2 lbs boneless skinless chicken, cut bite-size pieces
3 large potatoes, skinned,and chopped
2 tablespoons peanut oil or 2 tablespoons olive oil
2 large carrots, skinned and chopped
1 medium onion, chopped
2 stalks fresh lemongrass, minced
2 stalks celery, chopped
2 cloves garlic, minced
1 (13 1/2 ounce) can coconut milk
1 (13 1/2 ounce) can chicken stock
1 teaspoon pepper
1 teaspoon salt, to taste
fresh cilantro
fresh French bread or soft rye bread, sliced,for dipping
2 tablespoons India or good curry

Steps:

  • Heat oil in large pot and fry onions and garlic for 1 minute.
  • Add the chicken and continue cooking for 3 minutes.
  • Add all the spices.
  • Stir everything together for a few minutes.
  • Let cook until chicken is tender.
  • Add the rest of the ingredient.
  • Bring to a boil and simmer gently for about 20 mintes.
  • Garnish with cilantro before serving in bowls.
  • Eat with French bread or serve with steamed rice.

I use Vietnamese-style curry powder found at Asian food stores (usually called 'cari'). If you can't find it, use Madras curry powder. I make mine soupy, but you can make a thick stew by reducing the amount of chicken broth and water by half. Serve with rice or French bread, or both.

2 tablespoons vegetable oil
1 (3 pound) whole chicken, skin removed and cut into pieces
1 onion, cut into chunks
2 shallots, thinly sliced
2 cloves garlic, chopped
⅛ cup thinly sliced fresh ginger root
1 stalk lemon grass, cut into 2 inch pieces
4 tablespoons curry powder
1 green bell pepper, cut into 1 inch pieces
2 carrots, sliced diagonally
1 quart chicken broth
1 quart water
2 tablespoons fish sauce
2 kaffir lime leaves
1 bay leaf
2 teaspoons red pepper flakes
8 small potatoes, quartered
1 (14 ounce) can coconut milk
1 bunch fresh cilantro

Steps:

  • Heat oil in a large stock pot over medium heat. Cook chicken and onions in oil until onions are soft and translucent; remove onions and chicken from pot and set aside.
  • Saute shallots in pot for about 1 minute, then stir in garlic, ginger, lemon grass and curry powder. Continue to cook for about 5 minutes, then stir in bell pepper and carrots. Return chicken and onion to pot and stir in chicken broth, water and fish sauce. Season with lime leaves, bay leaf and red pepper flakes.
  • Bring to a boil and introduce potatoes. Return to a boil and pour in coconut milk. Reduce heat and simmer 40 to 60 minutes, until potatoes and chicken are tender. Garnish each dish with a sprig of fresh cilantro.

2 lbs chicken (chicken thighs preferred; cut into bite-sized pieces)
1 teaspoon salt
2 teaspoons chicken bouillon powder
1 tablespoon granulated sugar
¼ teaspoon ground black pepper
1 tablespoon madras yellow curry powder
¼ cup vegetable oil
2 tablespoons minced lemongrass
5 garlic cloves (mince)
1 large shallot (mince)
5 lime/lemon/bay leaves (optional)
3 cups water
1 13.5-oz can coconut milk
1 carrot (10 oz, peel, cut into ½-inch coins)
1 potato (10 oz, peel, cut twice the size of carrots)
½ yellow onion (slice into wedges)
1 teaspoon salt
1 tablespoon fish sauce
1 tablespoon granulated sugar
Cilantro
Green onions
Lemon/limes leaves

Steps:

  • Marinate the chicken with salt, stock powder, sugar, black pepper, and yellow curry powder for at least 15 minutes. For larger cuts of chicken or drumsticks, marinate at least 2 hours or overnight in the fridge for best results.
  • In a medium skillet or wok with lid, add vegetable oil and heat on medium-high. Add lemongrass, garlic, shallots, and lime/lemon/bay leaves. Saute for 1-2 minutes until fragrant.
  • Toss marinated chicken in the aromatic mixture until evenly coated. Add water. Cover with a lid and simmer on medium-low for 30 minutes. Stir chicken occasionally in the liquid as needed for even cooking. For larger cuts of chickens, cook for an additional 15 minutes.
  • Add coconut milk, potatoes, carrots, and onions. Continue to cover the skillet/wok with a lid but leave a small opening to prevent the coconut milk from boiling over. Simmer on medium-low for 10 minutes or until potatoes and carrots are fork-tender. Remove lemon leaves and discard.
  • Season to taste with salt, fish sauce, and sugar, if needed. Garnish with thinly sliced cilantro, green onions, or lemon/limes leaves. Serve over a bowl of steamed rice, rice noodles, or on the side of a warm baguette to soak up that amazing flavor.

