Creamy Garlic Chicken has taken our social media by storm; this rich and indulgent dish is so delicious while still being low in calories and Points!

400 g chicken breast or thigh (thinly sliced)
1 onion (thinly sliced)
175 g light cream cheese
3 cloves garlic (thinly sliced or crushed)
250 g button mushrooms (thinly sliced)
1 tbsp Worcestershire sauce
1 tsp white wine vinegar
1 tsp Dijon mustard
400 ml meat stock (made with 1 chicken stock pot and 1 beef stock pot)
salt and freshly ground black pepper
fresh chives (chopped, to serve)
paprika (to serve)
low calorie cooking spray

Steps:

  • Season the chicken with a little sea salt and freshly ground black pepper, then set aside
  • Spray a large frying pan with low calorie cooking spray and place on a medium heat
  • Add the chicken to the pan and quickly seal on all sides, then remove the meat from the pan, and set aside
  • Return the pan to the medium heat. Add the vinegar to the Worcestershire sauce and deglaze the pan with the mixture, scraping and stirring the browned bits from the pan - use some of the stock if you need to. When most of the liquid has evaporated spray the pan with some low calorie cooking spray. Add the onion, mushrooms and garlic and sauté for 5 minutes until they start to brown, then add the Dijon mustard and cook for a minute or two, stirring
  • Add the stock to the pan and simmer until the liquid has reduced by half
  • Reduce the heat to low and stir in the cream cheese, making sure there are no lumps of cheese remaining
  • Return the chicken to the pan, stir well and simmer for 5-10 minutes until the chicken is cooked. If the sauce looks a little thick you can add some more water until it reaches the consistency you prefer
  • Sprinkle with the chopped chives and paprika, if desired

One pot, 30-minute dinner made with juicy seared chicken breasts served in a rich and creamy sauce chock full of sun-dried tomatoes, dried herbs, and fresh spinach.

1 tablespoon olive oil
4 boneless, skinless chicken breasts
salt and fresh ground pepper (to taste)
1/2 tablespoon butter
1 yellow onion (diced)
3 cloves garlic (minced)
1/2 cup sun-dried tomatoes (chopped)
1 package (6 to 8 ounces) baby spinach
1 1/2 cup heavy cream ((you can also use half & half or evaporated milk))
1 teaspoon dried basil
1/2 teaspoon dried oregano
1/2 teaspoon dried rosemary
salt and fresh ground pepper (to taste)
1/2 cup grated parmesan cheese
chopped fresh parsley (for garnish)

Steps:

  • Heat olive oil in a large skillet over medium heat.
  • Season chicken with salt and pepper.
  • Place the chicken in the skillet and cook for about 7 minutes; flip and continue to cook for 6 more minutes, or until done. Cooking time also depends on the thickness of the chicken breasts; use thinner chicken breasts for faster cooking.
  • Remove chicken from pan and set aside.
  • Add butter to the pan and melt.
  • Stir in onions and cook for 2 minutes.
  • Stir in garlic and continue to cook for 1 more minute, or until onions are soft.
  • Stir in tomatoes; cook for 1 minute.
  • Stir in spinach and continue to cook until wilted, about 1 to 2 minutes more.
  • Add heavy cream, basil, oregano, rosemary, salt, and pepper; bring to a boil.
  • Mix in parmesan cheese; stir until sauce has thickened.
  • Place chicken back in the pan and cook for 1 minute to heat through.
  • Spoon sauce over the chicken, sprinkle with parsley, and serve.

1 1/2 lbs boneless skinless chicken breasts, thinly sliced
2 tablespoons olive oil
1 cup heavy cream
1/2 cup chicken broth
1 teaspoon garlic powder
1 teaspoon italian seasoning
1/2 cup parmesan cheese
1 cup spinach, chopped
1/2 cup sun-dried tomato

Steps:

  • In a large skillet add olive oil and cook the chicken on medium high heat for 3-5 minutes on each side or until brown on each side and cooked until no longer pink in center. Remove chicken and set aside on a plate.
  • Add the heavy cream, chicken broth, garlic powder, Italian seasoning, and parmesan cheese. Whisk over medium high heat until it starts to thicken. Add the spinach and sundried tomatoes and let it simmer until the spinach starts to wilt. Add the chicken back to the pan and serve over pasta if desired.

4 chicken thighs, bone-in & skin-on
2 teaspoons salt (for the chicken)
1 teaspoon pepper (for the chicken)
1 tablespoon oil
1 1/2 garlic cloves, chopped
1 tablespoon minced onion
1 (15 ounce) can tomatoes, diced
2 cups spinach, stemmed
2 cups heavy cream
1 teaspoon salt
1 teaspoon pepper
1 cup grated parmesan cheese

Steps:

  • Season the chicken with the salt & pepper, making sure to mix it in evenly.
  • Heat oil in a skillet over medium-low heat.
  • Place the chicken thighs skin side down in the skillet and cook for about 13 minutes in order to crisp up the skin. Move the chicken around from time to time to ensure it cooks evenly. The skin should be hard to the touch.
  • Flip the chicken, then cook for about another 15 minutes until the chicken is fully cooked. Remove from pan.
  • Add the garlic and onion. Stir in the tomatoes and spinach until the spinach is wilted.
  • Add the heavy cream, salt, and pepper, bringing to a boil.
  • Add the parmesan cheese, stirring until the sauce has thickened slightly.
  • Place the chicken back in the pan, spooning the sauce on top of the chicken.
