CREAMY SPINACH AND POTATO BREAKFAST CASSEROLE



Creamy Spinach and Potato Breakfast Casserole image

Breakfast Casserole with sausage, eggs, potatoes, spinach, and cheese! Super easy recipe that's ready in 30 minutes and high in protein.

1 1/2 tablespoon olive oil, divided
1/2 cup diced yellow onions
8 ounces raw 99% lean ground turkey
2 teaspoons chili powder
1/2 teaspoon onion powder
3 ounces fresh baby spinach leaves
1 tablespoon minced garlic
1 tablespoon minced fresh sage
2 large eggs
1/3 cup fat free milk
2/3 cup grated raw potatoes, without skin
1/2 cup shredded low moisture Mozzarella cheese
2 tablespoons shredded Parmesan cheese
salt and pepper to taste

Steps:

  • Preheat the oven to 400 degrees. Grease a small 3-cup casserole dish or ovenproof skillet with nonstick spray.
  • Heat 1/2 tablespoon olive oil in a nonstick skillet over medium high heat. Add the onions and saute for 5 minutes or until soft and fragrant. Add the turkey, chili powder, and onion powder. Brown the meat until fully cooked and crumbled. Transfer to a bowl and set aside.
  • Add the remaining 1 tablespoon olive oil to the pan and reduce the heat to medium low. Add the garlic and sage. Saute for 2-3 minutes. Add the spinach and stir until wilted, about 2 minutes. Transfer to a bowl and set aside.
  • In a mixing bowl, whisk the eggs and milk. Add the cooked turkey, spinach, potatoes, and Mozzarella cheese. Stir until combined. Transfer to the casserole dish. Top with the Parmesan cheese.
  • Bake for 20-25 minutes or until the top is golden brown and the casserole springs back when touched. Season with salt and pepper to taste.

7 large potatoes, peeled and cubed
1 (10 ounce) package frozen chopped spinach, thawed and drained
1 cup sour cream
¼ cup butter
2 tablespoons chopped green onions
2 teaspoons salt
¼ teaspoon black pepper
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Grease a 2 quart casserole dish.
  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender, about 15 minutes. Drain and mash.
  • In a large bowl combine mashed potatoes, spinach, sour cream, butter, green onions, salt and pepper. Spoon into prepared dish.
  • Bake for 15 minutes. Top with cheese and bake 5 minutes longer.

3 pounds potatoes, diced
2 tablespoons butter, melted
2 cups chicken stock
2 (8 ounce) packages cream cheese, cubed
4 ounces mozzarella cheese, finely chopped
1 small onion, finely chopped
⅔ cup sour cream
⅓ cup powdered milk
2 tablespoons finely chopped fresh chives
1 teaspoon finely chopped fresh tarragon
1 teaspoon sea salt
½ teaspoon finely chopped fresh sage
¼ teaspoon ground black pepper
6 eggs, beaten

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain.
  • Combine potatoes and butter in a large bowl; stir to coat. Add chicken stock, cream cheese, mozzarella cheese, onion, sour cream, powdered milk, chives, tarragon, sea salt, sage, and black pepper; stir well. Fold in egg until well incorporated. Pour into a 9x13-inch casserole dish.
  • Bake in the preheated oven until browned and eggs are set, 30 to 40 minutes.

Creamy Mashed Potato Casserole With Spinach and Feta Cheese image

For all you potato lovers, this is a killer side dish, a must-try! Prep time includes boiling the potatoes.

5 lbs potatoes (about 12-13 potatoes)
2 -3 tablespoons butter
3/4 cup sour cream (light is okay)
salt and pepper
1 (300 g) package frozen spinach, thawed and squeezed dry or 1 (10 ounce) package fresh spinach
2 cups crumbled feta cheese, to taste
2 -3 cloves fresh minced garlic, to taste
1/2 cup grated parmesan cheese

Steps:

  • Cook the poatoes in boiling water until very tender.
  • Mash with a potato masher or a fork.
  • In a large bowl, mix together the mashed potatoes with the butter, sour cream, salt and pepper.
  • Set the oven to 350 degrees.
  • Butter a 10 cup casserole dish.
  • Wash the fresh spinach leaves (if using fresh spinach).
  • Place the wet leaves in a microwave-safe dish; cover, and microwave on HIGH for 2-3 minutes, when cool, enough to handle, squeeze out all excess moisture.
  • Chop coarsley, and place in a medium-size bowl; stir in the feta cheese and the garlic.
  • Stir the spinach mixture into the potatoes.
  • Spoon the mixture into the prepared baking dish (swirling the top slightly to design).
  • Sprinkle with the grated Parmesan cheese.
  • Bake, uncovered in the center of the oven at 350 degrees about 40-50 minutes, or until the top is golden.
