BREAKFAST WHEAT BERRIES



Breakfast Wheat Berries image

Wheat berries sweetened with honey and perfumed with rose water and spices make a delicious breakfast on their own or stirred into yogurt (that's the way I prefer to serve this). Whether you use farro, kamut, spelt or wheat berries (and whether you are cooking them for breakfast or for dinner) the trick here is to cook the grains for as long as it takes for them to really soften and to splay (that is, to burst at one end).

1 cup wheat berries
5 cups water
Salt to taste
1/4 cup honey, agave syrup or brown sugar, or more to taste
1/2 to 1 teaspoon rose water, to taste
1 teaspoon ground anise or fennel seeds
3/4 teaspoon ground cinnamon
1/8 teaspoon freshly grated nutmeg
1/2 cup raisins or other chopped dried fruit of choice
1/3 cup chopped walnuts, almonds, hazelnuts, or a mixture for garnish
2 cups plain low-fat yogurt (optional)
Pomegranate seeds for garnish (optional)

Steps:

  • The night before, combine wheat berries, 1 quart of the water and salt and bring to a boil in a saucepan. Reduce heat, cover and simmer 1 hour. Remove from heat, stir in the honey, agave syrup or sugar, rose water, anise or fennel seeds, cinnamon, nutmeg and raisins or dried fruit. Cover and leave overnight (or for 5 to 6 hours).
  • In the morning, add remaining cup of water to the wheat berries and bring to a simmer. Cook 30 to 45 minutes, stirring often, until berries are soft and splayed at one end. There should be some liquid surrounding the wheat berries (add more water if necessary). Taste and add more sweetener if desired.
  • Serve on their own with some of the liquid in the saucepan (stir in some milk if desired), or spoon about 1/3 cup yogurt into bowls and top with a generous spoonful of the berries, with some of the sweet broth. Top with a handful of chopped nuts and a few pomegranate seeds if desired.

Creamy Wheat Berries with Honey image

In many cultures dating as far back as the Middle Ages, crunchy, toothsome wheat berries have been sweetened and served for holiday celebrations. In Russia, poppy seeds, walnuts, and raisins are added for a dish called _kutya_. In Turkey, a similar dish is called _kofyas_, and in Greece it's known as _koliva_. The combination of wheat, honey, and dates has survived so long because it is heavenly. Serve small portions as it's quite filling.

Number Of Ingredients 7

3 cups milk (2% is fine, but don't use skim)
3 tablespoons honey, plus more to taste
3 cups cooked Basic Wheat Berries (see note below)
Generous pinch of ground cinnamon
Pinch of salt
1/3 cup pitted, chopped dates
Sweetened whipped cream, for garnish (optional)

Steps:

  • In a heavy 3-­quart saucepan, combine the milk and honey and bring to a boil. Stir in the wheat berries, cinnamon, and salt. Return to a boil, then reduce the heat and cook at a gentle boil for 30 minutes, stirring occasionally. Skim off and discard the skin that forms on top.
  • Stir in the dates and continue cooking at a gentle boil, stirring occasionally, until the mixture becomes quite thick, about 15 minutes longer. Add more honey, if you wish.
  • Serve hot in small bowls. Garnish with whipped cream, if you wish.

AMBROSIA OF WHEAT BERRIES, FRUIT & CHOCOLATE

In the culinary world today, dishes with whole grains are "in," but they have always been part of Italian regional cuisine, even as desserts. Put together from whatever grains and nuts were in the house, and minimally sweetened with available fruit, traditional desserts like this wheat-berry ambrosia are among my favorites. In that spirit, this recipe can be a guideline for your own creativity. This is a versatile and practical dessert, too. Prepare the mixture of wheat berries, dried fruit, and chocolate in advance, and refrigerate it. Let it return to room temperature before serving (though it is nice slightly chilled in summer). It's also great for a buffet with whipped cream or scoops of vanilla or chocolate ice cream on top.

Yield makes about 8 cups, serving 8 to 12

Number Of Ingredients 12

1 cup wheat berries (about 6 ounces), soaked overnight
1 fresh bay leaf
2 cups pitted and halved fresh sweet cherries
1 cup dried apricots, cut in thirds
1/2 cup pitted dried dates, coarsely chopped
4 ounces semisweet chocolate, cut in 1/4-inch chunks
1 cup chopped toasted hazelnuts
1/2 teaspoon ground cinnamon
1/2 cup honey
2 tablespoons Saba or aceto balsamico tradizionale
1 cup heavy cream, whipped
A 4-quart saucepan with a lid; balloon-shaped wineglasses for serving

Steps:

  • Drain the soaked wheat berries, and put them in the saucepan with 3 quarts fresh cold water and the bay leaf. Bring to a boil, stirring occasionally, cover slightly ajar, and adjust the heat to maintain a steady simmer. Cook until the wheat berries are tender but still slightly firm to the bite, about 40 to 45 minutes. Drain off any liquid that has not been absorbed, discard the bay leaf, and let the wheat berries cool.
  • Put the wheat berries, cherries, apricots, dates, chocolate, and hazelnuts in a large bowl, and fold them together. Sprinkle the cinnamon over them, and drizzle the honey and Saba on top. Tumble the mixture together gently to distribute the spice and sweetening throughout.
  • To serve: Scoop 3/4 to 1 cup of the grano mixture into each wineglass. Top each with a dollop of whipped cream, and serve immediately.

Honey Wheat Berry Bread image

A delicious wheatberry bread that tastes like store-bought. Kids love it! I use my bread machine on the dough setting to mix and knead the dough, but can also be made using a KA mixer or by hand. This bread uses vital wheat gluten, which can be purchased at wal-mart and most grocery stores.

1 cup water (cold water)
2 tablespoons vegetable oil
3 tablespoons honey
3/4 teaspoon salt
2 tablespoons instant potato flakes
1/2 cup hard red wheat berries (cooked)
3/4 cup whole wheat flour
2 1/2 cups bread flour (or all-purpose)
3 tablespoons powdered milk (Non-Fat Dry)
2 teaspoons white vinegar
2 tablespoons vital wheat gluten
2 teaspoons instant yeast (or quick rising yeast)

Steps:

  • **To cook wheat berries**.
  • Combine 1/2 cup rinsed wheat berries and 2 cups water in saucepan and bring to a boil. Reduce heat to medium low and simmer, covered for about 1 ½ to 2 hours, stirring occasionally, adding water if necessary. ( Cook until soft and some are popping open)
  • Drain any standing water before adding the cooked wheat berries to the dough.
  • Add drained wheat berries and 1 cup of cold water in the bread machine pan, Cool to lukewarm.
  • Add the rest of the liquid ingredients followed by the dry ingredients on top, yeast will be last.
  • Set bread machine to dough setting. Check in a few minutes, if dough looks too dry or too wet add a few tablespoons of warm water or flour to get a good soft dough consistency.
  • When dough setting is complete (my machine is 1 ½ hours) remove dough from bread machine pan onto a lightly floured surface. Shape into a roll. Put in a bread pan that has been sprayed with cooking oil spray. Let rise for about 40 minutes to 1 hour or until about 1 ½ inches above pan.
  • Cook on 350 degrees on middle rack of oven for about 30 to 35 minutes. Should be golden brown ( when thumped with your finger on the bottom of the loaf it should sound hollow )
  • Remove bread from pan to cooling rack to cool. Let it cool at least 1 hour before slicing.

  • Preheat the oven to 350˚F. Spread 2/3 cups of slivered almonds on a baking sheet and toast them for 5 minutes. Set them aside and reduce temperature to 325˚F.
