1 package (19 ounces) frozen cheese tortellini
2 fully cooked Italian chicken sausage links (3 ounces each), sliced
1 can (14-1/2 ounces) diced tomatoes with garlic and onion, undrained
1 package (6 ounces) fresh baby spinach
4 ounces reduced-fat cream cheese

Steps:

  • Cook tortellini according to package directions. Meanwhile, in a large nonstick skillet coated with cooking spray, cook and stir sausage over medium-high heat 4-5 minutes or until browned. Add tomatoes and spinach; cook and stir just until spinach is wilted. Stir in cream cheese until melted., Drain tortellini; add to sausage mixture. Toss to combine.

1 tablespoon olive oil
1 cup red onion ((chopped))
3 cloves garlic (minced)
1 lb. Italian sausage
1/2 cup white wine
3/4 cup chicken broth
14.5 oz. diced tomatoes
1/2 cup heavy cream
12 oz. tortellini (fresh or frozen)
1/2 tsp. sea salt and black pepper each ((add more if desired))
2 cups baby spinach
1/3 cup Parmesan cheese ((shredded))
1 tbsp Parsley ((chopped))

Steps:

  • Heat oil in a large or deep skillet over medium high heat. Add onion and garlic, cook for 5 minutes or until light and softened.
  • Squeeze the sausage from the end of the link to remove it from its casing and add directly into the pan. Turn heat up to high cook, breaking it up as your go, until browned.
  • Add white wine wine. Bring to simmer and cook for 1 minute, scraping the bottom of the pot, until the alcohol smell is gone.
  • Next add broth, tomatoes, cream, and tortellini to the skillet. Stir to combine. Increase heat and bring to a boil.
  • Cover, bring to a simmer so it bubbles gently. Cook for 15 minutes until tortellini are tender and heated through. Taste the sauce and add plenty of salt and pepper to taste.
  • Add spinach and stir until softened and wilted.
  • Serve with shredded Parmesan cheese and chopped parsley.

1 Tbsp. oil
1 Lb. smoked sausage (sliced (I used a tasty smoked chicken sausage from Costco))
3 cloves garlic (minced)
2 c. broccoli florets (frozen broccoli works great)
1/2 bag frozen tortellini (appx 10oz.)
1 petite diced tomatoes (14-15oz can (do not drain))
1 can tomato sauce (8 oz )
1/2 c. chicken broth
1/2 Tbsp. basil
1 tsp. oregano
1/3 c. Parmesan cheese
4 oz. cream cheese
salt & pepper (to taste)

Steps:

  • Heat oil in a large skillet over medium-high heat. Add sausage and saute until brown and slightly crispy on each side. Add garlic and saute another minute.
  • Add broccoli, tortellini, diced tomatoes, tomato sauce, chicken broth, basil and oregano.
  • Bring to a simmer, cover, and simmer for appx. 7-8 minutes or until broccoli is cooked through.
  • Add Parmesan cheese, cream cheese, and salt and pepper to taste, stir until well combined.
  • When cream cheese has melted in, heat on LOW for another 3-5 minutes.
  • Serve immediately.

My Creamy One Pan Tortellini and Smoked Sausage is a match made in heaven! It's a delicious one pan meal that combines the tender, cheese filled pasta with savory smokey sausage and wraps it all in a creamy cheesy tomato sauce. One bite and you'll wonder where it's been all your life!

Olive oil
1 pound package of smoked sausage (cut into 1/4-inch rounds)
1/2 cup diced white onion
1 clove garlic (minced)
20 ounce package of refrigerated cheese tortellini
28 oz can of crushed tomatoes (or whole tomatoes cut in the can with kitchen scissors)
1 cup low sodium chicken broth
Salt and pepper
2 tablespoons cream cheese (room temperature)
1 cup freshly shredded sharp cheddar cheese
1 cup freshly shredded jack cheese
Fresh chopped parsley (for garnish)

Steps:

  • Heat a tablespoon of olive oil in a large, deep skillet over medium heat. Add onion and cook, stirring often, until softened; 3-4 minutes. Stir in minced garlic and cook for 30 seconds. Add sausage and cook until browned on both sides.
  • Stir in chicken broth, tortellini, tomatoes, and a pinch of salt and pepper. Bring to a boil, stirring often. Turn heat to low, cover and simmer for about 10-15 minutes, or until pasta is tender, stirring at least once to prevent sticking. *There should still be liquid in the pan to make the sauce, but if it seems excessive, you can remove some with a large spoon. (If you want a quicker cooking method, set at medium-low heat, uncovered, stirring often for about 8-10 minutes).
  • *If there is too much liquid left in the pan, spoon some out. But be sure to leave enough behind to make the sauce.
  • Remove from heat and stir in cheeses, reserving a handful for sprinkling on top. Cover and let stand for five to ten minutes, or broil for 2-3 minutes to brown. Garnish with fresh parsley, if desired.

1/2 medium onion, chopped small, about 2/3 cup

3 (14) ounce cans crushed tomatoes
20 ounces refrigerated tortellini
4 ounces baby spinach, roughly chopped
1/2 cup heavy cream
1/2 cup Parmesan or Pecorino Romano cheese, shredded ((optional))

Steps:

  • Cook and crumble the sausage in a large skillet over medium-high heat. When the sausage has almost browned, add the onion and garlic. Continue cooking for 2-3 minutes until the garlic is fragrant and the onion begins to soften.
  • Add the tomatoes and the tortellini to the skillet. Stir and reduce heat once the sauce comes to a simmer. Cover with lid and simmer softly until the tortellini is tender about 8-10 minutes.