1 gallon low-sodium chicken stock
3 bone-in, skin-on chicken breasts
4 chicken wings
5 scallions, cut in half
4 cloves garlic
2 cinnamon sticks
2 whole star anise
1 inch piece fresh ginger, peeled and cut into coins
1/4 cup dry shiitake mushrooms, rehydrated in warm water for 30 minutes and thinly sliced
3 tablespoons fish sauce
3 packages ramen noodles (just the noodles)
Garnishes:
1 cup fresh bean sprouts
1 jalapeno, thinly sliced
Couple sprigs each fresh mint and Thai basil
Fish sauce
Hoisin sauce
Sriracha
Lime wedges

Steps:

  • In a large Dutch oven or stock pot, bring to a simmer the chicken stock, chicken breasts, chicken wings, scallions, garlic, cinnamon sticks, star anise and ginger. Simmer for about 20 minutes. Once the chicken breasts are cooked, remove them, set aside and shred when cooled. Continue to simmer all the other ingredients for 30 minutes. Then strain the broth through a colander to remove the solids and spices.
  • Add the mushrooms, fish sauce and noodles to the strained stock. Simmer until noodles are still al dente, 4 to 5 minutes. Scoop some of the noodles into individual bowls. Top with some of the shredded chicken. Ladle lots of broth into each bowl. Garnish with the bean sprouts, jalapenos and fresh mint, and serve with fish sauce, hoisin sauce, Sriracha and lime wedges. 1/2 teaspoon salt
1 lb boneless skinless chicken thighs
2 tablespoons vegetable oil
1 tablespoon shallot, chopped
2 teaspoons garlic, minced
1/2 teaspoon dried red chili pepper flakes
3 tablespoons fish sauce
1 tablespoon sugar
2 lemongrass, stalks
1 inch piece fresh ginger
1 1/2 cups chicken broth
3 carrots, peeled and sliced
1 1/2 cups coconut milk, unsweetened
1 medium onion, cut into wedges
1 sweet potato, peeled and cut into 1-inch cubes
1/4 cup asian basil leaves
1/4 cup fresh cilantro

Steps:

  • Combine 2 tablespoons of the curry powder and the salt in a medium bowl. Add the chicken thighs and turn to coat the meat evenly. Set aside for 30 minutes.
  • Cut the lemongrass stalk into 3-inch pieces and smash them with the flat side of a knife, set aside. Peel the ginger and cut into 3 slices, set aside.
  • Heat the oil in a large pot. Add the shallot, garlic, dried red chili flakes and the remaining 1 tablespoon of curry powder; stir for about 10 seconds.
  • Add the chicken and cook until golden, 3-4 minutes.
  • Add the fish sauce, sugar, lemongrass, ginger and chicken stock. Bring to a boil, then reduce heat.
  • Add the carrots and cook for 10 minutes. Add the coconut milk, onion and sweet potato and cook for 15 minutes or until vegetable are tender.
  • Transfer to a serving bowl and top with garnishes.

1 tbsp vegetable oil
3 shallots, sliced
3 garlic cloves, sliced
1 lemongrass stalk, chopped
2.5cm piece ginger, sliced
3 star anise
1 cinnamon stick
1 tsp coriander seeds
¼ tsp Chinese five spice
¼ tsp black peppercorns
1 tsp caster sugar
1 tbsp fish sauce
1.25 - 1.5 litres good quality fresh chicken stock
3 large chicken breasts (about 500g)
450g rice noodles
4 spring onions, finely sliced on an angle
1 carrot, shredded or peeled into ribbon with a vegetable peeler
2 large handfuls (150g) mung bean sprouts
large bunch coriander, chopped
small bunch mint, leaves chopped
1 red chilli, thinly sliced (optional)
2 tbsp crispy fried shallots (optional)
1 kaffir lime leaf, tough central stalk removed, very finely sliced, (optional)
1 lime, cut into wedges

Steps:

  • Heat the oil in a small frying pan on medium heat and gently cook the shallots and garlic until caramelised and golden brown (about 4-5 mins).
  • In a large saucepan, add the caramelised shallots and garlic, lemongrass, ginger, star anise, cinnamon stick, coriander seeds, Chinese five-spice, peppercorns, sugar, fish sauce, chicken stock and chicken breasts. Cover with a lid and bring to a very gentle simmer for about 15 mins.
  • Meanwhile, cook the noodles, following pack instructions, until just cooked through (do not over-cook). Rinse under cold water to prevent them sticking together. Drain and divide between serving bowls.
  • Strain the soup through a sieve. Discard the spices. Shred the chicken and keep to one side. Return soup to the pot and bring to a boil. Season to taste with more fish sauce if needed.
  • To serve, ladle piping hot soup into bowls of noodles and chicken, and top with spring onion, carrot, bean sprouts, and herbs, plus the chilli, crispy shallots and kaffir lime leaf if using. Serve with a lime wedge to squeeze over, and more fish sauce and chilli to taste.
