This Banana Coconut Macadamia Nut Bread is a comfort food at its best. It's simple, satisfying and fragrant banana bread full of big chunks of melted chocolate, salty, buttery macadamia nuts and large flakes of sweet coconut.

1 1/2 cup coarsely mashed bananas (from about 4 medium)
1/2 cup granulated sugar
1/2 cup lightly packed brown sugar
1/2 cup melted coconut oil
1/4 cup milk
1 egg
2 tsp vanilla
1 1/2 cups all-purpose flour
1 1/4 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
2/3 cup chocolate chunks or chips
2/3 cup toasted (salted macadamia nuts)
2/3 cup coconut flakes (shredded coconut can be substituted)

Steps:

  • Preheat your oven to 350 F, and spray a 9x5-inch loaf pan with nonstick cooking spray.
  • In a medium bowl, whisk together the mashed bananas, sugars, coconut oil, milk, egg, and vanilla. In a separate large bowl, whisk together the flour, baking soda, salt, and cinnamon. Pour the wet ingredients into the dry ingredients, and blend well with a spatula, just until the streaks of flour remain. The batter will not be smooth.
  • Add most of the chocolate chunks, macadamia nuts, and coconut flakes, reserving a handful for decoration, and stir well. Pour the batter into the prepared loaf pan, and sprinkle the top with the reserved chocolate, nuts, and coconut. Bake at 350 F for 55-65 minutes. Turn the bread halfway through baking, and cover with a loose tent of foil if the top seems to be getting too dark. The bread is finished when it starts to pull away from the sides of the pan, and a toothpick inserted comes out clean.
  • Cool the pan on a wire rack for about 20 minutes, until it is warm but not hot to the touch, then remove the loaf and let it cool completely before slicing.

2 1/4 cups all-purpose flour
3/4 teaspoon double-acting baking powder
1/2 teaspoon baking soda
1 teaspoon salt
3/4 cup unsalted butter, soft
1 cup light brown sugar, firmly packed
1/2 cup granulated sugar
1 1/2 teaspoons vanilla
3 large eggs
1 tablespoon lemon zest, freshly grated
1 1/3 cups bananas, ripe and mashed (about 3 large)
3 tablespoons sour cream
3/4 cup macadamia nuts, chopped
1 cup sweetened flaked coconut

Steps:

  • Preheat oven to 350.
  • Sift together flour, baking powder, baking soda, and salt into a bowl.
  • In a large bowl, with an electric mixer, cream the butter with the sugars.
  • Beat in vanilla, eggs (1 at a time), zest, banana, and sour cream.
  • Add flour mixture slowly and beat until it is just combined.
  • Stir in the macadamia nuts and coconut.
  • Pour batter into a greased (I use butter and a little flour) 9x5x3 inch loaf pan.
  • Bake in center of preheated 350 degree oven for 40-50 minute or until tester comes out clean.

1 cup butter, melted
1-1/2 cups sugar
2 eggs
1 teaspoon vanilla extract
1 teaspoon rum extract
2 cups mashed ripe bananas (about 4 medium)
2-3/4 cups all-purpose flour
1-1/4 teaspoons baking soda
6 ounces white baking chocolate, coarsely chopped
1/2 teaspoon salt
1 cup sweetened shredded coconut
1 cup chopped pecans

Steps:

  • In a bowl, combine butter and sugar; mix well. Add eggs and extracts; beat on high speed until thickened. Stir in bananas. Combine the flour, baking soda and salt; gradually add to banana mixture. Fold in the chocolate, coconut and pecans. Transfer to two greased 8x4-in. loaf pans. Bake at 350° for 70-75 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks.

3/4 cup unsweetened coconut flakes

1/2 teaspoon fine salt
1/4 teaspoon freshly grated nutmeg
1/2 cup lightly-packed dark brown sugar
2 large eggs, lightly beaten
1/4 cup Greek yogurt
1 teaspoon pure vanilla extract
4 soft, very ripe bananas, mashed (about 1 1/2 cups)

Steps:

  • Preheat the oven to 350 degrees F. Lightly oil a 9-by-5-inch loaf pan.
  • Spread the macadamia nuts on one rimmed baking sheet and the coconut on another. Toast, tossing occasionally, until the macadamia nuts and coconut are golden, 5 to 7 minutes. Let the nuts cool, then roughly chop.
  • Whisk together the flour, granulated sugar, baking soda, cinnamon, salt, nutmeg, macadamia nuts and coconut in a large bowl. In another bowl, whisk together the coconut oil, brown sugar, eggs, yogurt and vanilla. Stir in the bananas. Fold the banana mixture into the dry mixture until just combined.

1 tablespoon stevia sugar substitute (such as Truvia®)
2 teaspoons baking soda

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Line a loaf pan with parchment paper.
  • Place coconut butter and macadamia nuts in a food processor and process on high to achieve a part butter, part chunky, nut meal. Reduce speed to medium-low and add one egg. Run processor to combine, about 10 seconds. Add remaining eggs, one at a time, blending until mixture is creamy.
  • Turn off the food processor and add stevia, baking soda, and salt; process to combine, 10 to 15 seconds. Clean edges of the bowl and process until mixture is evenly blended.
