bowl until smooth (batter will be thick). Chill, covered for 30 minutes.
  • Make syrup: Heat butter in a 12-inch heavy skillet over moderate heat until the foam subsides. Add Pommies and sugar and stir until sugar is disolved, then briskly simmer until thickened and reduced to about 1 1/2 cups (about 12 - 15 minutes). Remove from heat.
  • Cook crepes: Lightly brush an 8-inch crepe pan or nonstick skillet with some melted butter, then heat over moderately high heat until hot but not smoking. Remove skillet from heat and pour in a 1/4 cup batter, immediately tilting and rotating skillet to coat bottom. (if batter sets before skillet is coated, reduce heat for next crepe). Return skillet to heat and cook crepe until set and golden brown underneath, 30 seconds to 1 minute. Loosen edge of crepe with a heatproof rubber spatula, then flip crepe over carefully with your fingertips and cook until just set, about 15 seconds more. Transfer crepe to a plate. Make rest of the crepes in the same manner, brushing skillet with butter for each one. Reheat syrup over moderate heat. Fold each crepe into quarters, then, using tongs, dip each briefly in syrup to coat and tranfer to platter. Cover with foil to keep warm. Serve crepes with remaining syrup on the side.

I am a French Canadian from Montreal, this recipe is one of the first ones that I learned as a child growing up and can either be served traditional style with REAL maple syrup on top or cold with ice cream rolled into it and chocolate syrup on top as a dessert.

Steps:

  • In a mixing bowl, combine flour, egg, and milk.
  • Heat a large skillet or crepe pan over a medium-high heat. Spray the pan with non-stick cooking spray. Pour about 1/3 cup of batter into the pan, lift the pan and turn it by rotating your wrist, spreading a PAPER THIN amount in the pan. Flip the crepe when it starts to bubble. When it is finished cooking, remove it and repeat this process with the remaining batter.

Easy Crepes With Brandy image

This French crepe recipe calls for brandy, but you can substitute any flavorful spirit or liqueur to customize it to your tastes and pantry.

Yield Makes approximately 12-15 crepes

Number Of Ingredients 11

1½ cups whole milk
3 large eggs
3 tablespoons sugar
1 teaspoon salt
Scant 5 tablespoons unsalted butter, melted
½ cup brandy
1 teaspoon vanilla extract
1 cup all-purpose flour
Additional butter for cooking
Additional sugar or jelly such as apple or apricot for serving
Iron skillet or crepe pan, flexible metal or plastic spatula

Steps:

  • In a blender, combine milk and eggs. Mix on medium-high speed until foamy, about 10 seconds. Turn blender to low speed and remove feed top. With blender going, add sugar and salt. Replace feed top and blend on high speed for a few seconds, then turn blender back to low. In the same manner, add butter, brandy, and vanilla, replacing feed top and blending for several seconds after each addition. Turn blender off. Add flour all at once and blend until just combined.
  • Place crepe pan over moderately high heat. With flexible spatula, spread a tiny amount of butter in pan (an alternative method is to brush the pan with melted butter using a pastry brush) and heat until butter just begins to smoke. Pour ¼ to ⅓ cup batter into the center of the pan. As you pour, quickly tilt the pan in all directions to spread a thin layer of batter across the bottom. Pour in just enough batter to cover the pan.
  • Cook crepe over moderately high heat until bubbles just begin to form on the exposed surface, about one to two minutes. Lift up the edge to check the cooking process-if the crepe starts to burn before it is cooked through, turn down the heat. If it is not nicely browned after two minutes, turn up the heat.
  • When underside of crepe is browned, flip and cook another minute or less, until other side is browned. Remove from pan and keep warm in the oven, loosely covered with foil.
  • Grease pan with a very small amount of butter and repeat process. Continue until remaining batter is used, stacking cooked crepes on a plate in the oven. To serve, sprinkle each crepe with sugar or spread with jelly and fold or roll up. Do Ahead: Crepe batter can be made 1 day ahead. Refrigerate, covered, and blend briefly to recombine before cooking.

My family's version of Crepes that we have for breakfast. Thicker than regular crepes, thinner than pancakes, and a crispy lacey edge unlike both. Serve with maple syrup for a yummy breakfast treat!

2 cups all-purpose flour
1/4 teaspoon salt
2 large eggs
2 cups milk
Shortening (for best results)
Maple syrup for serving

Steps:

  • In a large mixing bowl combine flour and salt. Whisk in eggs and milk just until thin batter forms.
  • Place about 2 tablespoons of shortening in large skillet (preferably cast iron) over medium heat. When shortening is hot, pour some batter into middle of pan then swirl pan around so that a large crepe forms.
  • Cook crepes about 1-2 minutes per side or when crepe starts to get crispy around edges and bubbles. Continue until all batter has been used. Serve with maple syrup.

175g plain flour
3 large eggs
450ml milk
sunflower oil , for frying

Steps:

  • Weigh the flour in a large jug or bowl. Crack in the eggs, add half the milk and a pinch of salt. Whisk to a smooth, thick batter. Add the remaining milk and whisk again. Set aside for at least 30 mins.
  • Heat a large non-stick crêpe pan or frying pan. Add a drizzle of oil, then wipe out the excess with kitchen paper. When the pan is hot, add enough batter to just cover the surface, swirling it and pouring any excess back into the bowl. The pancake should be as thin as possible. When the edges are peeling away from the sides of the pan, shake it to see if the pancake easily releases and is browning on the underside. If not, cook a little longer. Flip and cook the other side for a minute or two. Serve, or keep warm in a low oven.
