- In a large skillet, brown sausage over medium heat; drain. Transfer to a 5-qt. slow cooker. Stir in remaining ingredients except rice. Cook, covered, on low until vegetables are tender, 6-8 hours. Discard bay leaves. Serve with rice.

BASIC CREOLE SAUCE
I cook a big batch of this sauce and keep in the freezer for when I need to pull together a quick dinner party or supper for my family. Just reheat and add a combination of shrimp, sausage, or chicken and serve over hot rice. Add in a combination of the optional ingredients to make it your own. You will have a meal fit for company.

Steps:
- Heat olive oil in a large pot over medium heat. Stir in celery, onion, green bell pepper, carrot, and garlic; cook and stir until the vegetables are tender, about 10 minutes.
- Stir tomatoes with their juice, water, chicken bouillon cubes, and bay leaves into the vegetable mixture.
- Stir in red pepper flakes, smoked paprika, saffron, oregano, basil, thyme, orange zest, clam juice, and white wine.
- Bring the sauce to a boil, reduce heat to low, and simmer until the flavors have blended, at least 1 hour. Season to taste with salt and black pepper.
- Allow the sauce to cool completely.
- To store, pour into pint glass canning jars, cover with lids and rings, and place into freezer. Sauce can be frozen up to 3 months before using.

Steps:
- Soak the black beans overnight in a generous amount of water.
- Preheat the crock pot on high while prepping.
- Drain beans, rinse, and place in a large pan, cover with cold water, and bring to a boil, boil for 10 minutes, then drain and put them in crock pot.
- Heat oil in a large skillet and saute the onion, garlic, celery with the chiles, cumin, and mustard powder for 3 minutes Add the bell pepper, stir, and put contents of skillet in the crock pot. Stir.
- Add sausages to skillet, and cook until browned, (but don't overcook) then empty into crock pot.
- Blend tomatoes, maple syrup, and broth. Cover and cook on high for 6 to 8 hours.
- Season with salt and pepper, to taste, garnish with the chopped thyme.

Steps:
- Sort and wash peas. Place in a large pan, cover with warm water and allow to soak overnight. Drain the peas and place in large 4 quart crock pot.
- Add ham or ham bone to peas along with 3 cups of water. Stir in rest of ingredients except the cooked rice and green onion fans. Turn crock pot to low and allow to cook for 6 to 8 hours. Stir after 5 to 6 hours and check to see if additional water may be needed. If peas are to thick, add warm water to crock pot until desired consistency.
- Serve over cooked rice and garnished with green onion fans.
