Thick and creamy smoked gouda dip is a flavorful, four-ingredient dip that's great for dipping homemade pretzels, veggies, and more.

2 tbsp unsalted butter
2 tbsp all-purpose flour
1 cup milk*
1 1/3 cup shredded smoked gouda cheese

Steps:

  • Place butter in a saucepan set over low-medium heat. Once melted, whisk in the flour until combined.
  • Add milk and whisk to evenly mix. Keep whisking as the mixture begins to thicken, about 10 or so minutes, or until it's to a point where it can thickly coat the whisk (or a spoon).
  • Once the mixture has begun to thicken, add the cheese. Stir or whisk frequently as the cheese melts and the dip becomes smooth and creamy. Serve immediately.

4 tablespoons unsalted butter
4 tablespoons all-purpose flour
1 cup pale ale beer
1 cup grated sharp Cheddar
1 cup grated smoked Gouda
1/4 cup sour cream
1/2 teaspoon ground mustard
1/2 teaspoon smoked paprika
1 1/2 tablespoons minced pickled jalapenos
Kosher salt and freshly ground black pepper
Tortilla chips, for serving

Steps:

  • Heat the butter in a small saucepan over medium-high heat. Add the flour and cook, stirring until smooth, for 2 minutes. Slowly whisk in the beer so the mixture is smooth. Simmer until thickened, about 5 minutes. Add the Cheddar, Gouda, sour cream, mustard and paprika and whisk until the cheeses are melted, 2 to 3 minutes. Stir in the jalapenos, and season with salt and pepper. Serve with tortilla chips.

1/2 teaspoon garlic powder

1 (8-ounce) block extra-sharp Cheddar cheese, shredded (about 2 cups)
1 (8-ounce) block smoked Gouda cheese, shredded (about 2 cups)

Steps:

  • Stir together the mayonnaise, pimientos, Worcestershire, garlic powder, and cayenne in a large bowl; add the cheeses, stirring until blended. Store in the refrigerator up to 1 week.

2 tablespoons unsalted butter or 2 tablespoons unsalted margarine
2 tablespoons all-purpose flour
1 1/2 cups whole milk
1/4 cup heavy cream
1/4 lb smoked gouda cheese, coarsely shredded
1/2 teaspoon smoked paprika (optional)
1 pinch nutmeg, freshly grated
salt
fresh ground pepper
water
1 1/2 lbs Baby Spinach
1 lemon, juice of (not the bottled kind, please!)
1 tablespoon extra virgin olive oil
1 small onion, finely chopped
1 1/2 cups smoked gouda cheese, bechamel
salt
fresh ground pepper
3 tablespoons fine dry breadcrumbs
2 tablespoons smoked gouda cheese, coarsely shredded

Steps:

  • PREPARE SMOKED GOUDA BECHAMEL:.
  • In a medium saucepan, melt the butter or margarine; add the flour and whisk over moderately high heat for 30 seconds.
  • Add the milk and bring to a boil, whisking constantly.
  • Cook over moderate heat, whisking constantly, until thickened, 4 to 5 minutes.
  • Add the cream, smoked Gouda, paprika (if using)and nutmeg and whisk just until the cheese is melted, about 2 minutes.
  • Season with salt & pepper.
  • Use right away or cover directly with plastic wrap and refrigerate.
  • PREPARE THE SPINACH:.
  • Preheat the broiler and position a rack 10 inches from the heat.
  • In a large soup pot, bring 1/4 inch of water to a boil.
  • Add the spinach and cook over high heat, tossing with long tongs, until completely wilted, about 3 minutes.
  • Transfer the spinach to a colander and drain, pressing out as much liquid as possible add a squeeze of lemon; put into kitchen towels and press the water out.
  • In a medium, ovenproof skillet, heat the olive oil and pinch of crushed red pepper flakes(if using); add the onion and cook over high heat, stirring, until softened, about 3 minutes.
  • Add the wilted spinach and cook, stirring, for 1 minute.
  • Add the Smoked Gouda Béchamel and cook over moderate heat, stirring, until bubbling, about 1 minute.
  • Season with salt and pepper.
  • Sprinkle the spinach with the bread crumbs and shredded Gouda and broil for 2 minutes, until golden and bubbling.
  • Serve hot.

This has got to be my husband's favorite cheese dip! Whenever we have a family party, we always request the dip from my sister (the creator), and the jalapenos make a great dare for the adventurous! This recipe is very much "to your own taste", hence the minimal measurements, but I promise it will be worth it!

1 lb smoked gouda cheese
3 tablespoons chopped onions
1/4 cup low-fat mayonnaise
1 teaspoon liquid smoke
1 teaspoon Tabasco sauce
3 fresh jalapenos

Steps:

  • Grate the smoked Gouda.
  • Add mayonnaise until spreadable or your preferred consistency.
  • Add chopped onion, liquid smoke to taste, and Tabasco sauce to taste.
  • You can make it as smoky or as spicy as you like (cayenne pepper for even more kick!).
  • Garnish dip with finely chopped fresh jalapenos for color.
  • Serve with crackers, bread, or veggies!
