SPICY ARTICHOKE DIP
Steps:
- Melt the butter in a large skillet or saute pan over medium-high heat.
- Add the red onions, jalapenos and salt and cook until the onions are soft and translucent, 5 minutes.
- Add the artichokes and cook until starting to fall apart, 8 to 10 minutes.
- Reduce the heat to medium and add the cream cheese, stirring until melted.
- Add the sour cream and Jack cheese and mix until well combined.
- Transfer the dip to a warmer or slow cooker to hold for serving.
WHITE BEAN DIP WITH PITA CHIPS

- Preheat the oven to 400 degrees F.
- Place the beans, garlic, lemon juice, 1/3 cup olive oil, and parsley in the work bowl of a food processor. Pulse until the mixture is coarsely chopped. Season with salt and pepper, to taste. Transfer the bean puree to a small bowl.
- Cut each pita in half and then into 8 wedges. Arrange the pita wedges on a large baking sheet. Pour the remaining oil over the pitas. Toss and spread out the wedges evenly. Sprinkle with the oregano, salt, and pepper. Bake for 8 to 12 minutes, or until toasted and golden in color.
- Serve the pita toasts warm or at room temperature alongside the bean puree.

Steps:
- Pita Chips:.
- Preheat oven to 400 degrees.
- Cut each Pita bread into 8 triangles & place on lined baking sheet.
- Brush triangles with olive oil.
- Sprinkle seasonings over chips.
- Bake for 7 to 10 minutes or until light brown, watch carefully.
- Let cook and put onto platter or dish that can go into oven.
- Artichoke Dip:.
- Combine all ingredients.
- Drop by large spoonfuls onto chips or one large one in middle.
- Sprinkle Monterey Jack cheese over all.
- Sprinkle tomato and green onion slices over top.
- Bake in 400 degree oven until cheese is melted.
- (you can just broil until cheese is melted too if you want).
- Enjoy!
