Steps:
- In a heavy 2-quart saucepan mix together the chicken broth, half-and-half, onion, salt, white pepper & hot pepper sauce.
- Several hours before serving, peel the avocado, then pit & cut it into 1-inch pieces. Place in a medium, nonreactive bowl. sprinkle with lemon juice, then cover with plastic wrap & refrigerate until ready to use.
- Just before serving, put 1/4 cup of the chicken broth mixture in a blender.
- Bring the rest of the broth mixture to a boil in the 2-quart saucepan, then reduce heat to low.
- Add avocado to the blender & process until smooth, then pass this mixture through a coarse-mesh sieve.
- Add the sieved avocado mixture to the simmering broth & heat, BUT DO NOT LET IT COME TO A BOIL. Salt to taste.
- Serve immediately with croutons (if using) on the side, or make it several hours ahead of time, cover with plastic wrap & let it cool, then chill completely before serving.
COLD AVOCADO SOUP: SOPA DE AGUACATE

- In a blender, blend cilantro and serrano with 1/4 cup orange juice until mixture forms a smooth paste. Add remaining 3/4 cup orange juice, zest, tequila, broth and avocados and blend until smooth. Pour mixture through a coarse sieve into a large bowl. Season with salt and pepper.
- Chill soup, covered, 2 hours, or until cold.
- Serve topped with watermelon.

- Cut avocadoes all around the seed,twist and remove giant seed.
- Crush them with fork in bowl or with handy chopper til it's smooth.
- In medium size pot melt butter and add chilli peppers along with garlic powder and onion powder. Stir about half of minute.
- Put milk in and avocado paste. Whisk til totally smooth and heated thru.
- Take off burner just before starting to bubble. Do not boil.
- For last step, add the cheese pieces and serve.

- MARINATE THE ONION:.
- Place the onion slices and vinegar in a resealable plastic bag, press out as much air as possible, and close the bag.
- Alternatively, place the onion and vinegar in a small bowl and put a piece of plastic wrap directly on the surface of the ingredients so that the onion slices remain submerged in the vinegar.
- Allow the onion to marinate for at least 30 minutes.
- ASSEMBLE SALAD:.
- Reserve a few tablespoons of the vinegar used to marinate the onion before draining the onion slices and setting aside.
- Place the avocado slices on a serving platter and top with the red onion slices.
- Drizzle the oil and reserved red wine vinegar over the salad and season with salt and pepper to taste.

- Peel, pit and roughly chop the avocado.
- An easy way to remove the pit: after halving the avocado, with a flick of the wrist, plunge a knife into the pit, then give a slight twist and remove.
- Voila!
- Place avocado flesh into a blender with the lemon or lime juice, and puree until smooth.
- Transfer mixture to a bowl, and with an electric mixer, gradually blend in the sugar-- slowly, slowly does it.
- Then add cream and salt (just a little salt at a time, tasting as you go, to avoid over-salting), and blend further until well mixed.
- Distribute mixture between 6 stemmed glasses and chill at least 4 hours in the fridge.
- (Freeze it if you wish, but it is nicer just chilled).

- Pour the vegetable stock in a small saucepan and add the garlic clove. Bring this to a light boil for about 7 minutes over medium heat. It doesn’t have to be hot, just comfortably warm. In the meantime peel the cucumber and chop it up. No need to discard the seeds inside. Add the cucumber to a clean blender.
- Slice the ripe avocado in half, remove the seed in the middle and scoop out the soft green flesh. Add it to the cucumber in the blender.
- Blend the ingredients into a fine mixture. Then gradually add the warm vegetable stock (and the garlic clove) and blend the avocado soup in between. Add as much vegetable stock until you get the consistency you like.
