2 cups Chicken, cooked and shredded
3 cloves Garlic
2 cups Spinach
1 28 ounce can Tomatoes
1 15 ounce can White beans
1 White onion, small
4 cups Chicken broth
Pasta & Grains
9 oz Tortellini, refrigerated
1 tbsp Italian seasoning
1/4 tsp Pepper
1 tsp Salt
2 tbsp Butter
1 cup Heavy cream
1/4 cup Parmesan cheese, grated

Steps:

  • In a large pot over medium heat, heat up the butter. Add onion and garlic and cook until tender. Add chicken broth, diced tomatoes, white beans, heavy cream, parmesan cheese, italian seasoning, salt and pepper. Bring to a simmer. Add the chicken, tortellini, and spinach. Let simmer for 10 minutes to thicken up and for the tortellini to cook.

Something I whipped up from a combination of recipes -- really hearty and filling. Great for canned or fresh tomatoes, especially during the summer season!

32 ounces tomato juice
1 cup chicken broth
14 1/2 ounces petite diced tomatoes
1 cup heavy whipping cream
2 1/2 tablespoons dried basil leaves
3 tablespoons minced garlic
1 tablespoon vegetable oil
1/4 cup sweet unsalted butter
9 -10 ounces cheese tortellini

Steps:

  • Sauté minced garlic in vegetable oil until slightly browned and fragrant.
  • Combine garlic with tomato juice, chicken broth, and petite diced tomatoes in a sauce pan and bring to a boil. Let simmer for 15-20 minutes.
  • Add cheese tortellini and basil leaves, then simmer for 5-10 minutes.
  • Slowly add butter and heavy whipping cream, and stir continuously over low heat until heated through. DO NOT LET BOIL.
  • Goes great with side salad and bread.
